Day 1: Here we go and exploring Whistler
Ninja and I haven’t been away, just the two of us, since February 29, 2020. We met my WREBestie in Edmonton to watch the Oilers vs Jets. Sitting in the airport on March 1, waiting to go home we began to notice masks and you know what happened from there.
This year for Ninja’s 50th birthday I gave him 4 curated itineraries to 4 different dream vacations. A musical history tour across England with 2 days in Paris, an Icelandic cruise, a family road trip from here to Anaheim (the choice was given last summer before #ElbowsUp) or a spa vacation on Vancouver Island. He chose the last one!
We like to make travel days as fun as possible so we got up early to make it to our first stop by early afternoon to explore all that WHISTLER has to offer!! I was so excited because I have never been there before. Actually, that was a common theme this week, places I have never been to lol. I completely walked out of my comfort zone and decided to climb new mountains instead!
We stayed at The Crystal Lodge in the heart of Whistler Village. We enjoyed the Crystal King room. We got there early so that we could enjoy all that Whistler Village has to offer, and there is a LOT. They were SUPER accommodating, they allowed us to store our luggage, valet our van and texted us when our room was ready. When we got there our bags were already brought up and they had left us a sweet message for our 15th anniversary, our Crystal Anniversary. They also left us a small bottle of brut to celebrate!
We were lucky, the weather has been crazy this year and the coast has been very hot, unfortunately some of the most impactful fires of this season have been on Vancouver Island. Thankfully, the weather turned right as we got there! Cooling down and a little rainy. Great for fires and for my MS! Because of the weather, Crankworx a bike competition up at Whistler, moved their finals to the day we got there! Lucky us got to watch the incredible athletes do wild tricks! It was awesome!
That seemed to be theme of this entire week… luck. Every thing we did seemed to just hit the right timing. Winning 💛.
After we checked out the bikes for a bit we took the Gondola up. And then up again. I was FREAKING out lol. I don’t know what happened to me lol I have turned into such a scaredy cat! I have taken chair lifts up to the Top of the World in Lake Louise, with a snowboard dangling from my feet, with not a worry in the world! Crazy! The gondola was amazing, the views were fantastic and being up there on top of the mountain was exhilarating! We were able to check out all the views before the mist rolled in and the rain started to fall lightly. Perfect timing, winning! We had a beer and some homemade chips up there before we took a gondola ACROSS to Blackcomb. The views were stunning and we even met a lovely family from Penticton at the top! We took pictures for each other 😊.
After a quick wardrobe change we headed down to the village for our Whistler Food Tour. Our tour guide took us to the Bearfoot Bistro wine cellar of for an amuse bouche and a sabre lesson. Throughout the tour we collected cards to make a poker hand. We played games along the way and the first was highest card gets to sabre the bubbly. I pulled an Ace. Winning. I passed on the experience to Ninja and he was a pro!

We then had our appy at Hy’s which was so cool because Hy’s is a staple from my hometown of Winnipeg again… winning! We had our main course at Quattro, then went to Rocky Mountain Chocolate for some ice cream and then we ended the tour at Grill & Vine where we had a local charcuterie board and more wine! When all was said and done Ninja had the second best hand with 2 pair but I won with triple Queens because, winning 😁. The tour was amazing! We ate a ton of great food, all the wine was Okanagan, and the people were so fun. We were with a couple from Toronto and a couple from Australia. Great conversations and just an overall great way to start our holiday.
Before bed we walked around the Village, taking in the sounds, sights, the Olympic landmarks that remain from the 2010 games. It was my first time in Whistler but it won’t be my last!



































Day 2: The Ferry, Nanaimo, Parksville, and Kingfisher Resort
We broke up our travel days for a few reasons, we didn’t want to be rushed, we wanted to explore a bit more and we wanted to make sure my MS symptoms were kept under wraps as much as we could control. We woke up early to get down the Sea to Sky Highway and catch the ferry.
We had breakfast at Trolls Restaurant in Horseshoe Bay. Diner eggs and crispy bacon, it was awesome. I’ve been on a ferry before, when I was in grade 4, so even the ferry was an “experience”. I have always loved boats. I love sailing and being on the water. Or at least I did before my brain got lesions on it. I had a VERY hard time balancing on the boat. The water going one way and me going another made me lightheaded and my heart flutter. I have a neuro appointment next week so I will have to ask him about that because it was NOT my favourite feeling.
Once we were back on land I started to feel better. We landed in Nanaimo and went right to the marina for a local beer at Penny’s Palapa. The authentic Mexican food looked amazing but we were still full from Trolls and the sway of the dock made me feel like my head was floating off into the blue sky. We were super lucky the whole week with the weather! It was supposed to be chilly and rainy all week but we only saw rain for about 10 minutes on Tuesday. It was the perfect temperature, mostly in the low 20’s with sunshine, a soft almost fall breeze and warm evenings. Winning.
We always find that Geocaching helps us to explore new locations. There are usually caches at points of interest that you might not find otherwise. We did an Adventure Lab to discover the history of the Naniamo Harbour.
We then started our journey north to our resort. While making our way we stopped to do another Adventure Lab in Parksville at the Rathtrevor Beach.
I started following the Kingfisher Resort and Spa on Instagram, years ago. Ninja picked this specific vacation because of this Resort and Spa. We were going for relaxing and reconnecting and we absolutely achieved that! We stayed in the Arbutus Suite which I found really cool because one of the only things I remember about visiting Sechelt when I was a kid was the Arbutus trees! We got to the resort just in time for our dinner reservation at Ocean7. We had fresh bread, Okanagan wine from Mt Boucherie and the most delicious food I’ve had in a very long time! I had the black truffle risotto with local wild mushrooms and Ninja had the chicken done two ways. We ended our dinner with homemade macaroons! It was incredible.
We ended our night with our first of three, spa treatments, the Pacific Mist Hydropath. All of the spa treatments were incredible but the Hydropath, was my favourite. The entire experience is super private and you are guided through your experience as you move from station to station. We began in a shower with head to toe jets. We then moved onto a hot massage pool. The whole place feels like you’re in a tropical cave with spa music, vines hanging and moody dark lighting. In the pool, you could sit on a cave ledge and move around to all the different massage jets that concentrate on different points of your body. Ninja and I were together for our experience and our guide continuously kept us hydrated. The next station was a cave with four cave entrances. In each section was a different massage shower/fountain you could sit on the seats and enjoy all 4 massage showers before entering the eucalyptus steam room. It was amazing! The next station was an Arctic waterfall and then a walk down a hot water path and back up a cold water path. Not my favourite lol but it felt amazing! After you walked through the path twice you went and floated in the salt pool. The last station had cave baths. Ninja and I were given our pod/bath to lay in while it’s slowly filled around us. At the side ledge of our bath were giant seashell filled with a sea salt stub using hand collected sea kelp from the ocean. My skin still feels incredible.
We ended our first day on the island overlooking the ocean, watching the sunset, curled up by the fire with a book of meditations. While I relaxed, Ninja took advantage of the fire tables on the main level. The grounds of the resort were absolutely stunning, filled with flowers, the sound of nature, and intimate and private relaxation spots for couples and guests to enjoy. I didn’t get up there much because my legs were always Jell-O after the spa and once I got down the stairs, it was difficult for me to go back up. However, I’m not complaining, I had everything I needed right there in my gorgeous room.




























Day 3: Campbell River and Courtenay
We were up early every morning. Over the years we have found that I have the most energy in the morning and my MS symptoms compound throughout the day, leaving me, fatigued, sore, and foggy brain in the evening. So we tried to pack our days with the more physical activities and leave our nights free for spa, relaxation, and early bedtimes. On our first full day on the island we headed north to Campbell River to join the Wild Waterways, Into the Wild, wildlife boat tour. Best. Experience. Ever. Our guide for the 4 hour experience was Ruben and he was knowledgeable, fun, and he knew exactly where to take us to see a plethora of wildlife! We took a zodiac with a family of 4 from Germany and a group of 3 women, also from Canada. We raced across the water for just over an hour until we got to the Johnstone Straight and began our search. It was pretty chilly out probably +14 or so. Just as it began to rain, we saw our first humpback whale! It was incredible! His tail came up over the water, and I was absolutely in awe of this majestic beast. Amazing! We hung out with him for a while, and then made our way to a different arm of the Straight where we had heard that there was a family of orcas, feeding off the coast! Along the way we saw Pacific white-side dolphins swimming around a mama orca and her daughter. So freaking cool! Then another group of dolphins entered the picture and began irritating something really big, and then we saw the blow of air and realized there was a giant humpback whale beside us. Turns out it was a family of 3 humpback whales! So we were surrounded by 2 types of dolphins, 3 humpback whales and 2 orcas! Incredible! For the rest of our tour, we hung out there siping on hot chocolate and watching all the wildlife frolic, feed, and put on a spectacular show for us. Winning!
To celebrate our amazing morning on the sea, we followed the BC Ale Trail right to Campbell River’s only craft brewery, Beachfire Brewing. We had delicious brews while we snacked on chips and fresh salsa and a big pretzel with a yummy homemade mustard dip.
Next stop was at Shelter Point Distillery where Ninja tried a selection of B.C. whiskey. His favourite was the Smoke Point which uses smoke from local driftwood and sea kelp for the smokey flavour.
We made our way south to Courtenay where we enjoyed margaritas and yummy Mexican at Atlas Cafe on their cute patio.
We also did a Courtenay Adventurelab that took us around the historical sites and then we went for an evening walk on the gorgeous Royston Seaside Trail before heading back to the resort for our 2nd spa treatment, Lavender Dream Massages. This was a 70 minute massage with mood lighting and lavender sea kelp poultices that were kept hot and pressed into sire points throughout the massages. The lady that did my massage really worked on my left arm, which is plagued daily with MS symptoms. Honestly, it hurts so freaking bad, but felt so darn good lol. All the lavender essential oils and creams were absolutely wonderful. Ninja went up for a nightcap while I got cozy in bed to watch the sunset over the ocean. It was a perfect day.









































Day 4: Cumberland and Comox
On Wednesday, we wanted to get into nature and explore the Comox Valley. We started on the shore of our resort as we were fascinated by the tides. From there, we drove to Cumberland. While I was researching the island, the tiny village of Cumberland kept on coming up in all the locals reviews of must not miss places, that’s why I love blogs people! LOL You get the insider information! We started at the Cumberland Village Bakery where we got a giant cinnamon bun and their world famous glazed doughnut. This doughnut was 100 times better than any Krispy Kreme doughnut that I have ever had and honestly, that’s saying a lot from me lol.
Next, we went for a hike! Cumberland is all about bicycles. There are so many trails in the Cumberland Forest and I was blown away by kids, people my age, and elderly people literally riding their bikes UP the mountain! The weather was perfect! Between 18 and 22°, perfect for hiking. Our goal was to see the Cumberland Potholes, a.k.a. the China Bowls. Unfortunately for us, the trail was closed because of the annual Red Toad migration. However, the hike up to the China Bowls was magnificent and Ninja and I had great conversation and we really enjoyed the hike overall.

Still hoping to see some water, we drove to our next destination, Trent Falls. Again, we read local hiking blogs to see which hikes might be doable for me. This one seemed like there were some hard spots, but we both felt that the sea air and good sleeps, and cooler weather would allow me to manage with his help. We hiked for a while, but it was very steep. The morning hike through Cumberland Forest made my thighs a little tingly, and by that point, I could barely feel my left leg. Going up was no longer the issue, it was going down! It’s very scary to put a foot down on a steep side of a mountain when you can’t feel your thigh. I don’t know how to explain it lol it really messes with your mind! So we pivoted! The river leading to the falls was dry as a bone, the Island has had crazy hot weather this summer and has been very dry. So, we walked along the basin of the river bed! We saw amazing rocks and it was so cool. We never made it to the falls lol but we had an amazing time trying! I am putting the journey in the win column even if we didn’t get to the destination because isn’t that the whole point?
By that time we had worked up an appetite. We headed back into Cumberland and had classic Pick a Pop or Pop Shop on the Island and “world famous“ burgers and fries from Cooks Restaurant.
Right next-door to Cook’s is Cumberland Brewing so of course we had to check out the local brew. The place was pretty cool with hops growing and vintage miss matched chairs throughout the patio and the beer was great too! The table beside us was having a Summerland cider which got everybody talking and one of the couples was also from Penticton! Go figure lol.
After we completed an Adventurelab in Cumberland, we were off to Comox. The locals were friendly and were always suggesting great places to visit. Our server at the brewery told us we should check out Comox Lake, so we did! It just doesn’t seem fair that one place can have so much! An ocean, lakes, mountains, and so much greenery. Absolutely breathtaking! We didn’t stay long because we had a reservation at a Comox winery, 40 Knots Winery where we participated in a guided tasting of some of their wines, paired with local cheeses, crackers, and pickled grapes that were absolutely delicious, like Christmas in a grape?! I just love how different regions of my province produce such different varieties of delicious wine. It was a cool experience.
While in Comox, we stopped by Rad Brewing and had a flight of their craft beer on the Wooftop while staring out at an amazing view of the Sea. I didn’t get any pictures though because we met a fantastic couple who were sitting beside us and ended up chatting away lol in fact, we are almost late for our last spa treatment back at the Resort.
For our last spa treatment, we did the brand new Kingfisher experience, The Healing Caves. It was the absolute perfect way to end our stay at the resort. We started in the desert cave. Each room had a theme and this one was a sauna that was designed to look like red rock desert. While you sat on the red rocks, you were able to cool down using a chilled towel that we were given. While we relaxed in there for 10 minutes, a giant screen played a video of flying over the desert, red rocks and hoodoos. The next room was a steam room and it was designed to look like a rainforest complete with a softly trickling waterfall of ice cold water that you could use to re-hydrate your towel. The essential oils in the room were amazing! I felt like I could truly breathe.
The next cave was Ninja‘s favourite but it definitely wasn’t mine lol. The Arctic room. Yeah, so it was freaking cold lol. While you sat in this ice cave that wasn’t actually ice so at least there’s that lol you watched a video of flying over snow, glaciers, and Arctic scenes. Ninja stayed the entire 10 minutes, but I was in and out, more out than in actually. Then my favourite room, the red light therapy room or astral room. Ninja and I laid on our chaise longes and were covered front and back with almost like a sleeping bag of red light. On the ceiling, we watched stars, Northern lights, and the universe float above while music played in the background. Every room had their own music as well. A full freaking experience. The salt cave was interesting. Salt was piped out, and there was salt almost like a beach at our feet while we sat on these salt cave seats. The salt coated your lips, and you could taste it! To offset that, they gave us cups of coconut water! It was very cool. The last cave was the storm cave, and it was like a big hot tub pool with a giant screen at the end of it so when you sat on the seat in the pool, the pool led to the screen, which was a video of the ocean, so it looked like an infinity pool! It was super relaxing until the storm started to pick up! As the waves on the screen got more intense the water in our pool did as well. Then the rain and water fell from the ceiling, and the wind was blowing, and the thunder and lightning were crashing. It was incredible! As the storm rolled out, it became peaceful again, and we walked out to our hostess/guide handing us two flutes of Prosecco. OK lol! We took our bubbles outside to the pool and hot tub and enjoyed it out there. Instead of getting all dressed up for dinner, we decided to get room service and have a delicious dinner delivered to us from the Aqua Bistro and Wine Bar and eat it in our robes on our deck overlooking the setting sun over the ocean.


























Day 5: Nanaimo, the Ferry and Port Moody
When I woke up in the morning, I was so sad to leave our little slice of paradise on the Island. I got up at 5:45am to watch the sunrise and enjoy every last second. Then we packed up and we headed back to Nanaimo to catch our ferry. We went a bit early so we could go to Red‘s Bakery in The historic downtown of Nanaimo to buy Nanaimo‘s best Nanaimo Bar, voted 3 years in a row. Then we headed to Departure Bay Beach to watch the tide come in, eat our Nanaimo Bars, and enjoy our last moments before heading into the ferry lines. Luckily, we always seemed to get put in the right line and we were always the first ones out… You know what I’m going to say right? Wi… well you get it :).
I had a better ferry experience on the way back because I didn’t move lol. Ninja got up and walked around the boat, but I stayed in my seat and watched the morning sun shine down on the beautiful water. Once we got to Vancouver, we decided to take advantage of a real mall and pick up a few back-to-school items for the Kids. Then we checked in at our hotel, Executive Suites in Coquitlam. This was a last-minute addition to our trip. We did this for 2 reasons 1, we didn’t know how I would be feeling by the end of our trip and driving from the resort to the ferry, taking the ferry, then driving back to Penticton seemed like a lot. Then one of my favourite breweries posted a video saying this is your sign to come to our brewery and try Dat Juice, which happens to be my favourite craft beer. So I did lol and we did. Ninja and I enjoyed a flight at Twin Sails Brewing in Port Moody. They have a happening little craft beer scene in Port Moody, along the waterfront there is a whole slew of them so we had to take advantage. We went to Yellow Dog Brewing next, to see the original brewery which is a lot smaller than the one they just opened here in Penticton actually. Then we went to Rewind Beer Co., and we were blown away! The vibe was so nostalgic and fun, the beer was absolutely delicious, and they have Hightop Pizza which is a Detroit style deep dish pizza that was to die for. I begged them to open a restaurant in Penticton lol Ninja and I polished off the entire pizza and I wish we would have got another one lol. For dessert we went to Rocky Point Spirits where we switched it up and had some delicious cocktails using local spirits. Port Moody is super pretty and Rocky Point Park along the water was packed with families, music, and laughter. It was the warmest of all the days and heat drains me so I did not last long lol. We were back at the hotel by 8pm and Ninja went down for a nightcap while I slept. The next morning we were up super early to hit the buffet before heading home in time to see HBear and SBean’s jazz cool concert.





















All jokes aside, I TRULY feel like I won the week. Not because things had a way of working out perfectly but because we still had a blast during all the IMPERFECT moments too. Just the fact that I was ABLE to do this trip to celebrate my favourite person’s birthday, is why I feel like I won. I absolutely adored Vancouver Island. I have always said that Penticton is the best place to live and that I would never want to live anywhere else, but I told Ninja this week, if we were to ever move, it would be there. I loved The Island vibe. How artistic it was, full of nature and beauty and activity and life and fresh air and open minds and great people and blue skies and grey moody mornings and hand harvested sea kelp, and the scent of salt on the air. I could see myself living in Campbell River or the Comox Valley in a different life. Who knows, never say never! Lol.
Thank you to all the people that helped us be able to enjoy this magical week, my mother and father-in-law for looking after our children and getting them to band camp, letting their friends/boyfriends come over for dinner, and honestly for giving them that quality time that they will remember, forever. Also to my Dad who looked after the business, our house, and our Dog! Especially because our Dog is an asshole with major separation anxiety and well, he’s just a ball of anxiety lol so we appreciate knowing he was somewhere safe and loved.
Also, thank you to all the family members that have contributed to our Kingfisher experience lol for the past year and a half. I have been asking for Kingfisher gift certificates for my birthday, Mother’s Day, Christmas, and all other holidays lol. My parents taught us to live within our means and a trip like this is expensive. We absolutely did not want to go in debt or put things on our credit card so for whatever we could, we paid in advance, I saved up all of my cash over the year to pay for all of our food and drinks and the gift certificates paid for our stay and the spa treatments. When you plan ahead, you can’t help but feel like you’re winning!
Being on the Island this week inspired me! I made Nanaimo pops for our wedding gifts for our guests but compared to what Ninja grew up with, they were hockey pucks lol. My Mother In Law grew up on the Island and every Christmas she makes the BEST Nanaimo Bars! They are creamy and sweet with the perfect amount of each layer and the best crumble crust. Ninja asked her if she would take an evening and teach him how to make them so that he can teach our Kids (who love them just as much as we do) and they can teach their Kids!
I’ve seen Pamela Anderson in the news a lot lately. She is having an encore in her career and I am here for it! I love her home show, I love her cooking show and I love how Canadian she is! Born and raised in Ladysmith BC she STILL lives on the Island. Read all about her life in her memoir With Love, Pamela by Pamela Anderson Audiobook. This was my first audiobook. I loved this book. Her life seems so familiar and yet so surreal. Like, as if that life happened to a small town girl from the island? She is so not what she seemed to be. I watched her shows on the food channel and the home and garden network and saw this creative, curious, humble side of her. She is so beautiful inside and out. She’s a free bird and she reminds me SO much of my Mom (minus the whole sex symbol thing lol). Her voice is so beautiful in this audiobook too. She is a good storyteller with a soothing narrative voice, especially because I remember so much of what she is describing being in the “news”. Pamela Anderson was THE female celebrity of my youth. Hearing her take on her own life and how it all fell into place, how love rules her life and how much she loves her family was refreshing. This was a lyrical book, full of beauty, thought, and grace.
Nanaimo Bars
Recipe by My Mother In Law24

minutesIngredients
1/2 cup butter
5 tablespoons unsweetened cocoa
5 tablespoons sugar
1 egg
1/2 teaspoon vanilla extract
1 cup coconut
1/2 cup walnuts, chopped
2 cups graham cracker crumbs
4 tablespoons butter
2 - 4 tablespoons milk
2 tablespoons vanilla custard powder
2 cups icing sugar, sifted
2 - 4 squares semi-sweet baking chocolate
1 tablespoon butter
Directions
Place softened butter, sugar, cocoa, vanilla and egg in a bowl. Set bowl in pan of boiling water. Stir mixture until butter has melted and is the consistency of custard.
Mix graham cracker crumbs, coconut and walnuts together. Add to the cocoa mixture.
Pack into ungreased 9" square pan and set aside.
Cream 4 tablespoons butter, combine 2 - 4 tablespoons milk with 2 tablespoons vanilla custard pudding powder and add to butter. Mix in sifted icing sugar.
Spread over chocolate base and allow to harden.
Cover with 2 - 4 squares of melted semi-sweet chocolate mixed with 1 tablespoon butter. Spread evenly. Refrigerate if desired.

The Kids had a busy week at Jazzcool Camp. They texted pictures throughout the week while we were away. It was cool because HBear’s BF’s little Sis was in the camp too and all of HBear’s band friends too. SBean felt super included and they have gotten so much closer because of it. Ninja’s parents and my Dad went to The Hub with the Kids on Wednesday night for a performance from all the band teachers from the camp. Actually, all the band teachers at all the school here in Penticton run the camp so it is great practice for the upcoming school year! We got back just in time to catch the finale, it was SO good! Oliver was SUPER happy to see us and a Blue Jay landed right beside our balcony which to me was a sign that the Jays are going all the way this year because… WINNING!

A few years ago we did a coach trip from Vancouver to Calgary and spent a night in Whistler. It is a magical place. I wish we had time to explore more.

Vancouver Island is so beautiful. I chuckled when you said “elbow up.” I have friend who lives in Toronto (we met in Paris two years ago) who is actively doing that too. I’ve heard good things about Pamela Anderson’s memoir.
Also, many years ago, my family and I drove around BC from Los Angeles. We came across the signs for “Nainaimo” and it made my mom laugh because in Tagalog, my parents’ native language, it sounds like “your mom” (nanay mo).
It really is so beautiful! Sadly, I don’t think your friend in Toronto and I are the only ones. Every single Canadian I know has their elbows up. That is hilarious about Nanaimo and Tagalog! My daughter is dating a boy from the Philippines and he is teaching her Tagalog and next time I have an in to say, your mom lol I’m doing it in his language! Thank you so much! Lol.

This looks amazing. I am in love with British Columbia. 😉 I was just on Vancouver Island in June, and we saw a few whale tails like this (only further away) in the Salish Sea from the ferry from Port Angeles to Victoria. What a delightful trip! Visiting from the Bookish Bliss linkup.
