HBear is back into the swing of things.
Which means I am back into the swing of things J
Which really means SBean can start being normal again… whatever normal means LOL More on the STRUGGLE of SBean another day I promise!
 

 

 

 

HBear has been hard at work finishing up her Summer Journal. She is hoping that in grade 2 there is still Show & Tell, she wants to show all her friends her summer adventures!
 
 
While she was working on her Summer Journal the other night, she asked me what Heritage meant. I read her the definition. Then we talked about what a generation was and passing on information.
I talked about Poppy cooking for the army. I said, “maybe that’s where you get your love for cooking.”
She said, “No. I get it from You. You inspire me to want to make healthy and good food. I love cooking! You know in SYTYCD when that girl said her Grandma’s love of dance inspired her to dance… yeah you inspire me like that.”
 
She was so matter of fact. It made my heart swell… a lot.
 

 

 

 

 
So at our school, classes are not picked until the beginning of the school year. Which means the first 2 weeks are complete chaos! Especially this year because we have a new development in our area and we have a TON of new students! 
 
In HBear’s grade there are 2 teachers. I have been warned about 1 of them since the beginning of kindergarten. Apparently she is tough, likes girls and good readers. Ninja and I talked about it and we decided to let the chips fall where they may. Like HBear learned in preschool “You get what you get and you don’t complain!” 🙂
 
Well, I guess with all the talk from all the parents, HBear asked me “Mommy, what teacher do you hope I get?” I looked at her and said, “Sweetie your Principal is the best one around and she only hires the BEST teachers for your school, so which ever teacher you get will be fine with me.”
 
She was happy with that answer and when she got placed in THAT teacher’s class (which I had a feeling she would) she was ecstatic!
 
Really, I am more worried about the kids in her class than the teacher! Kids can make or break your year. The other day we were listening to True Colors on the IPod and honestly I had a lump in my throat listening to it! I almost started crying! Then I started in on how being yourself is the best way to be and so on LOL Wow, that song used to mean something so different to me and now it makes me terrified about my girls being ashamed or scared to be themselves *shudder* I will have to make sure I am on top of that! LOL
 
 
Speaking of songs and how they make us feel, last night HBear asked me “Can you keep a secret?”
 
DREAD
 
“Of course Honey. But if someone is in trouble or you are in trouble I will have to make it better and that might mean I have to speak with someone.”
 
Yeah, I went there right away LOL
 
“Ummmmm OK. Do you know what this song reminds me of?”
 
BIG sigh of relief. I listened and it was that song “See you Again” by Wiz Khalifa (I had to look that up, who the hell is Wiz Khalifa????) 
“Jacob.”
“Oh? Why is that?”
“Because I broke up with him.”
????
“Aren’t you 6? What happened?” LOL
“Well actually I think he broke up with me at the end of grade 1, he had his eye on someone else. Now this song reminds me of him. Don’t worry I have my eye on 2 boys now!”
BAHAHAHAHA

 

 

 

 
She is so funny. The other day we were going through her shoe bin and I said “OK it’s time to throw out these old runners because they don’t fit and they have holes in the toes.”
Now I have to say that these are the first shoes we have EVER thrown out. In fact these may have been the first anything from her closet that we have thrown out. We are fabulous recyclers J HBear wears it, then SBean wears it and then we pass it along to SPea! In fact, most of the stuff went through BBear in Wpg first!
The thought of throwing out her old runners left her completely distraught! To be honest, it wasn’t the best feeling for me either lol. I was like “Maybe she’s right, maybe we should save them…”
Ninja looked at them, looked at me and said “get over it” and put them in the trash J
The next day I was cleaning out my craft desk and I found a scrap of happy 40thbirthday streamer. 
 
I handed it to HBear and asked her to put it into recycling. Again totally choked!
“But whhhhhy? Can’t we use it again?”
“HBear, we used it for Uncle Kelly’s birthday AND Daddy’s birthday. Nobody around here is turning 40 for a looooong time (LOL).”
About 30 minutes later she came back into the office shaking her head. “I can’t do it Mommy.” And she quietly handed me the scrap.
I’m not sure if I have helped create a fabulous Earth Ranger or a crazy ass hoarder!?!?! LOL
 

 

I made this for dinner last week. Ummm yeah, SO FREAKING GOOD! Seriously, I wanted to lick the plate! This is easy and a definite must try!!!!
 

Chicken with Creamy Cilantro Lime Sauce

3 chicken breasts
1 tablespoon oil
1 cup chicken broth
1 tablespoon lime juice
1/4 cup onion, chopped
1 tablespoon cilantro, chopped
1/4 teaspoon red pepper flakes
3 tablespoons heavy cream
2 tablespoons margarine
Preheat oven to 375.
Season each chicken breast with salt and pepper.
In a large oven-proof skillet, heat the oil over medium-high heat.

Add the chicken and cook for 6-7 minutes, turning once. 


You want the chicken nice and browned on the outside. Remove from pan and set chicken on a plate.

Remove skillet from heat and add the broth, lime juice, onion, cilantro, and red pepper.

 

 

Return to heat. Cook and stir to scrape up the browned bits from the bottom of the skillet. Bring to a boil. Allow to boil gently, uncovered, for 10 minutes or until the liquid is reduced to around 1/4 cup.
Reduce heat to medium-low, then add the cream and margarine. Stir until margarine has melted.
Return chicken to the skillet and place in the preheated oven. Bake until the chicken is completely cooked through, about 5-10 minutes.

 

Serve chicken with sauce spooned on top.
