Crockpot Pulled Pork Sandwiches

Ok… so I know it seems like Spring Break was a rough one for us.
It was.
However, we like to make the most of shitty situations and we managed to fit in a few smiles, a little fun and a whole lotta family lovin’!

We went to the park with our good friends…

We played in the yard…

We had an amazing St Patty’s Day…

We cuddled…

We walked on the beach with family…

We had some good eats…

Movie nights…

Music classes…

We baked…

And got baked by the sun J

We flew a kite…

Spent time with Auntie Carrie and cousin JJ…

Had yummy dinners and Grandma and Grandpa’s…

Had yummy dinners with Best friends…

Helped Papa garden…

Had super fun at The EnergyPlex with good friends…

Visited Nana and GG…

And baked a complete FAIL snickerdoodle cake lol…

All in all we made some great memories!

For our last day of spring break Grandma and Grandpa came over for dinner and we had pulled pork sandwiches. They were awesome. This is a sure thing crockpot recipe that I have spent a while now getting just right. Granted I always switch things up but the big stuff never changes and it ALWAYS tastes great.

Pulled Pork Sandwiches
2 onions, sliced thin
¼ cup brown sugar
2 tablespoon paprika
2 teaspoon salt
½ teaspoon pepper
1 (4-6 lb) boneless pork butt or shoulder
¾ cup cider vinegar
2 tablespoons Worcestershire sauce
1 ½ teaspoons crushed red pepper flakes
½ teaspoon dry mustard
½ teaspoon garlic powder
¼ teaspoon cayenne pepper
1/2 cup V8 or ketchup
1/4 cup tomato paste
2 tablespoons mustard
Buns
Coleslaw
Mix all the ingredients in a bowl, except the pork roast.

Put the roast on top of the onions in your crock pot and pour the sauce over top.

Turn on and let cook on low for the day. (6-8 hours)
Last half an hour take the roast out and shred it with 2 forks. Put the shredded pork back in the crockpot and mix it all up with the sauce.
Pile the pork on top of a fresh bun and top it with coleslaw.


Tomorrow we leave for Calgary/Edmonton. I am looking forward to seeing all the family but dreading this trip too. I don’t want to drive through the passes. I don’t want snow, today I wore sandals and the girls were outside playing in the sun!

HBear’s Besty ready for summer!

I don’t want to cry.
It is what it is.
My nephew wanted everyone to donate lego to the Stollery. I am amazed by the generosity of people. HBear’s besty’s Mom and Nana bought lego for us to take to the Celebration of Life for donation. How amazing is that?  Thank you to everyone who has supported our family through this difficult time. I have much love for you all.
Speaking of appreciation. My BIL is an amazing man. He has lost his son after years of battling and never gets the “hugs”. He is a very private person and has let his partner take the lead when it has come to getting Aaron’s message out there. I found a poem that really exemplifies what a strong man he is and I wanted to share it with you.
