No to be accurate, I am reading Fifty Shades Darker.


That’s right, I am reading the second one, which means I have already read the 1st one.


GROAN


It’s like Twilight. OK Sooooooo… Right when HBear was 6 months old we came here for a visit. When we went to bed I began reading a book Mom had laying around, Twilight. It was HORRIBLE. Worst drivel I had ever read.


I was done it in 3 days and quickly went to the library to take out the second book… and then the third. 


It was HORRIBLE. But I read them all. *to be honest my trip was over and I still had half of the last one to read. I never picked it back up. The ONLY series, oh except Lives of the Mayfair Witches, that I just didn’t care to ever finish. **The Witching Hour is the 1st book in the series, it was AH-MAZING, the rest sucked.


Back to the point… I decided that in 2015 I would read books purely for fun, not just self help, parenting, science, or children’s.


I started with Burned by Karen Moning. I love this series so I was excited for the new book 🙂 It was really good to hear from old friends LOL. Now if only Dawson’s Creek would come back *sigh*


Next I requested 4 books from the library Wild, Big Little Lies, 50 Shades of Grey, and The Pillars of the Earth. The first to come in was 50 Shades.


So because it is the worst book ever… as soon as I finished it I remembered that Mom had the second one on her kindle!


I really don’t like the kindle. There is something about holding the book and hugging it at the end to say goodbye to the “people” that you had come to know so well.


Anyways I remembered that when I looked at the kindle a while back it was on there. SO when I opened it up, Mom was at 58% finished the book. I gulped and started it again.


The other night I got to 59%.

 
I hate cancer.
 
In our school of approximately 240 kids we have two children fighting for their lives right now. We have another young lady, 16, who went to our school. She found out she had cancer 9 months ago. She passed away Sunday night. 
 

Horrible. 

She was a beautiful young lady with her whole life ahead of her. The whole community has been in mourning. Our entire city has been fundraising and sending thoughts, prayers, and love to her and her family for the past nine months.

 

9 months.

The same amount of time she lived in her Mommy’s belly… safe, warm, loved.
 
It only took 9 months to take it all away.
 
Just devastating. 
 
Her cousin is one of HBear’s Bestys. I messaged her Mommy yesterday with kind words but, really? I mean really, what can anybody say?
 
Tonight, I will light a candle for that beautiful girl and I will push all of my healing thoughts her family’s way. 
 
Tonight, I will hold my little ones just a bit closer. Just a little bit harder.

A while back we had a delicious dinner and I would like to share with you now. 

Loaded Baked Cauliflower
Adapted from Diva Di Cucina
1 head of cauliflower, broken up into florets
1 cup sour cream
1 cup cheese, shredded
3 green onions, chopped
6 slices cooked bacon, chopped or crumbled
salt and pepper
Bring a large pot of water to boil.
Add the cauliflower florets and cook for 6–8 minutes or until easily pierced with a fork.

 

Remove cauliflower from water and allow to cool.

 

 

Preheat oven to 350.
Stir together sour cream, 1/2 of the cheese, 1/2 of the green onions, and 1/2 of the bacon in a bowl. Add salt and pepper to taste.

 

 

Add to the sour cream mixture to the cooled cauliflower. Mix it up well.
Place mixture in a baking dish and top with remaining cheese and bacon.

 

Bake for 20 minutes.

Garnish with the remaining green onions just before serving.

 

 

Sweet and Sour Pork Chops
Adapted from Damn Delicious
4 center cut pork chops
2 tablespoons butter
1/4 cup red wine vinegar
3 tablespoons honey
2 cloves garlic, pressed
¼ teaspoon dried oregano
¼ teaspoon dried basil
¼ teaspoon dried thyme
Preheat oven to 375.
Season pork chops with salt and pepper, to taste.

 

Melt butter in a large skillet over medium high heat. Add pork chops and sear both sides until golden brown, about 2-3 minutes.

 

Place into oven and roast until completely cooked through, reaching an internal temperature of 165 degrees F, about 8-10 minutes.
Make the sweet and sour glaze, combine vinegar, honey, garlic, oregano, basil, and thyme in a small saucepan over medium heat; season with salt and pepper, to taste.

 

Bring to a boil; reduce heat and simmer until slightly thickened, about 5 minutes.

Serve pork chops immediately with sweet and sour glaze.
