As you know we were super lucky to get a visit this Spring Break from my SIL and her brand new baby boy JHBear and SBean adore him and they had a wonderful time visiting with them.

We took JJ swimming for the 1st time, he loved the water!! I think he will enjoy coming for Okanagan summer visits J


We went on many walks along the beach. He played at the park and did lots of things that can’t be done in Winnipeg quite yet.

1stSt Patty’s Day!

For their last night here I made Mexican… kinda lol HBear’s friend’s Mommy sent me this recipe and I just HAD to try it out!
It was crazy easy and pretty darn tasty PLUS it looked really cool LOL
Next time I would make my own pizza dough though. The crescent tubes are just a little too sweet for my taste. I didn’t put the veggies in the middle because I did a taco bar at the table instead. But if it was just us  and less “stuff” I bet putting it in the middle would be awesome!
I also tossed together a yummy corn salad for a side dish. We were all full by the end!

Taco Crescent Bake

2 crescent roll tubes
1.5 lbs. ground beef
1/3 cup taco seasoning
2/3 cup water
1 1/2 cups taco cheese, shredded
1 cup lettuce, shredded
2 tomatoes, diced
½ red onion, diced
½ red pepper, diced
1 small, avocado, diced
1/2 cup sour cream

Preheat oven to 350.

Separate the crescent pastry and lay out in a circle, pointed ends out on a pizza stone. Use some of the leftover crescent rolls to make the center a bit thicker as this will hold the meat.



Brown meat in a frying pan until no longer pink. 



Drain fat and add taco seasoning, add the water and simmer for 10-15 minutes. Drain excess liquid from meat.


Sprinkle meat mixture in a circle inside the crescent rolls, then sprinkle 1 cup of the cheese over the meat. Pull crescent roll points over meat and cheese and tuck in.


Bake until pastry is golden brown 25-30 min.

Add remaining 1/2 cup of cheese, chopped lettuce, onion, tomato, avocado, and red pepper into the middle of the ring, then add a few dollops of sour cream before serving.  (I made a serve yourself on the table)

Black Bean & Corn Salad
Adapted from Rachael Ray
1 14 oz can black beans, rinsed and drained
2 cups corn
1 avocado, chopped
1 small pepper, chopped
½ red onion, chopped
½ cup cherry tomatoes, halved
½ cup Feta cheese, crumbled
½ teaspoon Tabassco sauce
3 tablespoons cilantro, chopped
1½ teaspoon ground cumin
salt & pepper to taste
1 lime, juiced
2 tablespoons olive oil
Combine all ingredients in a bowl.

Let stand at least 15 minutes before serving to allow flavors to combine. 


I really recommend this salad. It is so easy and so refreshing. I ate the rest the next day and the flavors were even better (although the veggies didn’t look as appealing as the previous day lol).
