Sweet and “Spicy” Citrus Basa


So I realize I have been off the grid. I kind of told you I would be but I know I have had many messages asking where I am and if everything is ok?


Yes. 

As well as can be expected I suppose. 


It is Spring Break and we have been so busy. Dad was in Calgary visiting my sister and her family and Ninja’s sister’s visit has sadly come to an end 🙁

I told you that Ninja, his Dad, Sister and Nephew went to Edmonton to visit Aaron. The whole weekend went very well. There and here! LOL Ninja’s Mom stayed behind and she helped out immensely. So did Dad. Man, I do not know how single moms do it! Credit where credit is due I tell you!


I am so happy Ninja got out to see his Brother and his family. He felt that it was very important. He is right. Family is VERY important.

Tonight we are having fish. Check that, tonight my family is having fish and I am having… not fish. LOL I am the worst influence but I dislike fish immensely. But, I am trying to make it more often because everyone else likes it 🙂

I am using basa. I have no idea what basa is. OMG I just googled it, thank GOD I am not eating that! LOL So obviously it is a bit cheaper that other fish, hence why I bought it. It is hard to make fish because I don’t know the flavors. But here is my big try! We are having it with steamed asparagus and baked French fries. I picked French fries because I am making myself poutine. LOL Yup, I get delicious poutine and they get fish HAHAHAHA Best Mom EVER!

Sweet and “Spicy” Citrus Basa

Adapted from Cooking Light

2 (6-ounce) basa fillets 
1/2 cup fresh orange juice (1 orange, I used a Cara Cara) 
3 tablespoons lime juice, I used the bottled kind because I was unaware we were out of limes 
1 tablespoon brown sugar
1 tablespoon olive oil 
2 teaspoons  soy sauce
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/4 teaspoon black pepper (I used extra black pepper & omitted the red pepper.)
1/4 teaspoon ground red pepper (optional, fish is a hard enough sell to the kids, spicy too. not a chance lol)
4 garlic cloves, pressed
1/2 teaspoon paprika

Arrange fish in a single layer in a shallow roasting pan coated with cooking spray. 


Combine all the ingredients;


pour over fish. Let stand 15 minutes.

Preheat oven to 425.

Bake for 10 minutes or until fish is nice and flakey. Drizzle sauce over fish.


Today was my BFF’s Dad’s funeral. I wish I could have been there but flights just were not lining up for me! I hope she knows how much I love her and how sad I am for her loss.

This past week Aaron was given the opportunity to go out and spend $5 000 on lego. Lego has been his favorite activity for years. He is very good at building things 🙂 He is so much like his Daddy. Although he will not have the time to build all the cool items he picked out, he picked to do this because he wants to donate the lego to the Stollery Children’s Hospital in Edmonton. So other kids can enjoy them through their hard journeys. I wish Aaron no more pain and the courage to find his peace.
