Random Thoughts PLUS Chicken Fajita Quesadillas & Almond Joy Cookies

 
The other day I got out my can-opener and was opening a can of worms when I thought, What am I doing?!

This week is my first week back at work! More to come on that next week 😊

Because I’ve been super busy and things have been pretty hectic I don’t have one fluid thought. I have many fragmented thoughts though! These are just a few things that have been occupying my mind lately…

1. COVID-19 has not gone away. Just because it’s summer and people want to do things doesn’t mean the deadly virus that we have all been trying to flatten the curve of has gone away. It hasn’t.

2. I can’t wait for hockey to come back! I’m not sure how it’s going to work with the virus and all and I truly feel like a terrible person for being so excited to watch extremely talented hockey players risk their lives to entertain me but I’m excited nevertheless.

3. School. My anxiety is through the roof when I think about school starting in a month and a half. I really hope our government has a good plan of action and isn’t basing their strategy on, “it looks like kids don’t tend to get COVID-19 as much as adults.” 🙉

4. I miss my Sister. I miss my Brother. I miss SIL and my BIL. I miss my nieces and my nephew.

5. There’s nothing on TV! I started watching Tough As Nails and while I enjoyed it, I also found it a little bit condescending. “I get my calluses from working at the farm not the gym, my calluses are real.“ Calluses are calluses. People that work hard get calluses. Why do we need to minimize other peoples efforts? I can’t wait for Big Brother & The Bachelor to start 😆.

6. I have been reading! Last week I read a book called White Rage by Carol Anderson. What really pissed me off is someone wrote on the first page, “reverse racist crap”.  Obviously they didn’t read the book! If they had they would’ve read the history of slavery and racism and why this systemic oppression has created the mess we are in today. That the decisions made over 100 years ago are STILL affecting POC even NOW.  I highly recommend this book for anybody looking to educate themselves further on the history of black Americans.

7. The Girls have been reading too! They have read about Ruby Bridges, Viola Desmond, Malala, and Rosa Parks.

8. As you know I finished my Barre Blend Beachbody program a month ago. For the past few weeks I’ve been working on my yoga and doing nightly routines from the Beachbody menu. This week I have started a new program called the Morning Meltdown 100. 100 days of exercise with Jericho. Tonight will be day 3!

9. I was a guest on a cool podcast this week called Moving the Needle Podcast. We chatted about ear worm songs! You can check it out HERE.
10. I finally finished watching all the Star Wars! I really liked Rey! I was not a big fan of how they wrapped up the storylines though. Also not a fan of how some of my favourite characters from the other movies went out.

More Mexican food? OK! These were easy and different! We loved them and you could choose your own ingredients and it will probably taste great every time! We also make some delicious cookies that we can’t wait to share with you! Enjoy!

 

Chicken Fajita Quesadillas
Adapted from Cooking Classy

3 chicken breasts, diced into 1/2-inch cubes
2 teaspoons chili powder
1 teaspoon cumin
4 teaspoons oil, divided
1 bell pepper, chopped
1/2 red onion, chopped
1 small can corn, cooked
2 garlic cloves, minced
1 tablespoon lime juice
6 tortillas
3 tablespoons margarine, melted
1 1/2 cups Mexican cheese, shredded

1/3 cup cilantro, chopped
Toppings: sour cream, pico de gallo or salsa, etc.

 

Toss chicken with chili powder, cumin, season with a good amount of salt and pepper.

Heat half the oil in skillet over medium-high heat. Add chicken and cook and turn occasionally until fully cooked through. Transfer to a plate.

 
 

Heat remaining oil in same skillet. Add garlic, bell pepper and red onion and saute until tender while adding in corn and cilantro during last 1 minute. Transfer to bowl with chicken, pour in lime and toss.

 
 

Brush top side of tortillas with melted butter. Wipe skillet clean with paper towels, heat over medium heat.

 

Transfer one tortilla buttered side down to skillet. Working quickly sprinkle with about 3/4 cup of the chicken mixture and then 1/4 cup of cheese. Fold top half over, repeat with a second tortilla (you can fit two in the skillet at once).

 
 

Let cook until golden brown on bottom about 2 minutes, then carefully turn to opposite side and continue to cook until golden brown on bottom.

Repeat process with remaining tortillas, cheese and filling. Cut each quesadilla into 2 wedges. Serve warm with desired toppings.

 

 

 

 

 

 

 

 

 

Almond Joy Cookies

Adapted from Small Town Woman
1 1/8 cups all purpose flour (1 cup plus two tablespoons)
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter, softened
1/3 cup sugar
1/3 cup brown sugar
1 teaspoon vanilla extract
1 egg
1 1/2 cups chocolate chips (I used milk choc. & semi-sweet)
1 cup shredded coconut flakes, sweetened

3/4 cup sliced almonds

Preheat oven to 350 degrees.

In small bowl whisk to combine flour, baking soda and salt. Set aside.

Using mixer cream butter and sugars. Add vanilla and egg and mix just until incorporated.

 

 

Slowly blend the dry mixture into the creamed mixture.

 
 

Stir in chocolate chips, coconut and almonds.

Drop by 1 1/2 tablespoons onto parchment covered cookie sheets.

 


Bake for 9-12 minutes. Allow to cool for ten minutes before moving to cookie cooling racks.

 

 

 

 

 
This week we checked off a few more items on our Summer Bucketlists! One off my list was cleaning the van! The Girls were SUPER happy 😂. We knocked another one off when we made an amazing obstacle course! SBean won! We also started week 1 of the library summer reading program! On Friday it was Ninja’s birthday and he took the afternoon off so we could check another item off the list, go swimming at a hidden swimming hole! We hiked into the old mines and went for a dip! It was so much fun! That evening we did presents, Earls, Star Wars and homemade brownies! The next day we met Ninja’s parents at Penticton Golf and Country Club for a round of golf! It was great to get out and enjoy the company and the exercise! Dad and J had the Girls and the did a GREAT job decorating the backyard and making dinner. We gad salad and homemade chicken breast burgers! SO GOOD! We finished with my MIL’s Black Forest Cake, Ninja’s favourite. The next day we were so tired that we got up had cake fore breakfast, watched the last 2 Star Wars movies and got take out for dinner.
