Last week something traumatic happened to me. I had to go to the dentist.

I know… I know.

In my defense, I am petrified of the dentist and we are small business owners. When you don’t have dental coverage and you are terrified of the dentist, you become an amazing toothbrushes and daily flosser. With that being said, I haven’t seen a dentist since right after HBear was born. Soooo 15 years give or take. Ugh.

Lately, I’ve been having trouble with my mouth. You see, the left side of my face feels numb sometimes and when it does, I bite my tongue and my lip while chewing my food. The skin of my lip grows over slower because of my immune system and saliva gets caught underneath it, which turns into a big painful sore on the inside of my lip! Also, possibly because of the medication I’m on or possibly because there are so many nerves in mouths, my teeth have begun to hurt. Mouth pain is no joke. Usually, I cannot pinpoint my pain because it’s just, well,  everywhere Lol. So when there is a pain that is out paining the normal pain… That’s bad. It’s also bad because then I know that that pain is out ranking everything else but I don’t know how bad. It could be really bad and I just can’t tell because my regular pain might be dulling it. Do you know what I mean? Lol.

So, anyways Ninja made me an appointment with his dentist for later this month. Fortunately, I guess lol they had an opening last week! It was terrifying! I don’t actually remember the drive there or Ninja pulling me through the door LOL!! But I did it. They were wonderful! They took over 2 hours patiently cleaning my teeth, doing X-rays and assuring me that my mouth was in great shape, despite all the pain.

I have 2 little cavities. Goes to show what good dental hygiene can do! I also have 2 previous fillings that have fallen out and need to be replaced. They scheduled me for three more appointments so that we can go slowly. Today was the first one! Yikes! I am in a ton of pain from the needles and the pressure but I DID IT! Granted, HBear had a check up too so I had to be brave for her. It is much easier to conquer your fears when you have your first born looking up at you for guidance or at least laughing at you for being a big baby LOL. 1 down 3 to go!

Easter is right around the corner! I know it seems soon… Because it is lol it’s an early Easter this year! We are lucky in the fact that we live around family, we all take turns hosting holiday meals. We take Thanksgiving, Ninjas’s parents, take Christmas, and my Sis and BIL take Easter! However, just because we don’t have to make an Easter dinner doesn’t mean we didn’t! The Kids love ham. Who am I kidding, we all love ham! My father-in-law makes the Kid’s favourite ham and my brother-in-law makes my favourite ham, but I am always eager to try a new recipe! This dinner was so good! If we were hosting Easter, this would have worked perfectly. The bourbon ham was juicy and flavourful! The potatoes were perfect! This is the potato dish you want to use when you have company over, low amount of work with a high reward! And the carrots? Done in under 10 minutes and absolutely delicious! We halved the carrot recipe for just the 4 of us but we sent a big plate down to my Dad, ate tons of leftovers and made a few great new recipes, so keep an eye out for those coming soon!

Bourbon Glazed Ham

Ingredients

  • 8 – 10 lb bone-in ham (shank or butt end)

  • 1/2 cup maple syrup

  • 1/2 cup dark brown sugar

  • 1/3 cup bourbon

  • 2 teaspoons Worcestershire sauce

  • 2 teaspoons Dijon mustard

  • 1/2 teaspoon black pepper

  • 1/4 teaspoon ground cloves

  • 3 tablespoons butter, diced

Directions

  • Remove your ham from the fridge 2 hours before cooking. Using a sharp knife, score a 1" diamond pattern into the ham 1/4" deep.

  • Preheat an oven to 350 F. Pour 2 cups of water into the bottom of a roasting pan with the rack set in the pan.

  • Place the ham, cut side down, in the rack and loosely cover with foil. Roast for 45 minutes.

  • While the ham roasts, combine all the remaining ingredients except for the butter, in a small saucepan. Bring to a simmer while whisking to combine. Simmer for 5 minutes, then remove from the heat. Whisk in the butter until the sauce is glossy and set aside.

  • Remove the ham from the oven and increase the oven temperature to 400 F. Brush the ham liberally all over with 1/4 of the glaze. Return to the oven for 15 minutes. Cook the ham for 60-75 minutes, brushing with more glaze every 15 minutes. Once the ham has reached an internal temperature of 150 F, remove from the oven.

  • Let the ham rest for 30 minutes before slicing.

    Roasted Garlic & Caramelized Onion Potatoes Gratin Dauphinoise

    Ingredients

    • 3 lbs. Yukon Gold Potatoes, thinly sliced

    • 1 bulb garlic

    • 2 yellow onions

    • 2-3 tablespoons olive oil

    • 1 teaspoon of sugar

    • 1 sprig fresh thyme

    • 2 bay leaves

    • 1 cup Asiago cheese, divided

    • 1 cup heavy cream

    • ½ cup hot water

    Directions

    • Pre-heat the oven to 350 °F.

    • Trim the head off of a bulb of garlic, so that the cloves are exposed (just turn the garlic on it’s side and remove the loose outer paper and cut the entire head by about ⅛″).

    • Drizzle a little olive oil over the exposed garlic cloves.

    • Wrap the garlic in foil and bake in the oven for 45-60 minutes checking it every so often. Squeeze out the roasted garlic and set aside.

    • Heat 2-3 tablespoons oil in a large skillet over medium heat. Add the onions and stir. Season with salt and pepper. Turn the heat to low and watch to make sure they are sizzling but not cooking too fast.

    • Add 1 teaspoon of sugar to the onions. Stir onions every 10 minutes or so to prevent burning. It will take up to an 1 hour to caramelize.

    • Layer the potatoes in an oven proof pan on the stove. Add the roasted garlic, onions, thyme, bay leaves, ½ cup Asiago, heavy cream, salt, and pepper.

    • Add in hot water and simmer on the stove on medium heat for about 5 minutes, until potatoes begin to get tender.

    • Sprinkle in the remaining Asiago cheese and bake in the oven, uncovered for 15-20 minutes, or until potatoes are golden and tender.

      Honey Mustard & Rosemary Glazed Carrots

      Ingredients

      • 6-8 carrots, cut in half lengthwise 

      • 2 tablespoon olive oil

      • 2 tablespoons honey

      • 1 tablespoons Dijon mustard

      • 1 tablespoons rosemary, finely chopped

      • 2 cloves garlic, minced

      • ½ teaspoon salt

      • ½ teaspoon black pepper

      Directions

      • Preheat airfryer to 400F

      • Mix oil, garlic, rosemary, mustard, honey, salt and pepper. Pour over carrots. Mix to coat evenly and spread in a single layer on air fryer baking sheet.

      • Place in the air fryer and bake for 8-10 minutes, turning once, until the carrots are tender and  golden.

        While I was recuperating from my teeth cleaning appointment lol HBear was helping the school host the band festival and also performing. By Wednesday I was feeling a bit better and made my monthly coffee date with my MMBesty. I spent time on the balcony reading with Oliver, I worked, HBear finished up Penticton curling season and Ninja and I went Easter shopping! Ninja took the Kids to the new restaurant Katsu Heaven to kick off Spring BReak and then we went Geocaching and Adventure Labbing through Osoyoos. The weather was beautiful and it was great to see the spring blooms.
