Baked Popcorn Honey BBQ Chicken & Teacher & Classmate Christmas Gifts

School is winding down for 2019! The kid’s last week of school has consisted of Christmas concerts, Christmas movies, and Christmas cupcakes!


Every year we like to hand out little treats to each of the Girl’s classmates. This year because HBear is in middle school, we have decided that if she would like to hand out treats she can do that by her big girl self LOL it kind of sucks for me though because HBear was very agreeable and always liked my ideas. Not so much for SBean LOL I have been throwing different ideas at her for the past few weeks and we have agreed on none of them. I finally came up with an idea that we can both agree on!

Reindeer noses!

Well, not exactly reindeer noses, I’m calling them reindeer noses but SBean is calling it reindeer poop 💩😂.

Once I threw in the red Swedish berry, SBean was over the moon happy with this year’s treat and they were super easy to make!

We filled snack size Ziploc bags with 20 chocolate covered raisins and one Swedish berry. SBean signed all the tags that I printed up from Rose Bakes and we stapled them onto the top, done!


Each year we try to do homemade gifts for the teachers as well. Not every year because sometimes time just doesn’t allow for it but this year we came up with a great idea! Teachers for us can be quite expensive because we like to recognize the Girl’s dance teachers as well. This year we went to one of our local markets, Summerland Sweets and bought each of the Girl’s teachers a jar of locally made jam! I bought some burlap from the dollar store and we used Christmas tags, ribbon and elastic bands we already had! On each of the tags the Girls wrote, “you are my jam”. Super cute!

This week I made popcorn chicken soup LOL just joking! But, I was craving deep-fried popcorn chicken but without all the calories. So I found this recipe, went out and bought some Corn Flakes, and made baked popcorn chicken that was crispy and delicious! The Girls liked it without the sauce, I liked it both ways but that sauce, that sauce is DAMN good!

Baked Popcorn Honey BBQ Chicken

Adapted from Sally’s Baking Addiction

4 chicken breasts, cut into bite-sized pieces
1 cup flour
5 cups corn flakes cereal, crushed lightly
½ teaspoon garlic powder
¼ teaspoon smoked paprika
2 large eggs
¼ cup milk
3/4 cup your favorite BBQ sauce
1/4 cup honey
1/4 cup ketchup


Preheat oven to 400°F.


Line a large baking sheet with parchment paper or a silicone baking mat. Set aside.

Place the bite-sized pieces of chicken in a large bowl. 
Add flour and stir to coat each piece. Set aside.


Place the corn flakes, 1/2 teaspoon salt, 1/2 teaspoon pepper, garlic powder, and smoked paprika into a large bowl. Set aside.


Whisk the eggs and milk together in a small bowl.

Dip each piece of chicken in the egg mixture, letting any excess drip off. Then roll in the cornflake mixture, shaking off any excess. Place onto the prepared baking sheet. Repeat with all chicken bites.

Bake for 18 minutes, flipping once at the 9-10 minute mark. Remove from the oven and allow to cool for 5 minutes.

While the chicken is baking, heat the Bbq sauce, honey and ketchup in a small saucepan over medium heat for 6-7 minutes, whisking occasionally.

Carefully place the chicken bites into a large bowl. Pour the warm honey BBQ sauce on top and gently stir to coat.

 

SBean lost a tooth last week and this week HBear lost a tooth! Both Girls received their report cards and SBean had a wonderful report card and HBear got all A’s and was awarded a spot on the honour roll! Very proud of both of my beautiful Girls!

 
The house is coming along! The siding is all up on 2 of the sides and we started priming the walls this week! I can see the light at the end of the tunnel!

Ninja and I took the Girls to Pen High for the annual Toys For Tots To Teens Christmas breakfast. We each brought a new gift and we received a delicious breakfast in return! While we ate we listened to carols being sung by a local elementary school and we all had a great time! It was the perfect way to start our day before school/work!

 

 

This weekend we did some Christmas activities like taking time for cuddles, finishing the Christmas shopping and taking the Girls to see Frozen 2.

 

We also finished our classmate treats, teacher’s presents and did some Christmas baking!

We made Ninja’s favourite, Sugar Cookies!

 

 

 

 

 

 

 

We also made SBean’s favourite, Peanut Butter Marshmallow Squares and HBear’s favourite, Cocoa Puffed Wheat Squares. I will post the recipe for this delicious treat in the near future!

 

As I mentioned earlier, this week has been all about Christmas concerts! HBear got to show us what she has been working on in band class at her first ever holiday band concert! It was a wonderful night! The kids played so well.

 
SBean also had her Christmas concert and she was AMAZEBALLS! We had no idea she was the Blitzen in the Blitzen Boogie!! It was adorable! Even though she REFUSED the gorgeous white and gold Christmas dress I had picked out for her AND she only wanted a ponytail that fell out 2 seconds after I put it in AND she REFUSED the gold dress shoes I bought her and instead INSISTED on her outdoor runners. Ha! I am SO in for it with that one 😂💕.
