Coming from a place that has snow for 75% of the year (I wish I was joking) I always get a bit sad at this time of the year. I miss snow. I miss white Christmases.
I know, I know, Whaaaaaa lol
I remember the cold. I remember my nostrils freezing and it hurting to breathe outside. I remember skating at the rinks and using hot pockets and the crack of the FREEZING ice as the sound boomed like thunder throughout the cold air.
But I just want to see snow!
The other day I was driving the girls to their Sparks Christmas party and the girls were singing Feliz Navidad at the top of their lungs… as it poured rain on us.
Like tropical storm, monsoon raining.
The other day SBean and I took a bike ride. 2 weeks into December we are bike riding!?!?! WTF????
So today we went on a hunt… a hunt for SNOW! It took a 30 minute drive up the mountain but we found it!
We wanted to go skating but the ice wasn’t frozen yet. Even up the mountain! LOL Well that’s ok because I got my fill… for now 🙂
Dad got invited to a Christmas open house yesterday 🙂 HBear and I were having a craft/baking day and Ninja took SBean for a walk and a Grandma & Grandpa visit. Dad needed to bring an appetizer so I suggested something easy but tasty 🙂
Of course I explained that he needed to take a hostess gift… jeeze men! lol OK so most people don’t take hostess gifts, but I think they are nice so HBear and I helped him out 🙂
The Scent of Christmas

Cardamom pods’s
Candied ginger
Whole nutmeg
Allspice berries
Juniper berries
Dehydrated cranberries

Layer all the ingredients in a nice jar or a mason jar.
Attach a tag that reads,
Cranberry Brie Bites
Adapted from Two Twenty One

1 round of brie
2 green onions, thinly sliced
1/2 cup cranberry sauce (sauce of your choice)
Thaw your puff pastry as directed on the packaging. Cut each sheet into 12 squares.
Preheat your oven to 375
Place the squares into a lightly greased mini muffin tin. HBear thought they looked like Santa’s Sack LOL
Add brie. Fill your puff “sacks” nice and full!
Sprinkle green onions on top.
Spoon cranberry sauce on top. Again, fill ‘em up.
Bake for 10-12 minutes or until golden brown.
Serve at room temperature.
Apparently the Hostess loved her thoughtful gift and they Bites were a BIG hit!
Hello??? Of course they were!
They were they were stuffed with ooey gooey yummy Brie!
How can you go wrong? 🙂
