My Kids think that I am an Apocalypse Prepper. Bahahaha. I have a friend whose ex-husband talked about that stuff and while I did agree on some things lol it wasn’t because I thought zombies were going to come and attack our brains and if that were the case, I don’t think he needed to prep anyways, lol. I do, however, believe that the supply chain is in trouble. I believe no matter what any government tries to do, things are going to be more expensive because fuel, fertilizer, feed, and drought/weather challenges show us where this is headed. So while I don’t necessarily prep, I’ve been talking to my family, more about sustainable living, using less, and possibly learning a bit about providing some sort of food for ourselves. Produce is expensive! So this year we are attempting… A balcony garden! We planted snap peas, Roma tomatoes, cherry tomatoes, beefsteak tomatoes, chives, basil, strawberries, parsley, cilantro, cucumbers, lettuce, thyme, rosemary, green beans, potatoes and arugula! We even planted some flowers to help keep pests away from our little babies lol!
It has been so much fun watching everything start to sprout. Every day, Ninja and I are out there looking at little green tips poke through the Earth, which we’ve mixed with our Lomi compost, that we have been collecting over the year. We’ve been using our herbs and we have had a handful of strawberries and snap peas so far but the joy that these little plants are bringing me, I would have never expected. Admittedly, we have made some mistakes but we watch YouTube videos and read and hopefully we learn from our mistakes and next year our crops are even more bountiful.
Father’s Day is coming up! This year we have decided to split up for Father’s Day and let all the Dads do what they truly want to do… Golf. Well that’s not entirely true, Ninja, his Dad, and BIL want to golf but my Dad, he’s not into golf. He loves vintage cars. My Sis and I grew up in a house where Dad and our Grandpa went to auctions, restored cars and sold them. My Mom loved cars, Dad loves cars, and Sis, Bro and I… Don’t mind cars lol. So we are Sis and I are going with our Dad and the Kids to the Vintage Car Show on Father’s Day while the other Dad‘s go golfing! Win – win – win – win lol. We won’t really see Ninja on Father’s Day but we celebrated him all month long with these fantastic Father’s Day recipes.
We have a brewery here in town that has Ninja’s favourite chicken wings, Tajin Wings. He liked them so much, my Dad bought him a bottle of Tajin Seasoning and we used it to make these Grilled Tajín & Maple Chicken Wings! Ninja LOVED them and so did my Dad so this was a double Father’s Day winner for me. These were SO easy to make and looked and tasted amazing, definitely a good pick for game day or a BBQ.
One of Ninja’s favourite restaurants is The Keg. The Keg is a Canadian steakhouse that opened in 1971 in North Van and now has 105 locations across North America. One of their signature dishes is, Billy Miner Pie. Billy Miner was an American outlaw whose time in BC made him a bit of a legend. He is credited with the first Canadian train robbery in Monte Creek, BC and it is rumoured that he hid his loot around 70 Mile House/ Green Lake. This copycat dessert reminded me of The Keg and sharing a slice of Billy Minor Pie with Ninja when we first began dating, it’s still one of his favourites!
Ninja is a big fan of steak. He loves a good ribeye but he really enjoys a nice steak sandwich or steak and fries! He can throw a steak on the barbeque, some Cavendish french fries in the air fryer and he has the dinner of his dreams! Lol I thought for Father’s Day this year we could gourmet his pub food up by adding one of France’s staple sauces to his steak & fries and we had, Steak Frites with Béarnaise Sauce and it was DELICIOUS. I’m a big hollandaise fan, but I was unprepared for the yumminess of this Béarnaise sauce combined with the steak, it was a symphony of yum in my mouth. Ninja doesn’t like hollandaise but really enjoyed this sauce with his steak for a little something different!
I make Ninja chocolate chip cookies often but for the occasion, I made them a little extra special by adding, espresso! These Espresso Chocolate Chip Cookies were at a whole new level. The espresso plus the brown butter really really elevated these cookies into a different stratosphere. HBear marched into my bedroom after trying one and said, “those cookies are superior to any other cookies” and marched back out, grabbing another one before heading out the door lol.
I am not a whiskey fan. In fact, when I was a teenager and I got caught drinking, my Dad sat me down the next day and said, “do you want to drink? Let’s drink!“ And he poured us each a glass of whiskey 🤢 Haven’t touched the stuff since 🤣. Ninja is more of a bourbon turned scotch guy. However, as we are boycotting, American alcohol, and you can’t really make a cocktail with scotch, Ninja tried this Whiskey Smash instead! He really enjoyed it and found it a perfect June drink with the brightness of the lemon as it is quite citrus forward.
I picked this book because I knew that the main character was a Dad and it has been recommended to me many times over the last year but *warning* much like my typical Mother’s Day book reviews, this one is definitly a different take on a Father’s Day Treat lol. The River is Waiting by Wally Lamb A book with a main character who is or was incarcerated. Everyone warned me that this book was powerful and it would leave a lasting impression, they were correct. Part 1 starts out with a terrible but preventable accident. From there Corby gets into the years between 2006-2013 when he met his wife Emily and tells the story of how they fell in love. To be honest, the red flags in these early days were there. Her mom saw them and her UCLA housemates voted them out of the house because they saw them too. Corby takes the easy way out of everything and it even shows by the trailer hitch he bought for their cross country trip. After chasing after Emily (which can also be viewed as romantic or another red flag) to California, their lives are moving along nicely when they get bad news and have to go back home to the east coast, they are engaged by that time and Emily is pregnant. The accident. I had to put the book down when Corby told Emily what happened. Ugh heart wrenching. Honestly, I wanted to stop reading many times in those beginning chapters but I couldn’t put it down! We see the aftermath of the tragedy, the meetings, the therapy, the break in the family and it’s so sad. Part 2 begins on Day 1 of Corby’s sentence. I have friends that know people that have gone to jail, but I don’t know anyone personally or at least close enough that they would tell me their stories, so prison life was gobsmacking to me. I would’ve peed my pants on day one lol for real lol. After everything that has happened in the first 13 chapters, I did not expect the story to take such a political, racial, and mental health turn, this was such a gripping story. Wow! The open discussion about addiction, suicide ideation, and even how complicated the crime is, all makes you really think and digest. This is not just a compelling story. So many important things are discussed that not all of us know about first hand, but we all know people that are struggling with these issues so it is good to read from a different perspective. Part 3 begins a year into his sentence and he is navigating his stay much better than he did at the beginning. Emily. Perhaps because the narrative is from Corby’s view, we see his growth but while I understand Emily’s anger and grief, sometimes her behaviour as Corby’s wife made me mad. Part 4 broke my heart in all ways. This book is so real, so sad and touches on SO many issues. It truly encapsulates what the world went through over the past decade but through the rollercoaster ride of Corby’s life. I will think about Corby and his story for a long time.
Grilled Tajín & Maple Chicken Wings

2 lbs chicken wings
1 tablespoon olive oil
- Glaze
¼ cup maple syrup
3 tablespoons lime juice
1 teaspoon Tajín
¼ cup cilantro, minced
Directions
Preheat a grill to medium-high heat.
In a large bowl, combine wings, olive oil, Tajin, and toss until the chicken is completely coated in the mixture. Marinate wings up to 4 hours before grilling.
Place wings directly on the grill grates in a single layer. Cook for 15 – 20 minutes, turning halfway through, until golden on the outside and cooked through on the inside (165 degrees).
Combine maple syrup, lime, and Tajín in a large bowl and mix well. When the chicken wings are done, immediately transfer them to the maple glaze bowl and toss well to coat entirely in glaze. Sprinkle over the cilantro.
Billy Miner Pie

3 cups Oreo cookie crumbs
6 tablespoons butter, melted
48 oz mocha or coffee ice cream
½ cup almonds, sliced
¼ cup caramel sauce
¼ cup chocolate sauce
Directions
In a small bowl, mix together Oreo cookie crumbs and melted butter until uniformly moistened.
Press mixture into a 9-inch springform pan and freeze for 30 minutes. Leave ice cream out to soften during this time.
Spread softened ice cream evenly over the prepared crust, then sprinkle sliced almonds over the ice cream layer.
Drizzle with caramel and chocolate sauce (alternatively, you can wait to drizzle the sauces until after the pie is frozen, just before serving).
Freeze for 6 hours. When ready to serve, let sit at room temperature for 5-10 minutes, then remove the side rim of the pan and serve.
Béarnaise Sauce

¼ cup white wine vinegar
¼ cup dry white wine
1 small shallot, minced
½ teaspoon pepper, plus more to taste
1 tablespoon tarragon, finely chopped
2 egg yolks
¾ cup unsalted butter, melted
Kosher salt, to taste
Directions
In a small saucepan, combine white wine vinegar, white wine, minced shallot, pepper, and tarragon. Bring to a boil, then simmer for 3-5 minutes until reduced to about 30ml. Remove from heat and let it cool.
Fill a small saucepan or double boiler with 2.5cm of water and bring to a simmer. Put the cooled vinegar mixture in a heatproof bowl and add 15ml water and 2 egg yolks. Whisk together.
Place the bowl over the simmering water, ensuring it doesn’t touch the water. Whisk for 5-7 minutes until the mixture thickens and doubles in volume.
Slowly whisk in the melted butter, 1 tablespoon at a time, until smooth. Remove from heat occasionally to prevent overheating. Season with salt and pepper, and stir in the remaining tarragon.
Espresso Chocolate Chip Cookies

14 tablespoons butter
1 tablespoon ground espresso
1/2 cup + 2 tablespoons brown sugar
1/2 cup sugar
1 egg, room temperature
1 egg yolk, room temperature
2 teaspoon vanilla
1 2/3 cup + 1 tablespoon flour
1 teaspoon baking soda
1 teaspoon salt
3/4 cup chocolate chips
Directions
In a stainless steel pan, cook the butter over medium heat until the butter solids at the bottom are an amber brown colour (about 10 minutes) Scrape all of the butter into your mixing bowl.
Stir in the espresso grounds then set the bowl aside to cool to room temperature (about 20-30 minutes).
Once room temperature, whisk in the sugar and brown sugar for one minute until combined.
Whisk in the egg, egg yolk, and vanilla.
Fold in the flour, baking soda, salt, and chocolate until just combined.
Scoop the dough onto a parchment-lined baking tray. Then chill the tray in the freezer for at least 3-24 hours.
When you are ready to bake, preheat the oven to 350 F. Bake the frozen cookies spaced at least two inches apart for 10-12 minutes or until the edges are golden. Let the tray cool on a wire cooling rack.
Whiskey Smash

2 oz bourbon
½ lemon, cut into wedges
¾ oz simple syrup
6–8 mint leaves
Crushed ice
Garnish: mint sprig, lemon wheel
Directions
Muddle lemon wedges, mint, and syrup in a shaker.
Add bourbon and ice, then shake hard.
Strain into a rocks glass filled with crushed ice.
Garnish with mint and lemon.

June has been CRAZY busy in the best way! HBear had her final band concert and her final collab day. SBean volunteered at Elementary Track & Field and both Kids volunteered for 2 days at HaHaHa Kidzfest in the PAMDA tent and face painting.
I got my monthly candle subscription from Shy Wolf Candles AND my monthly bouquet from Folie Farms. On Friday HBear and I got haircuts and than she did her grad photoshoot! I can’t wait for the final pictures!!!
On Saturday we hit up the Kelowna Pride Parade with my Sis and Family and then the Kids had a cousin sleepover at. To end the week we had PAMDA Sessions where Ninja, HBear and SBean showed off their musical talent.
I’m tired but pacing, June has just started!
