Puff Pastry Beef Pot Pies and Spring Break Journal

HBears tummy doesn’t feel so well.

 
For the past few nights she’s been coming out of bed quite late describing an upset, hurting, something happen in and her tummy feeling that is keeping her up all night.  Two nights ago I tried to trick her LOL keyword being tried. 
 
I said, “well Sweetie if your tummy is sore we have to try something different tomorrow. I think we should cut out all sugar.” 
 
“Why do we have to cut out sugar Mommy? Can I still have cereal for breakfast?”
 
No
 
“What about French toast or pancakes or oatmeal?”
 
Yes but no syrup or brown sugar. Don’t even start on lunch!
 
“Grilled cheese?” She asked hopefully
 
I didn’t even want to get in on carbs so I just said, yes you could have grilled cheese but no ketchup and no fruit because fruit has sugar. Even carrots have a lot of sugar so I think we will just have to stick with celery. Oh and for snacktime, I just laughed. 
 
She had the saddest eyes ever. She sat there for a while and thought about it and said “are you sure it’s the sugar?”
 
Well that is my theory or hypothesis. 
 
Ninja than chimed in that his hypothesis was that she has been having too much fun on spring break and maybe we have to cut out the fun.
 
“I want to make one too. What is a hypothesis?”
 
Ninja and I explained to her, well you know how Scientists ask questions? A hypothesis is what we believe the answer to be. Then you do an experiment to find out if you were right and then you can make a conclusion. 
 
She thought about it for a while and then said, “okay well I’m going to go to bed and I’m going to think about why my stomach is not feeling well and then tomorrow we will take away all sugar, all the fun, and whatever I think about and then we will find out what’s wrong with my tummy.”
 
Well that backfired.
 
The next day she came out of her bedroom and said “I think maybe I had too much to eat yesterday. Today I think I should cut down on how much food I eat and see if my tummy feels better when I lay down tonight.”  
 
Reasonable. For some reason she had forgotten all about cutting out sugar and fun 🙂
 
So last night she came out again just to tell us that her tummy felt better. Score!
 
An hour later she came out again to tell us that the feeling in her tummy was back. Unscore!
 
I asked, HBear are you feeling Nervous? Scared? Excited?
 
My Dad is taking her on an airplane tomorrow to Cochrane. They are going to spend a week with my Sis, BIL, and SweetPea. 
 
She quickly answered “no, NO! and sort of Kinda.” 
 
She was adamant that she is absolutely 100% not scared or nervous and she is sort of a kinda excited. She’s got that excited belly but she just wants to be able to hug and kiss Mommy, Daddy and SBean every night before bed. She is a very distressed by the fact that she won’t see us for “eight whole days” LOL
 
I get it. My tummy isn’t feeling very well either. She did have that one night of Spark Camp and she has slept at Grandma & Grandpa’s once or twice… oh and remember our honeymoon almost 5 years ago? Yeah, she stayed with my parents for the entire four days… But 8 WHOLE days?????? OMG I don’t think I can do this!
 
At the same time that my tummy was doing flips Ninja and I sat down with her and explained, 

“Look how many days of school there has been already. Over 100! Take 8 days of that and it’s just this itsy bitsy little blip of time. You get to see us for millions of days but you only get 8 days with Auntie, Uncle and SweetPea. You are going to have so much fun! You just got to realize how lucky you are to be spending half your spring break with us and half your spring break on vacation! Don’t think about missing us, think about having the most fun you can have and coming home and telling us all about it. And you can fill out your journal every day to help remind you what you did and you know you can always FaceTime us.” 


She seemed much better today. At her last art class she was telling all the other kids about her trip, that’s good, right?

These are some of the arts projects she made 🙂 I pick up all the pottery next Friday after they go into the kiln.

 

We started her spring break journal at the beginning of the two weeks. I printed all the journal pages from the website Teachers Pay Teachers.

To be honest I have a few concerns and have been texting my sister cryptic messages. The other day we facetimed to discuss my “list”. 
 
She was all like “what the hell does tooth fairy mean?”
 
Well HBear might lose a tooth or 2 while she is there and the tooth fairy leaves a certificate with her picture on it. I will send you the template from Smilebox, just add the picture you take of her. 
 
“Why would I take a picture and as if she doesn’t figure it out.” She scoffed. 
 
???????
 
What do you mean why would you take a picture? You take a picture because it’s a major milestone event!
 
Apparently some people think I may go a bit overboard in the holiday/celebration/milestone events. 
 
Bahahahahaha
 
There are 365 days of the year. The majority of them are just that… Days. I use the many absurd observances to add color to our lives. Perhaps use it as a way to try new food or teach the girls about other cultures and customs. 
 
On St. Patrick’s Day HBear asked her art teacher what she was having for dinner. The teacher looked at her and looked at me and said “I don’t know I haven’t even thought about lunch yet.”
 
You should’ve seen HBear’s face! Horrified. “But it’s St. Patrick’s Day??”
 
“Oh are you Irish?”
 
Total confusion across HBear’s face, “no, I’m Canadian”.
 
Lol. 
 
I personally think every day should have a theme!!!! Lol
 
Oh and if the 6 year old does happen to question why the tooth fairy has the same picture as you….
 
Dude. Lie. 
 
She explained that she can’t lie. 
 
So I said, “so when SweetPea comes home from kindergarten crying that Johnny said there is no Santa, what are you going to say?? Sorry kid I can’t lie, Johnny is an asshole but he is right.”

I may have talked her into doing a guest post all about her week with HBear lol of course she was hesitant until I told her that no one expects her to be as funny as me. 
 
The challenge is now on. Lol. 
 
A while back when my inlaws went on their last cruise I made pot pies for their last homemade dinner. I always think that when you go on vacation you miss home-cooked meal’s so I wanted to give them a comforting dish before they go on a cruise where they can taste any gourmet meal they like LOL.
 

These were soooooo good! We even had leftovers! I froze 3 more and we had them the other night! So good 🙂

Puff Pastry Beef Pot Pies
Adapted from The Yummy Life
1 frozen puff pastry
3 tablespoons olive oil
1 ½ lbs. stewing beef
1 teaspoon salt
1 teaspoon black pepper
2 cups mushrooms, chopped
2 tablespoons tomato paste
2 garlic cloves, pressed
1 teaspoon thyme leaves
½ teaspoon rosemary, minced
½ cup red wine
5 ½ cups beef broth
6 small potatoes, diced
1 onion, chopped
¼  cup cornstarch
½ cup cold water
3 cups frozen veggies
½ cup parsley, minced
1 egg + 1 tablespoon water
Roll out your pastry.
 
Using 12-16 oz. oven proof bowls. Turn one upside down on pastry sheet and cut around it with a small knife. Repeat for number of crusts you need. Cut small cookie cutter shapes out of leftover dough, if desired. Cover cut pastry rounds with plastic wrap and refrigerate until needed. 

Heat 1 tablespoon olive oil in Dutch oven over med-high heat.
 
Pat meat dry, sprinkle with salt and pepper, add half to pan. Cook, stir occasionally, until browned and liquid gone. Remove to plate and repeat with remaining meat. Remove to plate.
 
 

 

Add 1 tablespoon oil to pan, add mushrooms and onion; cook until liquid is gone. 
 
 
Stir in tomato paste, garlic, thyme, and rosemary; cook for approx 30 seconds. Stir in wine, scraping up any browned bits. 
 
 
Stir in the broth, potatoes, and browned meat. Bring to boil, reduce to simmer, cover and cook until potatoes are cooked and beef is tender, approx. 30-45 min.
 

 

Whisk together cornstarch and cold water, stir into pot and cook until thickened; approx. 2 minutes.
 
 

 

Remove from heat; stir in parsley and frozen veggies. Season with salt to taste.

 
Preheat oven to 400.

Ladle stew into ovenproof bowls, place puff pastry round on top. Gently stretch and press pastry edges over lip of bowl.
Make egg wash by whisking egg with 1 tablespoon water, brush on pastry tops. Add pastry cookie cutter shapes on top of pastry rounds (if using) and brush those with egg wash. Place bowls on baking sheet. 
 

Bake for 30 minutes or until crusts are golden and filling is bubbly. 

 

 

Let pies rest 15-20 minutes before serving to allow filling to cool and thicken.
