Yesterday, HoneyBear and I began making Fruit Loop necklaces for St Patrick’s Day. She ate all the yellow, orange and green because ONLY pinkalicious and purplelicious were allowed on HER necklace. Too cute LOL.

Today, HoneyBear had a St Patrick’s Day Parade at Preschool. She made a crown and talked about Sean Sean the Leprechaun all afternoon lol. 

St Patrick’s Day Fun!

So my sister and brother-in-law are coming in from Calgary tonight. To maximize our time together I like to have the prep work for dinners done. Especially on weekends of holidays like this – St Patrick’s Day. I have planned the menu so that I can use things twice. Example, I bought Savoy cabbage for Saturday slaw and for Sunday’s dinner too. So, today I am shredding and chopping all my veggies.

Ninja being super awesome said he would take the girls on a walk while I started dinners/wash diapers/finish up all the laundry and wait for my parents.
Mom isn’t feeling well. She finished chemo last Friday and has been overdoing it all week. She feels like we (I) am trying to control her life by not letting her drive herself around. Really, she should NOT be out in the public this week with her counts dropping. BUT I cannot tell her this because she is stubborn and believes that SHE is the adult and I am the child and the child does NOT tell the Mom what to do!
So, when I saw her in Superstore on Tuesday I freaked out. When she wanted to get her nails done yesterday and do shopping, I drove her around. Granted, she was far from thankful. So now she has an infection or something. Really, I am finding it hard to be compassionate when she continues to do this to herself.
So while I  worry and wait to see if she is ok, I hear screaming and crying. I rush to the door and see HoneyBear with a bleeding scratch on her lip and chin!!! She was concentrating on her Fruit Loop necklace and must have tripped over her feet on the sidewalk just 5 houses away. Ninja was cleaning her up and I got the Clover out. Add a Barbie bandaid and she is ready to try the walk again J What a trooper!
When Mom gets home 5 minutes later she looks like Hell. When I tell her what happened she says “That never happened to you kids.” Well, I guess she is feeling herself again.
So back to dinners.

Prepped for tomorrow and Sunday dinner

Tonight we are just having steak sandwiches with Caesar salad and sautéed mushrooms. So I will give you a recipe that we had earlier this week that was so good… I ate it everyday this week for lunch lol HoneyBear asked me yesterday, “Mommy why do you always eat dinner for lunch everyday?” I told her I didn’t want all the good food to go to waste, apparently I am the only one in the house that feels this way.

Chicken and Spinach Lasagna
Adapted from The Unsophisticated Kitchen

1 cup ricotta cheese
1 cup cottage cheese
1 package frozen spinach, thawed, squeezed dry, chopped
1 egg
1/8 teaspoon nutmeg
1/2 teaspoon dried oregano
2 tablespoons fresh basil, chopped
1/8 teaspoon black pepper
12 lasagna noodles, cooked
3 1/2 cups chicken, 
cooked and chopped  
12 mushrooms, sliced
1 jar marinara sauce
1/2 cup crumbled feta cheese
1 bag Italian shredded cheese
fresh parsley

Preheat oven to 375.

In a medium bowl, combine ricotta, cottage cheese, spinach and egg, nutmeg, basil, oregano and black pepper.  Put aside.

Spray a 9×13 inch baking pan with cooking spray. 

Spoon 1/2 cup of sauce over bottom of pan.  Arrange 4 lasagna noodles over sauce.  Top noodles with another 1 cup of sauce, followed by 1/3 of the chicken, a sprinkle of the feta, a sprinkle of mushrooms, and 1/3 of the mozzarella.  Arrange 4 more lasagna noodles, followed by 1 cup of sauce, 1/3 of the chicken, all of the ricotta/spinach mixture, a sprinkle of the feta, and 1/3 of the mozzarella.  Repeat layering with 3 or 4 more noodles, sauce, chicken, feta, mushrooms and mozzarella.  Sprinkle with parsley over the top.

Cheesed and ready for the oven
Cover loosely with foil and bake at 375 degrees for 40 minutes.  Remove foil and bake for 5 more minutes.  Let stand 10 minutes.
