1 Pot Baked Pork Chops with Scalloped Potatoes


Today is my Besty’s… 29th birthday… yeah…. 29th J
So HAPPY BIRTHDAY to my partner in crime, my best friend for the past 30 years, ooops I mean 29 J, my girl soulmate. I love you and wish I could be there to help you celebrate! 

Yeah right, celebrate on a Tuesday haha!

What I mean to say is I hope you lock yourself in your bathroom, take a bubblebath and let your awesome hubby look after for the girls for an hour and call it a day! LOL Love you Babe!

We are painting the house.

It is a pain.

Dad and Ninja started yesterday on the cutting and today they are doing the ceilings. That means SBean has to be out of the house and I don’t get much cleaning or cooking done.

In the Hospice I asked my Mom what I should do to help with the grieving process. She told me… paint the house.
We had been talking about it for months and had color schemes picked out. She said it would help us if things started looking different.
I’m not so sure now. I love painting. Mom and I used to paint the house together all the time. It is true lol. Even when I moved out I would come home to help her change things up. We were a pretty awesome team. We did the whole house, multiple times J We plastered, crackled, stenciled, faux leathered, you name it.
The day Mom left to move out to BC (Dad had left earlier), my sister and I went out and bought Venetian plaster and did our livingroom. When Mom went into the hospital for the 1st time, I painted my craft closet. When I am sad, I paint. When I was younger I used to dye my hair lol I guess it is the change that I seek.
This time it is bittersweet. I want to paint. I want to change it up, believe me, but I want to do it with her. I have so many mixed feelings about this. But, it is happening so I guess I will just do it.
So while they painted SBean and I went out!
We hit a car wash first, she did NOT enjoy it lol

Then we went shopping at the Science Explore store! I love that store lol
Then we went for a walk and to the park.

It was pretty nice out so we played on the beach for a while,

Then we went to Timmy’s for some soup…

It was crazy busy!!! So we left lol and went to McDonalds BOO!
SBean ate like she hadn’t been fed in years LOL She had a grilled cheese, her entire yogurt and all her apple slices!

Needless to say, she hit the crib hard when we got home!
Tonight I am making pork chops J
1 Pot Baked Pork Chops with Scalloped Potatoes
Adapted from Taste of Home
6 tablespoons margarine
6 tablespoons flour
1 1/2 teaspoons salt
1/4 teaspoon pepper
1 1/2 teaspoons garlic powder
2 ½ cups chicken broth
4 pork chops
2 tablespoons oil
4 potatoes, thinly sliced and peeled
1 medium onion, sliced
4 sprigs rosemary, chopped
1 teaspoon paprika
1 tablespoon parsley, minced
¼ cup Parmesan cheese, grated
Preheat oven to 350.
In a large skillet, brown pork chops in oil; sprinkle with additional salt and pepper and garlic powder.

Place pork chops in a greased 13-in. x 9-in. baking dish. (I used 2 smaller baking dishes)

In the same skillet, melt butter; stir in the flour, salt and pepper until smooth.

Add broth. Bring to a boil; cook and stir for 1 minute or until thickened.

Remove from the heat and set aside.
Layer potatoes and onions over the chops sprinkle with rosemary.

Pour broth mixture over layers.

Cover and bake for 1 hour; uncover and bake 30 minutes longer or until meat and potatoes are tender.
In the last 10 minutes of baking, sprinkle with paprika, Parm and parsley. 

I will make this again. It was so easy! The gravy is amazing… it is kind of old school but super yummy JIt reminds me of my Mom’s baked pork chops with cream of mushroom soup… but not gross lol
While it was cooking HBear and I played Disney Yahtzee. She was totally dressed for the occasion, in her tiara, flamenco dress, and pink sparkle shoes lol

While SBean stole Daddy’s hat lol
