Summer Potpourri & Easy Skillet Lasagna

I have some random thoughts/things I want to talk about. I feel like the past month has been so crazy with summer visitors and fun that I haven’t mentioned some of the things that are happening right here in our own backyard. So here are a few of my random thoughts of the summer!
1. It has been incredibly hot! I listened to a podcast this week that said that this is probably the coldest summer that we will ever have moving forward. Think about that one! We haven’t had as many wildfires this season… yet but the one that did impact us was scary. It is 21 kms away and just up our local ski hill and if a wildfire was to engulf Apex Village, it would have long standing consequences and impact to our local tourism and our lives. We have friends that own houses up there and our town counts on the ski hill for revenue throughout the winter months. Today the evacuation order has been lifted but the fire is not controlled as of yet. We are amazed by the amazing fire brigade and firefighters that come in every summer and save us from nature’s fury. Thank you 💛. 
2. Lenny (my Sis’s doggo) is still enjoying his time with us while Oliver is quite done with his “cousin” 😂. The minute we leave him alone he has begun to claw and eat our drywall and baseboards 😬. We’re hoping that his separation anxiety will get a bit better when our routine returns in the fall.
3. We celebrated our 12th Anniversary this past week! Although we have been married for just 12 years, we have been together for 21 years! Next year I will have been with Ninja for half of my life!!! That is crazy! We didn’t do a big date day this year because we celebrated both of our birthdays and our anniversary on our last date day/night knowing that this summer would be busy. We did get each other gifts though! Ninja bought me 2 bottles of white and red wine from a local winery called Silk Scarf. It was our Silk Anniversary, isn’t he clever?! I bought him a 12 year old Scotch to toast our LOVE 💞!
4. HBear got a Debit Card! With all the money she is making this summer working for our cleaning company, we realized that the time had come to get her a Debit Card. When she was 6 years old we set her up at a savings account and we make deposits throughout the year but she has never pulled money out. Now that she is almost 14, she wants to buy herself things and she has worked hard for this money and deserves to be able to spend it… with a little help learning the basics of financial literacy 😉. So what we did was we got her a debit card and a checking account. She will keep all of her money in her savings account (which she has no access to) and we will discuss an amount that I will transfer into her new checking account. At the end of each month we can go through her expenditures. I’m sure she will be horrified to see how much money she actually spends on junk food! 😂 Hopefully this helps her on her path to making smart financial decisions throughout her life. Frankly I think it’s something they should be teaching in school as I definitely use budgeting in my daily life way more than geometry I can tell you that 😂. But they don’t so hopefully Ninja and I can help HBear out by teaching her about some of our past mistakes so she doesn’t make similar mistakes in the future!
5. We went camping this weekend! Well I don’t know if it was camping as much as it was, glamping! My Sis and my BIL have a permanent spot in at Westward Ho, a campground in Sundre, Alberta! This past weekend we drove there to pick up SBean and experience their a little piece of happiness! It was so much fun! As a child we did a ton of camping and I only have wonderful memories of riding my bike, swimming and playing with my summer friends! Ninja and I did some camping together in the early parts of our relationship… and he still married me! 😜 As I have gotten older, camping has become something that I find difficult to do and not at all relaxing 😂 however, spending one night with my Sis having drinks, talking around the fire, and watching the Kids spend money on candy at the camp convenient store made my heart full. As I said to Ninja when we left, “that was the perfect way to have my last camping experience” 😜😂. 


6. I still have MS. 😂 I may not talk about it as much but my symptoms are very much still there. I am learning how to rest, manage, and go easy on myself because honestly at this point… That’s all I can do. I can’t change my diagnosis and some days I don’t even want to accept it but for the most part, our lives have started to even out. I’m beginning to learn my boundaries and push myself a little bit more. Some days are bad but for the most part most days are good. Actually, after the summer I’ve had I can say that despite my diagnosis, most days have been GREAT 💛.

There are things that my Kids like that the other one doesn’t. Like salmon! HBear loves salmon… SBean not so much. Pineapple! SBean loves any meal that incorporates pineapple… HBear absolutely hates anything with pineapple in it. So while SBean was away I asked HBear if there was anything she would like to eat while she had this opportunity without her Sister. All she said was, lasagna. Now SBean loves lasagna too but it’s not something I make often and definitely not in the summer! Let’s be real, lasagna tastes amazing but it’s a bitch to make! There’s so many layers, so many steps, and it just takes forever to make a good lasagna. So I looked around for an easy skillet lasagna bonus points if I could use up the leftover ricotta and spinach I had in the fridge! This recipe hit all the marks! It was super easy, I used up my leftover ingredients, and it tasted like lasagna but with half the work! I didn’t have a lot of time so I used garlic powder but next time I would definitely take the time to mince up some fresh garlic. I like garlic and I found this dish to be a little bland. Nobody else did but I think I would prefer fresh garlic over garlic powder. To be honest, I always prefer fresh garlic or fresh herbs to dry ingredients but throughout the winter I make do and in a time crunch, I’m willing to make small sacrifices 😊. Oh my God do you remember that made for TV movie with Farrah Fawcett, Small Sacrifices? That was so good! Also, did you know that if you have fresh herbs on hand that you would prefer to use but the recipe calls for dry ingredients, just double the amount of fresh herbs that the recipe calls for and same same!


Easy Skillet Lasagna
Adapted from Taste of the Frontier


1 lb ground beef
2 teaspoons garlic powder, divided
3 teaspoons onion powder
24 oz pasta sauce
12 oz uncooked pasta
2 cups water
½ cup ricotta cheese
1 egg
1 cup spinach, chopped
½ cup basil, chopped
½ cup Parmesan cheese
2 tablespoons flour



Combine the ground beef, 1 teaspoon garlic powder & onion powder in a large skillet, season with sat and pepper & brown over medium heat.



Add in the pasta sauce, uncooked pasta & water.


Stir & bring to a boil, reduce heat to low & cover.


Simmer over low for about 20 or until pasta is fully cooked.

Combine ricotta, egg, spinach, basil, Parmesan cheese, flour, remaining garlic powder, salt & pepper & mix to combine.


Scoop large dollops of the cheese mixture on top of the cooked pasta while still in the skillet.

Cover & cook an additional 5 minutes.


This was a busy week! I managed to take some time for myself to get back into my daily yoga routine. It was so nice to hit the mat again! I spent the evenings outside stretching and reading as I watched the sky change with the smoke, the lightning storms, the downpour, and by the light of the amazing full moon. It has been incredibly hot out and Oliver has been letting everyone know he is missing us by destroying our walls and baseboards 😬😂.

This week we had to say goodbye to my SIL and JQ. It was a super nice visit with them! On the night before they left we went out for tacos at Neighbourhood Brewing to say bye and to celebrate our 12th anniversary! On Sunday night Ninja drove SBean to Kelowna and the next day my Sis, her family, and SBean took off to Sundre, Alberta for a week of glamping! While they were away, HBear had fun! In between work, helping me around the house, and cleaning her room she found time to go to the carnival with her friends, library group, get a debit card, and pick some new books out at the library! I used my new nieces bookmark, had a delicious kube dog from Winnipeg and got caught up with a ton of laundry!

On Saturday we drove to Alberta to pick SBean up! There was quite a bit of smoke in Revelstoke and leaving the foothills. We only stayed for the night but we had a blast! We met their wonderful friends, had a delicious steak sandwich dinner, went to the nearby convenient store, did some exploring, drank way too much, and roasted marshmallows! Next morning the Kids got a waffle from the Waffle Truck and I projectile vomited into the bush! 😂 I most definitely cannot campground party like I used to! The drive home was long. The traffic was bumper-to-bumper and there was an accident right before Field. We didn’t get home till late Sunday night and my entire body was left without feeling and very very swollen. My ankles looked like elephant’s feet! 😂 On a whole, it was a productive week that ended in the most fun way possible. Thank you Sis and BIL for sharing your happy place with us 💛.
