Mother’s Day & Cheesy Mexican Corn Linguine

Yesterday I did something but I haven’t done in the almost 10 years that I’ve lived here. I took 40 minutes and went to the beach. Just me and a book. I took off my shoes and let the sand tickle my toes. No music, no kids, no phone. It was great! It is something my Mom always said she wanted to do. Even though she lived here for almost a decade as well, it wasn’t something she did often… If ever. I remember her saying, “we should go to the beach!” Or “we live so close the beach, one of the best things about living here is just being able to go there… Just to read.”


But she didn’t.

And I don’t.


Yesterday that changed.

This past weekend was Mother’s Day. I had a surprisingly great Mother’s Day! As you know, Mother’s Day is always a lot of different emotions for me. This year besides a ridiculously sweet video message from my Sis, first thing in the morning 😂,  I was pretty good. Yes, I miss my Mom. I miss her every day not just on Mother’s Day. This year I thought of Heather Shtuka. Her son Ryan went missing at Sun Peaks on February 17. She has spent the last 3 months on her hands and knees digging through the snow trying to find find her 20-year-old son. I can’t imagine what her Mother’s Day felt like. I think of my sister-in-law who lost her 10-year-old son and what the last 4 Mother’s Day have felt like for her. Yes, I miss my Mom terribly but now I AM the Mom and my Mom would want me to enjoy every second I have with my family. She would also want me to take time for myself, to go to the beach to read a book. I know this because just as I typed it a yellow butterfly flew very close right past me as if to say, “don’t waste it… Enjoy it My Love!”


My family spoiled me this year with presents, cards, dinner, wine and brunch but the big surprise was from my Mom, she gave me the ability to reflect on her past regrets in order to show me NOT to make them my own regrets someday. Thank you Mommies, no matter what, you are always there for me, guiding me and frankly… telling me what to do 😂 L. O. V. E.

While I was at the school this past week I saw a teacher making a fabulous craft with a group at lunchtime. We decided to copy her and make Grandma a beautiful picture for Mother’s Day! SBean picked out the crayons, ROYGBIV and I hot glued them to a canvas. Then, using a hair dryer, we melted the crayons to look like flower stems. We glued a few silk flowers on and TA-DA! It turned out beautiful!

I know I shared a Mexican dish last week but with the HEAT I just love eating fresh and healthy! I had 3 cobs of corn that needed to be used so we made a delicious pasta for dinner last night! Unfortunately, it was soooo good there weren’t any leftovers for me today 😞.


Cheesy Mexican Corn Linguine
Adapted from Cooking and Beer
Servings: 5
NUTRITION: 196 Calories/serving

1 box linguine1/4 cup Feta, crumbled
1/4 cup Tex Mex cheese, 
grated
1/4 cup sour cream
1/4 cup milk
2 tablespoons oil
1 small onion, finely chopped
3 cloves of garlic, finely minced
3 cups corn kernels (cut from the cob)
1 teaspoon cumin
1 teaspoon chili powder
pinch of paprika
salt and black pepper
2 tablespoons chopped cilantro


**I roast the corn in the oven at 350 for 30 minutes and then I use a bundt pan to catch the niblets as I cut them off the cob.**


Cook pasta according to box. Drain and set aside.


While the pasta is boiling, prepare the cheesy corn sauce. To the bowl of your food processor (I used my smoothie maker 😂), add 1/4 of Feta cheese, Tex Mex cheese, sour cream, and milk. Pulse 12 times and set aside.


Add the oil to a skillet over medium heat. Add the onion and cook until tender, about 5 minutes. Add the garlic and corn kernels. Cook for 5 more minutes until the corn is warm and tender. Season the corn with cumin, chili powder, paprika, and salt and black pepper to taste. Stir in the reserved cheese mixture. Cook for an additional minute, and remove from heat.

Add the pasta to the skillet with the corn and toss to combine. Serve immediately topped with chopped cilantro, and extra Feta.

Last week the Girls got into a fight. This is becoming a habit with them 😬. HBear was doing a favour for SBean, SBean refused to do a favour for HBear, so HBear hurled a shoe at SBean’s head 😳. No good. We decided that having each other’s back is something that we need to learn to do so instead of a punishment, the Girls were asked to meet in the open area the next day and have lunch together. I sat with them and at the end, we talked about what happened. We decided that if they continue to treat each other poorly they will continue to have lunch together until they can get along 😂! #winning.


After a long week HBear went for a sleepover at Gr1Besty’s house so I took SBean and her MBesty out for fro yo!

On Saturday we planted the garden!

 

We began Mother’s Day having brunch at Salty’s Beach House! It was excellent! I even got a Alize Mamosa because that was my Mom’s favourite liquor 🥂💕. 

 

 

After brunch we took flowers up to my Mom 💛 and all the other family members resting at Lakeview cemetery.

Then we went to Kaleden to enjoy the hot weather, the playground and a little bit of Geocaching!

 

 

Ninja made me a delicious barbeque steak, roasted potatoes, sautéed mushrooms and homemade Caesar salad to end a fabulous day! Dad topped it off with a ridiculously amazing wine 💛!

On Monday I enjoyed the heat by going for a walk on the beach! Of course I left my Winnipeg mark all the way down the sand! After school HBear had golf lessons! She is turning into quite the little golfer!

All that sunshine got me like…
