2022 Olympics & Honey Pecan Pork Chops

The Olympics are a wonderful metaphor for world cooperation, the kind of international competition that’s wholesome and healthy, an interplay between countries that represents the best in all of us.

I have this feeling of dread in the pit of my stomach.

I’ve had it for a while now. Everything in me feels so off, it feels like there’s something wrong. I mean, other than my physical health 😂. The past 2 weeks I’ve been living in a bubble. An Olympic bubble. In my bubble the best of the best athletes are competing at top levels at the 2022 Beijing Olympics. In my bubble, there isn’t a genocide of Uighurs as Beijing shows us the best of what China has to offer. In my bubble, we are not on the brink of World War III and athletes from Ukraine and athletes from Russia embrace at the bottom of a ski hill. In my bubble my beautiful Canadian flag is being flown with pride as our athletes strive to do the very best… not hate and unlawfulness like what was being shown at our nation’s capital.

It is such a stark contrast to reality from here in my bubble.

And now, it’s over.

Over the past 2 weeks I have watched Olympic coverage from the time I woke up to the time I went to bed (minus the naps I have to take every day 🙄). It has been my… safety net. If the realities of my situation seem too much, I watch Max Parrot, our Olympic snowboarder who defeated cancer just a few years ago to end up on the gold medal podium in Beijing. When 24/7 coverage of the Ottawa Occupation raises my blood pressure, I cheer on our amazing speed skaters who made their own golden tickets that took them to the top of the podium. When Twitter shows me images of looming war strikes, I watch the interviews with our athletes that tell stories of defeat, triumph, heroism, and unity. Watching all these athletes from across the globe embrace each other after a close race, an event ending fall or in happiness for each other is such a contradiction to what is happening in the world right now.

 
The Olympics are about unity and diversity. People from all over the world come together and follow the same rules. The athletes all live together in the Olympic Village, most of them train together in their off years, some of them live in countries that they are competing against, a few are engaged to people on “the other team”, and the majority of athletes are friends with the person they are racing against!
 
The Olympics are politically neutral. They show the world that we can all come together in unity. They can’t prevent wars or political conflict but they can set an example of how to respect each other and how to play nicely under the same rules. They reaffirm our humanity as a whole, as 1 world of humans under a flag of 5 rings representing every continent on Earth.
 
For the past 2 weeks I have been in a bubble and as soon as the Olympic flame went out, the bubble POPPED! For the past 2 years we have heard the same refrain over and over again, “We’re All In This Together.” I truly believe that. I have witnessed it over the years of the pandemic and over the past 2 weeks. I am not a prayer but tonight I will pray. I will pray for unity and peace and for the Olympic Spirit to live in each of us during this unstable time in history.

Ninja was at it again this week! He was a little intimidated when I said honey pecan pork but was AMAZED at how easy this recipe was! I am planning a pecan crusted salmon this month so I put pecans on the shopping list knowing that the whole pack will get used, no waste! This was a favourite for ALL of us! It is sweet and crunchy and absolutely delicious! Big BIG fan of this easy dinner that is a definite show stopper!

 

Honey Pecan Pork Chops
Adapted from Sugar & Spice

4 pork chops, centre cuts
1/4 cup flour

1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon butter
1/4 cup honey
1/4 cup pecans, 
chopped

Season pork with salt and pepper; dust surfaces of pork with flour.

 


Melt butter in large heavy skillet over medium-high heat; brown chops on one side, turn; stir together honey and pecans and add to skillet, stir gently. Cover and simmer for 7-8 minutes.

 


Serve cutlets with sauce from skillet.

 

 

 

 

The sun was out this week and I took advantage of it by sitting out on the deck exercising my brain and catching some rays! My Bro sent me a cute picture of my beautiful niece 💗 and I tried getting a selfie with Oliver but he just wanted kisses 😂 but he does take handsome pictures 😍. My Sis took SBean and her Girls up to Nickel Plate on the Pro D Day to try some snowshoeing! They had a great time in the snow, snacking and feeding the local Whiskey Jacks! HBear and Daddy had date night on Friday as Ninja filled in for me and took HBear To the ballet! They started their night at The Cactus Club for dinner then headed to Ballet Kelowna’s Reprise. HBear enjoyed a summer camp with Ballet Kelowna last summer and actually learned a piece that was performed by the company! She was so excited to see the dance come to life on stage! While they were in Kelowna, SBean and I ordered pizza and watched Into The Woods 💛. On Sunday the Girls went to Grease put on by the local high school with their DanceBesties! They had a great time! Ninja spoiled me with delicious lunches, snacks and dinners all week and even took me to Tootsies Diner for lunch! It was great to get out even just for the hour, which is basically all I can handle right now. We watched the Olympic closing ceremonies as a family and I did a good stretch. Not a hard stretch but it is a start 💛.
