Teriyaki Meatballs & Spinach Artichoke Dip and 1 Hour Breadsticks

 
Besides getting sick and getting snowed in, it was absolutely the best trip ever. I was with my best friends, I was with my family, and I was in the middle of the largest snowstorm in New York City.

So this past week we started off the New Year with a visit from my sister and SweetPea!

 
When they arrived on Saturday… Their flight was delayed. By the time they got in… I had my Chicken and Mushroom Asiago all ready 🙂


Due to the late time and the Canada Jr game lol Sis and I HAD to entertain ourselves…

Yeah those are Sephora Red nails!!!
The next day it snowed. Like REALLY snowed. 
 

 

 

 

 

 

 

 

 

 

 

 

 

After all that snow the girls had Hot Cocoa and pillows (marshmallows) 🙂

So, we own a snow clearing business in the winter and Ninja and Dad were up by 4:30am and got in for dinner… So there wasn’t much socializing that evening. 
 
The next day was HBear’s first day of school!!!!
 
But it was still snowing!!! It took my Sis and I 3 hours to dig out of the driveway!!!!

 

 

 

 

 

 

 

 

Obviously Ninja and Dad were up at 4:30am again and were home even later!! Dad and Sis had dinner reservations… Cancelled. We had gymnastics…. Cancelled. School… Cancelled. Wine, chocolate and Cards Against Humanity… Cancelled. Oh and Ninjas parents were supposed to fly home from Winnipeg but guess what? Their flight was… Cancelled and they got stuck in Calgary 🙁
 
Ok so during the night before their last full day of visit… SweetPea was up all night vomiting 🙁

 

 

I woke up to a poop load of pukey sheets in the laundry room sink. I got them rinsed, HBear to school, SBean to swim class and got home before Dad and Ninja, who were put shoveling AGAIN!!
 
When the guys got home Dad and Sis went for coffee and to buy SweetPea some slippers, the girls slept and Ninja and I did yoga because his back is KILLING him.

So after 2 more delays in Ninjas parents flight it was finally time to go get them. When Ninja got there around 5pm he found out the plane could not land and they were rerouted to Kelowna. We were making a delicious Prime Rib roast dinner for everyone so we ate very late and packaged them up some. I didn’t think after a looooong 2 day flight and a surprise bus trip, they would want to socialize very much.

I got HBear in the shower because it was so late and she did have school the next day… and Ninja opened the door with a nakey SBean?!?! 

She blew chunks from our bedroom, into the playpen we had set up for sicky SPea and allllllll the way down the hall.

Awesome. So I cleaned her up with the growing feeling of uneasiness in my belly.

After we got the kids down… finally, I layed down on the couch. I thought it was just for a minute but then my Sis curled up on the chair. We had planned a great night of Cards Against Humanity, chocolate cake and red wine until…

I ran to the bathroom and my Sister grabbed a BIG bowl!

We threw up ALL night!!!

I mean every hour I woke up and my body was first racked by heaving then by the worst chills ever and then the sweats!


In fact, it is now Friday and I am still not over this HORRIFIC stomach flu that my devil of a Niece left for me, she may smell like strawberries and cream but do not be deceived by those innocent big beautiful eyes and sweet scent. 

Oh no. Do not be decieved.

LOL

My sister said something the other day, actually she mentioned at least twice this past week.

“These girls were so unbelievable together. I can’t believe we live so far apart.”

She actually said this the same day as I talked to my WpgBesty. We talked about her kids, my kids… and I just can’t believe that the 3 women I always expected to to live near, raise my kids with… 

are all so far away.

This came on the same day my cousin and her husband, a good friend of mine from… wow, jr high and up lol, told me they were moving back to The Peg.

 

They miss their friends, family, parents.

If you would have told me 10 years ago that I would be raising my kids so far away from from my sister, my WpgBesty or my Mom I would have laughed in your face and said “Not a chance!”

My how things change. I love my life here. I love my new friends. 

I will ALWAYS miss my lifelong friends. I will ALWAYS miss my sister. I will ALWAYS miss my Mom.

Hell, I miss my brother, my school friends that I have reconnected with over Facebook in the past few years and my SIL. Every time she is here I think, damn! We would have fun if we lived closer together and so would the kids.

But you know what? We all need to forge our own paths. They don’t expect me to live somewhere just for them and I don’t expect it from them either.

We all go our own ways but our love will remain forever. 

And really if we lived close together… we would have missed all the fucking fun of this whole week 🙂 

See, everything happens for a reason, apparently this one is for a helluva good story 🙂

Ask my sister about the return trip including the delayed flight and the surprise bus ride to Kelowna all while fighting this Mother Effing Flu!!! 

Really you just gotta laugh.

These meatballs are the handsdown the BEST meatballs I have ever eaten. I actually do not enjoy meatballs but these, appy or for dinner are amazeballs 🙂


Teriyaki Meatballs

Adapted from Mom on Timeout

Makes 44 meatballs

Meatballs
1 1/2 lb lean ground beef
1 1/2 lb ground pork
2 egg + 2 egg yolk
3 garlic cloves, pressed
1 cup panko bread crumbs
1/3 cup Teriyaki sauce
1 can water chestnuts, diced 
5 green onions, sliced
1/2 tsp ground pepper
Toppings
1 cup Teriyaki sauce
1/4 cup sesame seeds
3 green onions, sliced
Preheat oven to 400.
Gently stir together meatball ingredients (using hands if necessary) and form 1 to 1 1/2 inch meatballs.

 

 

 

Place meatballs on prepared baking sheet.

 

Bake for 20 minutes or until meatballs are thoroughly cooked.
Toss meatballs in Teriyaki sauce. Sprinkle on additional green onions and sesame seeds.

This dip was super good too! I would half it next time as I ate dip for days! Poor me lol

Spinach Artichoke Dip 
Adapted from Yammies Noshery

1 can artichoke hearts, coarsely chopped
2 cups spinach, chopped
4 cloves of garlic, minced
1 cup onion, chopped
1 cup sour cream
8 oz. softened cream cheese
¼ cup milk
2 cup shredded mozzarella cheese (plus more for sprinkling on top)
1 cup grated asiago cheese
1 teaspoon garlic salt
1/2 teaspoon Italian seasoning
1/4 teaspoon pepper

 

Preheat the oven to 400ºF. Combine all the ingredients in the order listed and mix until well combined. 

 

 


Pour into a greased pie plate or casserole dish would also work.


Sprinkle more mozzarella on top if desired. 


Bake for about half an hour until until bubbly and golden (you can broil it at the end if the cheese isn’t toasty enough).

Who doesn’t want a recipe that makes awesome breadsticks in 1 hour?!?!?!?

These were so good! We cut them into Christmas shapes with cookie cutters 🙂

One Hour Breadsticks 
Adapted from What’s On Your Menu This Week?

3 c. flour
2 T. sugar
1/2 tsp. salt
1 1/2 c. warm water
1 T. instant yeast
Mix all ingredients for three minutes in mixer with dough hook, adding more flour if needed so the dough is workable and not too sticky. 

Let rest for 10 minutes.

Roll and cut into shapes then put on greased pan

 

 

Brush with oil, then sprinkle with salt and garlic powder. 
Let rest for 10 minutes. 

Bake for 15 – 20 minutes at 350 or until lightly browned.

The next day we realized there were still 2 pans in Fort Knox waiting to be baked. (I made 5 pans lol). Ninja rolled them out and made cheese sticks with the leftover maribara for a late night snack. 

To. Die. For.
