The Olympics and One Pot Bacon Cheeseburger Pasta

I love the Olympics. I have awesome memories from my childhood watching 2 weeks of spectacular performances from the best of the BEST athletes from all over the world!

At the time it was the only time we really saw/learned about different countries and the people in them. My first memories of the Olympics was the 1988 Olympics in Calgary! The whole world’s eyes were on us! I remember the torch running down Portage Ave in little ‘ol Winnipeg! I remember my Mom talking to me about how stressful Katarina Witt’s life probably was. She explained East and West Germany to me and what pressure the young figure skater was under by her government and people. It was fascinating and there was so much drama and amazing stories! It was reality TV before reality TV!

This year the Girls were totally into it! We watched Olympics everyday.



I will remember these Olympics for a long time! I got the stomach flu this week so I got to watch all day and learn all about our Canadian athletes. CBC did a FABULOUS job showcasing our athletes and teaching us about the events!

Every day something happened that made me over the moon happy or left me broken hearted. It was the BEST reality show ever! Here are my 2018 Pyeongchang Olympic Memories…
  • The Canadian Team Figure Skating Gold Medal! See more about my love for Tessa Virtue and Scott Moir below.
  • Despite having a HUGE fall in practice just days before, Laurie Blouin wins silver in Snowboard Slopestyle. It was brutal that day because almost every athlete fell. The weather conditions were really bad.
  • A Russian skier, 3rd out of the gate in the Men’s Combined Alpine??? OMG he lost control and slammed into the netting/fence. It was the 1st crash of the Games for me.
  • Shaun White’s Gold medal Half Pipe run was Amazeballs! It was also the event  that I saw the 2nd crash. It was the 15 year old kid from Japan. When he came down on the edge of the half pipe my heart skipped a beat. Thank goodness he was ok!!
  • Speaking of crashes I watched a special on Canadian snowboarder, Mark McMorris. He crashed into a tree in the backcountry of BC. It took the helicopter hours to get them. He was broken and they didn’t know if he would make it. That was last March!!!!!! The 1st thing he asked when he was able was, “Can I still go to the Olympics?” We watched him win a Bronze medal in his 1st event Snowboard Slopestyle. I bawled.
  • Kaitlyn Lawes and John Morris win gold! Our 1st Mixed Curling team won the 1st Gold Medal ever! This was super exciting for HBear! I was super happy they won and that Kaitlyn played so well after having a tough time in a previous game.
  • Denny Morrison’s heartbreaking 14th place Speed Skating race. Another CBC story told me all about how his wife, a fellow Olympian realized he was having a stroke and got him to the hospital and saved his life… 2 years ago! Oh and he was in a horrible motorcycle accident the year before that!
  • Ninja yelling, “GO!” as Alex Gaugh Luged into a Bronze medal 😂
  • Our Penticton skier, Andi Naude shredding the Moguls but missing a gate and being disqualified.
  • When Canadian Speed Skater Kim Boutin won Bronze in the 1500 and solidified her greatness despite the social media assassination.
  • When Canadian Figure Skater, Patrick Chan took the ice for the last Olympic time and HBear came into the room looked up and said, “yes! Patrick Chan! I’ve been waiting to see this!”
  • The snowboarder from Czech Republic that won gold in Super G Alpine Skiing. Her amazement and honesty was fantastic! She later won a gold in the Snowboard Parallel Giant Slalom, becoming the 1st woman ever to win a gold medal in 2 different sports at the same Games!
  • Tessa and Scott’s Ice Dance short program… wow! Just wow! We actually missed it and I watched it online later that night. I watched it and then woke HBear up to watch it LOL. She was just pretending to sleep anyways 😂
  • Our boy from Summerland, Justin Kripps tieing for gold in the 2-Man Bobsled. It was the best when the German team came flying out with great big hugs for the tieing athletes!
  • Cassie Sharpe Skiing the Half Pipe and winning gold!! The whole house was cheering for her!!!!
  • Tessa and Scott’s gold medal win that was by so little because of more BS from figure skating scores by the US and France judges. They totally deserved that medal and I am so happy they got it. They are beautiful to watch and will go down in the books as 1 of the absolute best skating couples ever.
  • Seeing the Canadian Women’s Hockey team lose the gold medal by shoot out. That’s all I will say about that.
  • Kim Boutin winning another medal, a silver, to become the second woman of all time to win all 3 individual Short Track events.
  • Watching the women snowboarders compete in the first ever Big Air competition! CBC made me fall in love with Spencer O’Brien even though she didn’t medal in either of her events.
  • Samuel Gerard making a fabulous debut winning a gold and coming in 4th in all 3 Short Track events.
  • Our men’s Relay Speed Skaters including Charles Hamelin, at his last games, taking bronze.
  • Gabrielle Daleman’s devastating Free Skate. When she ended her program you could see her crumble. My heart broke for her. 
  • Canada Gold and silver in Women’s Ski Cross! Kelsey Serwa from Kelowna took gold and her roommate, training partner and BFF, Brittany Phelan took the silver. I loved their CBC story!
  • Kaetlyn Osmond didn’t let nerves get to her and captured a bronze in Ladies Figure Skating. Her parents reaction was everything!
  • Germany’s surprising win against Canada in Men’s Hockey semi finals. Yup, that happened.
  • Watching both Canadian Men and Women Curlers miss the podium for the first time in Olympic history. WTF?
  • Watching Mark McMorris handle his 10th place in Big Air like a champ! Wonderful to see Sébastien Toutant win gold though!
  • Craig McMorris. He is a snowboard commentator and a field reporter for CBC. He is great! I totally think he was engaging and informative! Those boy’s Mom and Dad did a wonderful job!
  • It may not be a gold but the Canadian Men ‘s Olympic Hockey Team taking home bronze was still wonderful to see. These guys never had an Olympic medal on their radars. For those guys this was a dream come true! I am so happy for them.
  • The finale. We ate dinner in front of the closing ceremonies. It was sad to watch the flame go out. The show was phenomenal we can’t wait for Beijing 2022!

So over the past 2 weeks we have had a lot of “picnics” in front of the TV. I tried to make easy dishes. This 1 was good. It actually tasted like a Bacon Cheeseburger!!!

One Pot Bacon Cheeseburger Pasta
Adapted from The Chunky Chef

NUTRITION: 533 calories/serving

3 cups water
15 oz can tomato sauce
1/3 cup chopped dill pickles (plus more for garnishing)
2 teaspoon Worcestershire sauce
teaspoon ground dry mustard
1 1/2 
teaspoon brown sugar
1/2 
teaspoon garlic powder
1/2 
teaspoon salt
1/2 
teaspoon black pepper
1.5 lb ground beef
3 cups dried, uncooked elbow macaroni pasta
6 slices cooked and crumbled bacon
1/2 cup cheese, shredded
1/4 cup parsley, chopped




Preheat oven to 475. Lightly grease a 9×13″ casserole dish. Set aside.

In a mixing bowl, add water, tomato sauce, pickles, Worcestershire sauce, dry mustard, brown sugar, garlic powder, salt and pepper. Whisk to combine well.



Mix in beef and dried macaroni and stir to combine.


 


Pour mixture into prepared baking dish, cover tightly with aluminum foil, and bake for 30 minutes.

Remove dish from the oven, remove foil, and stir well. Top pasta with cheese and crumbled bacon.

Leave uncovered and return to oven to bake another 5-7 minutes, until cheese is melted.

Let dish cool 5-10 minutes before serving. Top with finely chopped pickles and parsley.





This week was slow. As I previously mentioned, I got the stomach flu and it laid me up for 4 days! During that time, HBear had her last team swim practice. They finished it up with pasta and a movie night!

Even though he got his wisdom tooth pulled first thing Monday morning and looked after EVERYTHING while I was outcold in bed AND it snowed!!!! Ninja bought me beautiful flowers 💕.



To end the week was the Daddy/Daughter Snowflake Ball! They looked so good! I am such a proud Wife & Mommy 
💛.


They had dinner, did a limbo contest, got glammed, danced on the bubblewrap dance floor on the live Facebook feed, and posed!
