August & Sesame Cashew Chicken with Coconut Rice

The first week of August hangs at the very top of summer, the top of the live-long year, like the highest seat of a Ferris wheel when it pauses in its turning. The weeks that come before are only a climb from balmy spring, and those that follow a drop to the chill of autumn, but the first week of August is motionless, and hot. It is curiously silent, too, with blank white dawns and glaring noons, and sunsets smeared with too much color.

We are officially at the halfway mark of summer.

It’s like the quote above says, we are at the pinnacle of summer, the top of the Ferris wheel and soon we’ll feel it in the air as we slowly start our dissent into autumn. I think I’ve used this quote before. It’s from one of my favourite books from junior high and I remember reading those lines and knowing, no, feeling exactly what the author was describing.


The first week of August holds so many memories for me. Here in Penticton, it’s Peachfest week! While it is warm in July, August is when the heat is at it’s peak! You walk outside and you are smacked in the face with the dry desert heat. All around, you can smell ripe fruits and their sweetness on the breeze. When I was little we didn’t have air-conditioning so Nana and Poppy would take us to the beach for an evening swim to cool off. Even the lake water is warm in August. Over the past few years the first week of August has also been the beginning of wildfire season. The smokey smell of campfire meets the sweet smell of fruit and the haze deceptively hides the purple, pink, and orange sunsets that peak between the mountains.

The days have begun to get shorter, the nights have begun to get cooler, and the beaches are packed with tourists trying to eek out every last drop of their vacations. This is our last week of visitors and as I look at the upcoming calendar I know I’m in that sweet spot of the lazy hazy days of summer but the prep work to get our fall off on the right foot is right around the corner.

Oh to be a kid again. Not having to worry about those things. To spend your day meeting friends at the beach, running to the corner store to buy candy, staying up late dancing through the weeping willows, and racing down the highway in the back of a truck with the wind in our hair (don’t do this. This was stupid. Fun. But stupid 😉.)


Those were the days.


Having my family here for the past 2 weeks has made me reminisce. Remembering how my Nana and Poppy would stock up on toilet paper, flats of Crush pop, and get out all the floaties to make sure none of them had holes that needed patching. I never thought about all the dinners they made, towels they washed, bedding they changed, cookies they baked, and items they stocked up on to host my Mom and her 3 brothers and all 
of the Grandkids every summer! Now that we are the ones hosting, I realize how much effort they put into making our summers so very memorable. Those evenings with my cousins will stay in my heart forever. When I look through the pictures of the past 2 weeks, I know that these are the summers that will remain with my children and their cousins too. I am feeling overwhelmed with love for the wonderful childhood that I had with my siblings and my cousins, the fact that we STILL enjoy our summer holidays together and the immense amount of love and gratitude I have to be able to give the same summer memories to my OWN children 💛. I am incredibly lucky.

My Kids LOVE coconut. My Kids do NOT love rice. So I thought I would make a dish using Coconut Rice!! Genius right? Right! They loved it! This was a MAJOR Mommy win! The cashews were absolutely delicious, the chicken was flavourful and the rice was just the perfect match of yummy tastes and textures! This was a super easy recipe that took 30 minutes to make. It would be a great weeknight meal when we go back to school and makes super tasty leftovers for the next day!


Sesame Cashew Chicken with Coconut Rice
Adapted form Half Baked Harvest

3 tablespoons sesame oil

1/4 cup plus 1 tablespoon honey
1/2 cup cashews
1/2 teaspoon chili powder
1/2 teaspoon turmeric
zest of 1 lime
3 chicken breasts, cut into cubes
1 tablespoon corn starch
1/2 cup soy sauce
1 tablespoons fish sauce
1/2 teaspoon chili paste (or more if you like!)
2 tablespoons ketchup
2 tablespoons sesame seeds
4 cloves garlic, minced
1 inch ginger, grated
2 bell peppers, thinly sliced
20 Thai or regular basil leaves, chiffoned
1 (14 ounce) can coconut milk
1/2 cup water
1 cup basmati rice


Combine coconut milk and water in a pot. Bring to a low boil. Add rice and a pinch of salt. Stir, cover, then turn the heat down to low.


Cook for 15 minutes.



Turn the heat off and let the rice sit, covered for another 15-20 minutes.


While the rice is cooking, heat 1 tablespoon oil, 1 tablespoon honey, the cashews, chili, powder, and turmeric in a large skillet over medium heat. Cook until caramelized, 3-4 minutes.


Remove cashews to a parchment-lined plate. Sprinkle with lime zest and salt. Set aside.



Toss together the chicken, cornstarch, and a pinch of black pepper.


Combine 1/4 cup honey, soy sauce, fish sauce, chili paste, ketchup, and sesame seeds.


Heat the remaining 2 tablespoons of oil over medium heat. Add chicken and brown until crispy, 5 minutesish.


Add garlic, ginger, and peppers, cook another 2-3 minutest. Pour in the sauce and bring to a boil over medium-high heat.


Cook until the sauce coats the chicken, about 5 minutes.


Remove from the heat and stir in the basil. Serve the chicken and sauce over bowls of rice. Top with cashews, additional basil, and cucumbers, if desired. Enjoy!



On Monday the Kids, my Bro, PrettyP, and my Sis (along with her family) left for Kelowna. 

While I took some much needed rest, they went swimming, to the Enchanted Forest, watched movies, and played hard. Tuesday night Ninja met our BIL halfway to pick up HBear who came home sick. After a Dr appointment the next day, we found out she had strep throat and pink eye. Horrible timing as she had to stay in bed for the rest of the week. The rest of them went to the Kangaroo Creek Farm before coming home to see the Skyhawks Parachute Team kick off PeachFest with Grandma, Grandpa, Auntie and JQ!

On Thursday HBear was sad to miss her chance to perform with her dance group on the big stage at Peachfest and we had delicious BBQ ribs with sauce from Slow Bottled Sunday that we had bought at the Farmer’s Market last week! After dinner we met up with everyone at Skaha Beach to see the Sandcastle Competition and have some ice cream at the park. SBean and SPea had a hottub and a sleepover while PrettyP and CPatch had a play and a sleepover too.

On Friday we woke up and HBear was still under the weather. The rest of us went to the Kids Zone and got glitter tattoos, ate Timbits, watched performances, got balloon animals, jumped in the bouncy castles and visited with the reptiles. The Kids played the drums and then we walked over to see the rides. SPea even found $50 on the sidewalk!! After lunch we went back to the Festival and watched the Motocross performance and ate dinner. We listened to the music of the Beatles cover band and then we went to the rides! The Kids had the BEST time. I left early to go hang out with HBear. Poor Kiddo. I brought her home her favourite Wendy’s and a Frosty. She ate while we watched Big Brother together 💛.

We ended Peachfest at the Parade! This year HBear was invited to join the Balance Dance Float and SBean was invited to join the Springers Gymnastics Team! Unfortunately HBear was still not feeling well but SBean had the BEST time flipping down Main St and Lakeshore with half the town watching 😆. The weekend ended with goodbye kisses and hugs. It was wonderful seeing PrettyP and my Bro. We already looking forward to next summer when the Cousins are back together again 💛.
