Chocolate Zucchini Loaf & Chocolate Chip Zucchini Muffins

Being busy does not always mean real work. The object of all work is production or accomplishment and to either of these ends there must be forethought, system, planning, intelligence, and honest purpose, as well as perspiration. Seeming to do is not doing.

My new life, a life with 2 school age children, is finally starting to take shape. I am beginning to see how it will all fit together. I am definitely not as busy this week, even though on paper my schedule is a mess. I colour coordinate it so I can see my day at a quick glance. SBean is flamingo, Ninja is blueberry, HBear is Peacock and I am banana. I have grape for both kids, tangerine for school stuff and tomato for menu planning.

Even next week with the school barbecue, friends coming in from out of town, a DPAC meeting, the draft for the hockey pool that Ninja and I run, Brownie cookie sale day, my Guiding test, the Guiding District Meeting, our Guide Pack meeting and dinner out with friends… I’m not feeling as much stress because I’m organized and I know that I can handle this shit ðŸ˜‰!


The kids are settling in nicely into their new schedules as well. I no longer have to fight with a SBean about naptime, she wants to go to bed LOL.

That kid, she says the funniest things! She has so much personality and such a distinct style.

r Walking and SBean was like, “sing it Mom!” and I looked at her and said, “Baby your such a rocker chick.” She tilted her head and said, “awwwww thank you Mommy!” She then went on to say, “my whole life I wanted to be a doctor but I change my mind! I want to be a rockstar!” 😳


On Saturday we divided and conquered 
😳 sometimes you have to do that when you have 2 kids hence why I believe 3 should be illegal LOL never let them out number you! Ninja and HBear did shelters. Our company has the contract to clean all the bus shelters and benches throughout the city once a week. Usually Dad does it, although Ninja and I both have had our turns in the past LOL. Dad went to Winnipeg this past weekend so while they were out doing shelters SBean and I drove to Kelowna to do a little shopping. Along the way we listened to Ninja’s podcast, the theme this week was bands of Woodstock. It was a fantastic episode and SBean loved it! When Johnny Winter’s 2nd song came on SBean began clapping and yelling, “Woo woo woo woo” she is seriously such a rocker!

HBear got the student of the week last week! 



Now, that may not seem like anything to you but to us it was huge. Like D. Trump ‘Uge. HBear never wins awards. At her school she has an assembly every month where they award kids for good behaviour. In grade 1 she received her certificate during the last month of school. When I spoke to her teacher about it I questioned, “is she not being courteous, conscientious, considerate or any of the other c’s that you award?” Her teacher assured me that she was all of those things and very often. She then explained to me that because HBear is so studious and kind they try to reward the kids that need a bit more of a confidence boost. So HBear always gets passed by because she is so good. I think that’s shit! SO, I am super pleased that she was recognized so early. That will give Her a boost of confidence and motivates her to continue down the path that she is already on.

HBear worries. She doesn’t like to make mistakes so much in fact sometimes she doesn’t try things because she scared she will fail. I took out the best book ever from the library! It is called What to Do When Mistakes Make You Quake: A Kid’s Guide to Accepting Imperfection.  



I highly recommend this book for any kids out there that worry about making mistakes. We read the first few chapters together.

I let her take the lead and she pinpointed examples of when she behaves like that. It was a total eye-opener for her… and me! Since she has finished it, whenever she is having those fears she recognizes the signs and now has some tools to help work through it.

She has such an interesting mind. On Friday she came home from school devastated. She lost her school planner. I told her that someone probably put it in their bag by accident. When we got home there was an email from her teacher saying that indeed someone accidentally took it. She didn’t want HBear worrying all weekend about it, she knows her so well already! When I emptied her backpack I saw this note in there. I thought it was super neat to see how she sees her Besties. I especially like that she used my favourite advice, “let your weird shine”.


Yesterday was what would have been my Mom’s 58th birthday. Every year we donate to the Terry Fox foundation on behalf of my Mom. She would have been 58 this year so we donated $50 and HBear insisted on contributing this year and took $8 from her donation compartment of her piggy bank.



Early in the morning I took her up flowers. I cranked the music, did a little dance party and cleaned up her headstone. When I was driving out I looked down. 


It was crazy! The whole cemetery was shaded except my Mom’s yellow flowers that I just placed there. The sun was shining directly on them and they looked like happiness personified. It took my sad mood and made it so much brighter! ðŸ’›


Speaking of Mom… This week HBear had her first Brownie meeting. 


Being one of the older girls she was chosen as a Circle Leader! She is a Leprechaun. We used to call them Sixers and Seconders but I guess nowadays they call them Circle Leaders. She loves Guides. 

To be honest, I was never a huge fan but I am super happy that she loves it. This year seems very organized and the leaders seem to have a lot of their heart in it. Which is amazing. As I’ve mentioned I have taken on the responsibility of becoming a Guide leader as well. Because I am not a fan of camping and I am unable to attend the regular weekly meetings I am trying to help out in other ways. Next week I will be making 20 superhero Brownie capes! It was so funny during the whole discussion about making the capes somehow people began to think I know how to sew? ðŸ˜‚ I do have a sewing machine and I do know how to thread it but unfortunately that’s about as far as it goes LOL this is going to be interesting! 

Mom is howling! Guaranteed! She was my Brown Owl and I always said I would NEVER follow in her Guiding footsteps. 

HAHAHAHA ðŸ˜‚

The Girl’s chose badges for each Leader, naming us. I texted Ninja to fill him in on my new name and role…

Remember when I told you that my SBeasty gave me zucchinis? Yeah, last week we made zucchini treats and still had TONS to freeze. I still have another huge zucchini to use up as well!!!!

I used my Mom’s recipe for chocolate zucchini loaf. I decided to just insert her actual recipe for a few reasons.


1. I love her handwriting and miss it. That is another trigger point, her beautiful handwriting.

2. Her spelling was sooo wrong, now I know where I get it from ðŸ˜œ

AND 

3. So you can see how my Mom and Nana left the family recipes to me?!?!?! Barely any direction, stained, and in some cases scratched out many times. ðŸ’›

 
 

Chocolate Chip Zucchini Muffins
Adapted by i heart naptime

3 cups flour
1 tablespoon baking powder
1 1/2 teaspoon cinnamon
1 teaspoon salt
2 eggs, whisked
2 1/2 cup shredded zucchini
2 cups sugar
1 cup canola oil
2 teaspoons vanilla
1 1/4 cup chocolate chips

Pre-heat oven to 350° and fill a cupcake pan with liners. Set aside.


In a large bowl combine flour, baking powder, cinnamon and salt.

In a separate bowl mix together the eggs, zucchini, sugar, oil and vanilla. 


Then pour into flour mixture and stir until combined. 


Fold in chocolate chips.


Pour batter into the prepared pan until the cups are 2/3rd the way full.


Bake for approximately 20-25 minutes or until a toothpick comes clean.

Both of these recipes are amazeballs! A perfect way to use up that zucchini! I have more coming, my MIL has a freaking awesome chocolate zucchini cake that we baked last week too. It is coming soon!
Unlike summer, I don’t have a lot of weekly pictures. This week was school pictures. HBear and I disagreed on her picture outfit but in the end, it is her picture so she won.

We got them back the other day. Grrrrrrr. I hate school pictures. I asked her to make sure she thought of something that made her happy and smile… for real! She told me that the photographer told her to smile with no teeth.

That is absurd! ðŸ˜¡ She doesn’t smile like that! She is a happy kid that smiles with her whole face… teeth included!

I also asked her to make sure her hair wasn’t behind her ears!

Seeing as how SBean’s preschool doesn’t do picture day, we are thinking about doing fall family photos and using those for school pictures this year. More relaxed and natural.

SBean had a great week! She brought Ladybug to school for Show & Tell, we cuddled,

AND she had date night with Daddy! They went to Red Robin for dinner and then to Toopy & Binoo!!!

 

 

She even got to go to her favourite store with me on the weekend! Chapters! She begs to go play at the teacup as soon as we cross the bridge into Kelowna.

While we were shopping Daddy and HBear had a fantastic morning together!

Thank goodness for routine and falling into it without too many bumps and bruises along the way!
