Of course while we were driving I saw the lake and the dozens of swans beautifully gliding through the glassy water. We HAD to stop!!! We wrapped SBean up in Ninja’s jacket and took a hike to the lake side. By the time we got there the swans had crossed the lake and were on the other side 🙁
I went shopping on Boxing Day 🙂
Ok so here’s the story…
I got a $100 GC at the Bay for Christmas. I also got 2 woks. So I was going to take 1 back to the Bay and buy Ninja and I new pillows. We NEED new pillows, my neck has been killing me on cheap pillows!
I picked out a “few” things to try on 🙂
When I went to the register he said “ok that will be $255 please.”
AHHHHHHHHH. I put $100 on GC and the rest on my credit card.
I started feeling buyers remorse right away.
So I went out to the van and got the wok and the sweater I wasn’t sure about and went back inside to return them both and hopefully justify spending that much the day after Christmas.
OK here is a GC with the returned amount.
No No No I need the balance put onto my credit card!

I also got a GC for Winners so I decided to go shop some more to feel better 🙂
At Winners I found a great pair of jeans. I spent the whole GC and spent $11 out of my pocket.
I then went BACK to the Bay for the 3rd time.
I walked in and went up to the register… remember it IS Boxing Day lol. I said Hi I just bought these jeans and I would like to return them.
I aslo just bought these amazing pillows and would like to return them too.
After the lady returned the items I said, OK now I would like to rebuy these wonderful pillows using this GC 🙂
The people in line were glaring at me!!
LOL So funny!!!
At the end of it all I only spent $9 out of my pocket!
So I went to Value Village to reward myself 🙂
When I got home I put all my new stuff in the laundry and had a drink 🙂
I am so crazy.
The girls tried out their new interactive PJ’s!
These are the beautiful roses my FIL gave me on Christmas Eve for cooking a yummy dinner 🙂

AND while there was snow… HBear went sledding! That’s right after that crazy snowfall last week… we no longer have enough snow to go sledding?!?!?!

Yesterday I got to try out my new wok!!! Exciting! This was a fabulous stirfry that is easy and uses ingredients you probably already have!

Honey Pork Stir Fry
1 tablespoon
2 tablespoons cornstarch
Pour half over pork in a resealable plastic bag and marinate for at least 1 hour and up to 24.
Add honey, hoisin, and brown sugar to remaining marinade.
When ready to prepare, heat oil in a wok or skillet over medium/high heat until shiny. Toss in pork and cook, 3 minutes per side. Remove pork and cover and let rest while preparing the vegetables.
Toss in the remaining honey mixture, garlic, broccoli, peppers, and other desired vegetables and cook to desired doneness.
Take out about 2 tablespoons of sauce and mix with cornstarch (make a slurry). Mix it into the wok.
Add pork and mix together. Serve over rice, top with sesame seeds.
