Banana Muffins and Spaghetti

 
If your kids are giving you a headache, follow the directions on the aspirin bottle, especially the part that says “keep away from children.”

OK so here’s the thing… how many people HATE swimming registration? 
 
OMG what a PAIN in the ass!!!!!!
 
So here is my story…
 
HBear and SBean have late birthdays. Their fault? NO 
 
Apparently Ninja and I only have sex on Valentine’s day LOL 
 
So this summer HBear finally finished her preschool swimming lessons and passed whale 🙂 Yay! Now she can go onto swim kids 3 or … not. Apparently she has to be 6 to register. She turns 6 on Dec 1, swim kids 3 starts October and ends in the middle of November. 
 
You get what I’m saying?
 
So we all know how much registering SUCKS!!! Add this and registering for community activities turned into a nightmare parallel to registering for University!! 
 
I called the community center and explained the situation… to no avail. Please put me through to someone higher up. I explained again, and the lady in charge finally agreed to put a note on our digital file that allows HBear to join the class even though she doesn’t turn 6 for a whole 2 weeks after the class! Oh the Horror.
 
So I said “So I can register online at midnight and all will be good?”
 
No. You have to come in and register. 
 
Listen lady, do you think I am going to get my daughter into a swim class tomorrow????? Are you freaking kidding me? If I am not on that site at exactly midnight, before the site crashes from everyone trying to do the same thing, there is NO WAY I will get her in and this whole afternoon of transferring to higher ups and planning will be for not! 
 
No way!
 
Even she agreed that that would be impossible lol so she changed her birthday. LOL That’s right as soon as I asked her if my daughter was being punished for having a late birthday she caved. Am I a bully or an advocate? LOL I honestly didn’t get mean I just got her to see reason. HBear will not be any more ready 2 weeks after the class than she is already 🙂
 
So I waited up until midnight and got the girls in their programs. 🙂 No sweat BAHAHAHA

What the hell is wrong with SBean??? For all those that know her you are chuckling right now, but I am here to say… I’m not.
 
Seriously, why the hell does she keep taking off her diaper? She won’t go on the potty, oh no, but she WILL take off her diaper during nap time!!! Frustrating! 
 
AND she does this thing where she yells “I’M DONE!!!” as soon as she is finished sitting, eating, sleeping, well… pretty much as soon as she is done anything LOL. 
 
The one that really gets me is when she repeatedly yells “I’M DONE!!!” until you let her get down from the table?!?!?! What is a Mommy supposed to do? I don’t think we will ever go to a restaurant again 🙁 (side note: I HATE the word restaurant!!! I spell it wrong every time! Every time!) 
 
I am super serious though. She has the WORST table manners EVER! I realize I am using a lot of caps but you need to see her, jamming food in her face with both hands. When you say “slow down” she laughs and slams her hands into her hair and drags the food all over her head… and then yells I’M DONE! 
 
Help. LOL
 
OK so this is the last of the catch up picture posts 🙂 We have had so many visitors… 1 of the MANY perks of living in a beautiful resort town, I’m not being sarcastic, I love the family visits! Ninja’s brother’s partner’s parents are in town (whoa that was a mouthful lol) they brought their grandkids and our niece! So HBear has had a wonderful visit with them this past week.

Having a chat with my SIL’s parents

Ninja got off early the other day and we took the girls to the waterpark for a quick spray before dinner.

 

 

 

 

 

 

 

HBear finished her week of tennis lessons and LOVED it! She told me she is done with sports… except tennis and golf LOL Jeeze I hope she either becomes a Dr or marries rich! The other day she told me “Mommy I don’t want to be a wife or a Mommy like you, I just want to be a rockstar, that’s all.” LOL Dream big Baby dream big 🙂

 

Of course I went up to give Mom a manicure before visitors come LOL she would hate if her marker was dirty or grass was getting a bit too long on her edges when people come to visit LOL

 

On Saturday Ninja, my SIL and I met up with a few of my highschool buddies! One of them lives here and the other was in from Vancouver for the weekend with his beautiful girlfriend 🙂 It was a great night of laughs, stories and salsa dancing!

Auntie took the girls for pedicures!

Of course JQ waited patiently for his lovely cousins 🙂

 

This weekend my Uncle and Aunt stopped by on their way back from a spontaneous trip down the coast. San Francisco and Seattle and Seaside oh my! They came over to my in-laws for an ah-mazing turkey dinner! It was awesome to see them!

 

 

 

 


This week I have felt that thing… that feeling of autumn looming on the horizon. Even though it doesn’t look like school will be starting here in BC anytime soon, the season is still going to change. On a cool afternoon, OK so it was still +25, but it was chilly so back off LOL, we made muffins and a warm comforting spaghetti! 

Banana Muffins
Adapted from Balancing Beauty & Bedlam

1/2 cup melted butter

3/4 cup sugar
2 eggs 
2 bananas (mashed)
2 1/3 cups flour sifted
2 1/2 teaspoon baking powder
1/2 teaspoon ground nutmeg
1/2 tsp. cinnamon
1/2 teaspoon salt
3/4 cup milk
1/2 cup blueberries
1/2 cup chocolate chips
1 tablespoon cinnamon sugar
Cream butter and sugar. Mix well.

 

Add two eggs. Beat well.
Add mashed bananas.

 

Mix together flour, baking powder, nutmeg and salt.

 

Add flour mixture to egg/sugar mixture, alternating with adding the milk.

 

Add you blueberries and chocolate chips to your muffin liners. OR if your kids aren’t picky fold in your add-ins (either 1 cup of blueberries or 1 cup of chocolate chips or 1/2 cup of both)
 
Divide batter evenly between 18 muffin tins. Top with cinnamon  sugar.

 

Bake at 350 ° for 25 minutes.

 

Cool slightly after removing from tin. 

 

 

Spaghetti
 
1.5 pounds ground beef
1 tablespoon olive oil
1 onion, diced
1 bell pepper, seeded & diced
3 cloves garlic, pressed
1/3 cup white wine
1 jar tomato sauce
1 jar Pasta Sauce
1 teaspoon oregano
1 teaspoon thyme
1 teaspoon basil
2 whole bay leaves
2 tablespoons brown sugar
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/2 teaspoon chili flakes
1 tablespoons parsley
1/4 cup Parmesan cheese
 
Garnish: Fresh basil (torn), Fresh grated Parm.
In a large pot over medium-high heat, brown the ground beef until totally browned. Remove meat from pot with a slotted spoon and put into a bowl. Set aside.

 

Discard any grease in pot, but do not clean the pot. Drizzle in olive oil. When it is heated, throw in the diced onion and diced bell pepper. Stir it around and then add the garlic. Stir and cook for an additional minute.

 

Pour in the wine and allow it to bubble up and reduce. Add tomato sauce and pasta sauce. Stir to combine, then add oregano, thyme, sugar, salt, bay leaves, and chili flakes.
Stir, then add cooked ground beef and stir to combine. Place the lid on the pot and allow to simmer for 1 hour, stirring occasionally.
After an hour, add the parsley and grated Parmesan. Stir to combine, then put the lid back on and allow it to simmer for another 30 minutes or so. Discard bay leaves before serving.
 

Make noodles according to the box. After you drain the noodles add a bit of oil to keep them from sticking.


Serve with sauce and top with fresh basil and grated Parmesan 🙂
