Easter PLUS Two Easy & Delicious Leftover Ham Recipes

Easter has never been a big holiday for me. It usually falls around my birthday, which used to be my second favourite holiday next to Christmas. I say used to because I have a hard time with my birthday now. It feels weird and sad to not celebrate the day of my birth with the woman that birthed me. I don’t know why, but I find my birthday even harder than Mother’s Day usually. But, I was talking about Easter. Easter has this big buildup but is over so quickly! Last year we still had a ton of Halloween candy so the Easter Bunny brought loonies and toonies instead of chocolate eggs but this year, HBear worked on Halloween and they “shared” SBean’s which means, for the first time ever… We don’t have Halloween candy in the house! So, the Easter Bunny brought the Kids, tons of chocolate Easter eggs and those bunny gummy candies that Mommy and Daddy seem to like, that Easter bunny knows what he is doing!

I hope everybody enjoyed their Easter and had a great long weekend! This week I want to share 2 fantastic recipes that we made after our Easter ham! I would say that’s the problem with ham, but really, that’s the gift of ham lol, leftovers for days! We froze some ham to pull out for future quiches, and made 2 new recipes that we absolutely loved!

We made Ham, Egg, and Cheese Pockets! I know that sounds hard, but this is a ridiculously simple recipe using leftover ham and a tube of crescent rolls! Winner, winner, Easter, leftover dinner!

We also used the hambone to make a super flavourful Leftover Hambone Soup! This is basically the comfort of a chicken noodle soup bowl using a different protein and of course, no noodles lol but it’s just comfort in a bowl. It’s so familiar, so flavourful, and perfect to enjoy on a cool spring day!

Ham Egg & Cheese Pockets

Ingredients

  • 1 tablespoon olive oil

  • 4 large eggs, lightly beaten

  • 1 8-ounce tube crescent rolls

  • 1 cup thinly sliced ham

  • 1 cup cheddar cheese, shredded

  • salt and pepper, to taste

Directions

  • Preheat oven to 375 degrees F. Line a baking sheet with parchment paper or a silicone baking mat; set aside.

  • Heat oil in large skillet over medium high heat. Add eggs whisking, until they just begin to set; season with salt and pepper, to taste. Continue cooking until thickened and scramble, about 3-5 minutes; set aside.

  • Remove rolls from the can, separating them into 4 rectangles, 2 triangles each. Press each rectangle to form a 6x4-inch rectangle, firmly pressing perforations to seal.

  • Top half of each rectangle with eggs, ham and cheese. Fold dough from the top over the filling, pressing the edges to seal.

  • Place onto the prepared baking sheet and bake until golden brown, about 12-13 minutes.

    Leftover Hambone Soup

    Ingredients

    • 1 leftover hambone

    • 1 tablespoon olive oil

    • 3 cloves garlic, minced

    • 1 onion, diced

    • 2 carrots, peeled and diced

    • 1 potato, peeled and diced

    • 1 can white kidney beans, drained and rinsed

    • 1 can corn, drained

    • 3/4 teaspoon fresh thyme leaves

    • 2 bay leaves

    • salt and pepper, to taste

    • 2 cups leftover diced ham

    Directions

    • Place leftover hambone in a large Dutch oven and add enough water to cover the bone halfway, about 6-7 cups. Bring to a boil; reduce heat and simmer until very fragrant, about 30 minutes to 1 hour; set aside ham stock and discard hambone.

    • Heat oil in the Dutch oven over medium heat. Add garlic, onion, carrots and potato. Cook, stirring occasionally, until onions have become translucent, about 2-3 minutes.

    • Stir in ham stock, beans, corn, thyme and bay leaves; season with salt and pepper, to taste.

    • Bring to a boil; reduce heat and simmer until potatoes are tender, about 10-12 minutes. Stir in ham until heated through, about 1-2 minutes.

      Spring Break is officially over! The Kids go back to school tomorrow and while it wasn’t a crazy exciting two weeks, it was good. This week I continued my journey of dental work! This was a small filling so we didn’t use freezing and it really helped with my control issues lol unfortunately, it still left me drained for a few days afterwards. SBean had her G6Besty over for a sleepover and they found a “recipe” to make Boba using melted Starbursts. Of course it didn’t work lol but they had fun trying! HBear had songwriting camp this week! Every day she was hanging out with artistic and musical friends! Her BBesty got back from Disneyland and slept over to give them a chance to catch up and bake some Easter sugar cookies together! Ninja finished the fencing and then Ninja, my Dad and I worked our butts off taking a part our composite decking to replace some rotted footers or something like that lol I didn’t realize how much I did until I couldn’t move for the next day and a half! LOL I received my official Ultimate Book Nerd, 2023 T-shirt from the library for finishing all the categories of last years challenge! On Saturday HBear had the opportunity to play at the Dream Café with her songwriting group, The Faces! HBear had two solos, a trio, a few group songs, and accompanied a few songs on the drums plus took a turn as MC. It was wonderful to see how creative the Kids can be! Some of their lyrics broke my heart, but I’m so proud of all of them for their courage!

      Easter! We did the hunt and opened our baskets and then met my Dad, Ninja’s parents at the Lakeside for a delicious Easter brunch! The Kids finished Easter Sunday, with a date at the movies to see the latest Kung Fu Panda! We finished off Spring Break AND Easter with a family dinner at my Sis and BIL’s! They just got home from spring break in Mexico and still managed to host a fabulous dinner with chocolate treats, crafts, homemade bagels, AND my favourite ham! Happy Easter to all of you!
