HELLO??? IS THIS THING ON???
Seriously, do I talk just to hear myself? I think so, because nobody is listening to me. Some days I think Ninja and I speak different languages. HBear just doesn’t listen AT ALL and SBean is probably ignoring me but I just don’t know it lol.
What is a Mommy to do?
*SIGH*

I don’t know what is up with HBear. She is asserting her independence I guess. She is pokey and recalcitrant. OMG I love that word!!! It actually made my day just to get to say it lol. Anyways, she is really pushing it.
The other day I told her if I had to ask her again she would feel my hand on her backside. I pretty much thought the threat would do it… it didn’t. So, I spun her around and CLAP! It wasn’t hard but it was a good thwump!
Now, to clarify, I don’t believe you should teach your kids to hit. But I firmly believe in discipline. I got spanked and I thought about talking back when the threat was out there. OK so I still said what I was thinking LOL but I never said I was the sharpest tool in the box J
If you make a threat you MUST follow through. You know what she did?
She started bawling and said “Mommy I need a hug!!!!” Of course I bent down and scooped her up because I am obviously the meanest Mommy in the whole world!
“Mommy, next time can you spank me softer… that hurt.”
OMG!

Today was swimming. After swimming, Grandma and Grandpa took HBear to the Theater to see a puppet show of Peter and the Wolf. It is a part of the Children’s Showcase here in town. She was so excited!

Have you been watching? Our TV is on the Olympics all day and night! We made a cozy bed in the front room to watch the Opening Ceremonies. HBear wanted to see the torch soooo bad. She saw it in 2010 but doesn’t remember lol.

She fell asleep before the lighting of the cauldron L But she has been enjoying the games otherwise. Today she said she wants to be a luger when she grows up! Of course 2 weeks ago it was a swimmer and last week she wanted to be a skipper (they had jump rope for heart lol).

The Olympics ties into a project we are working on for school. HBear is learning about Multiculturalism. Today we finished her doll for school. The object is to represent your heritage using a paperdoll. 

A grandpa of the twins in HBear’s class made us all cutouts 🙂

I wanted to make it all about Canada. That is where she is from. That is where our family has been from for a long time. BUT… for the sake of learning about different cultures we represented all the countries our families came from:
England, Scotland, Ukraine, Greece, Germany, AND Canada!


Tonight we are having BBQ roast beef, Yorkshire pudding, Asparagus and Scalloped Potatoes… YUMMY!

Ninja always does the beef. He makes a herb, garlic and salt rub. Uses oil and coats the roast. Then he BBQ’s it. It is tender and bursting with flavor, and is easy J

Scalloped Potato Gratin
2 lbs. potatoes, peeled
2 tablespoons unsalted butter
1 onion, chopped 
2 cloves garlic, pressed
3 tablespoons flour
2 cups milk
1 teaspoon dry mustard
½ teaspoon paprika
1/2 teaspoon salt
2 cups Tex Mex cheese, shredded & divided
1 tablespoon chopped fresh parsley
Preheat oven to 350.
Cut potatoes into 1/4-inch thick slices and set aside.

In a saucepan over medium heat, melt butter. Add garlic and onion and cook for 5 minutes, stirring occasionally.

Whisk in flour and cook for 1 minute.


Whisk in milk, dry mustard, paprika and salt.

Bring to a boil over high heat, stirring occasionally. Reduce heat and simmer for 3 minutes or until thickened, stirring frequently.
Arrange half of potato slices in a lightly greased casserole dish.

Spread half of milk mixture over potatoes and top with 1 cup cheese. Repeat layering with remaining potatoes, milk mixture and 1 cup cheese.

Bake for 1 hour, or until sauce is bubbly and potatoes are tender. Sprinkle with fresh parsley and a little paprika.


Maple Dijon Asparagus
1 small bunch of asparagus, wooden stems removed
2 teaspoons real maple syrup
2 teaspoons olive oil
2 teaspoons Dijon mustard
1 1/4 teaspoons red wine vinegar
1 clove garlic, pressed
1 tablespoon of oil

Bring a large pot of salted water to boil.

Add the asparagus and cook for 2-3 minutes or until crisp-tender. Remove from the water and plunge into ice water immediately.
Combine the maple syrup, olive oil, Dijon mustard, red wine vinegar, and minced garlic together; mix well.
Heat a skillet over medium heat and add the oil.
Add the asparagus spears to the skillet along with the maple syrup mixture.
Toss to coat evenly and cook until heated through, about 1 minute. 

On another note, did you see him? My nephew has been on the news across Canada for his AMAZING work collecting money for The Stollery Children’s Hospital Foundation, The Ronald McDonald House and the Make a Wish Foundation. 
He got ambulanced back to the hospital today… his pain is Heartbreaking.
Congrats Aaron on making a difference! You should feel very proud of yourself 🙂
