Summer Reading Challenge & Creamed Corn Chicken Pasta

I love to read.

 
When I was a kid my Mom took me to the library all the time. The Westwood Library. 2 years ago the Winnipeg government thought closing libraries would save money 😳. Seriously. People in the community banded together and changed their minds! It is amazing what some governments will try to get away with and what people can do… together.
 
Books can take you to far away places, allow you to see different points of view, and allow you escape from reality. Growing up, some of my best friends were literary characters. The Babysitters, Elizabeth and Jessica Wakefield, Taffy Sinclair, Ramona Quimby and Charlie Bucket. I read about London and Greece. I read about the Dark Ages and the Renaissance. I was just a small girl sitting in my bedroom in small town Winnipeg but I felt like I could go anywhere by just picking up a book and disappearing within it’s pages.
 
Reading has always been an important part of my Girl’s lives. Until recently. I feel like they have read less this year and it hurts my heart. To change this I have started a Summer Reading Challenge! I printed us up reading logs and promised a $50 gift certificate from Chapters to the person who reads the most books/pages!
 
 

So far… I finished 21 Things You May Not Know About The Indian Act. This was MINDBLOWING to me! I had no idea. I reccomend that EVERY Canadian read this book to understand our history. Things I have thought my ENTIRE life were lies. Things I saw, I can now explain. It is so much easier to understand now that I know. It is also weighing on me heavily now BECAUSE I know. I can NEVER go back. Please read this book and the appendixes!! The Truth and Reconciliation Commission is a MUST read at the back!! 

While I sit here inhaling debris and smoke from wildfires I have begun reading, Imagine It! A Handbook for a Happier Planet. I am loving this easy to read and informative book. The Ladies who wrote it make it sound so doable! They make me believe that we can make small changes to do our part. In the future we aren’t go to have a choice so I am learning NOW! I also just started Washington Black. It is a story about a slave in the Caribbean whose Master is a man of science and teaches him to read and how to be his assistant as they take on the crazy idea of a flying machine. So far it is heartbreaking, interesting and I can’t wait to see what happens!

I have said this before but I have an obsession with  creamy corn pasta. There’s something about the sweetness of the corn and the pasta and the cream sauce that just WORKS together. The first time I tried corn ravioli was at Wofgang Puck’s restaurant in Las Vegas. I dreamt about that dish for months, no years afterwards! I have tried a few different recipes and they are REALLY good but not the same. So I continued to try different corn/pasta recipes. This one is DELICIOUS and I can’t wait to make it again but it still didn’t quiet taste like that original dish. I will keep looking but until then I will be making this one to fulfill my culinary cravings! 

 

Creamed Corn Chicken Pasta
Adapted from Half Baked Harvest


4 chicken breasts
2 tablespoons olive oil
1 tablespoon thyme, 
chopped
salt and pepper
1/4 cup flour
4 slices thick cut bacon
1 onion, chopped
2 tablespoons butter
4 ears corn, kernels removed from cob
2 cloves garlic, minced
1 teaspoon crushed red pepper flakes
3/4 cup dry white wine
1/2 cup water
1/2 cup heavy cream
1/2 cup grated parmesan cheese
1 bag of medium egg noodles
fresh basil
 


Rub the chicken all over with 1 tablespoon olive oil, thyme, and season generously with salt and pepper. Sprinkle the flour evenly over the chicken and toss to coat, adding more flour if needed to cover the chicken.

 

Heat a large skillet over medium high heat and cook the bacon until crisp. Remove the bacon from the pan and drain onto paper towels. Chop in to bite sized pieces.

Add the chicken to the pan and sear on both sides until golden, about 5 minutes per side. Remove the chicken from the pan.
 

Add the remaining 1 tablespoon olive oil. Add the onion and cook about 5 minutes. Add the butter, corn, garlic, and red pepper flakes. Cook another 5 minutes or until the corn is golden.
 

Reduce the heat to medium low and pour in the wine and water. Add the chicken back to the skillet and bring to a simmer over medium heat. Simmer the chicken for 10-15 minutes until cooked through.
 
 
Make pasta noodles according to directions.
 
 
Stir in the heavy cream and parmesan, cook another few minutes until warmed through.

Remove from the heat and top with bacon and basil.

 

 

 

 

 

 

This week I finished week 1 of T20! My Sis and I are discussing moving to a low impact program like Barre. Barre was TOUGH but at least we know what we are in for! 😆 We had some delicious dinners this week that I always forget to take pictures of lol I did snap 1 though of our delicious alfredo dinner!

SBean LOVED her Acro camp this past week and enjoyed the sunscreen train at her DBesty’s pool after camp. Her and her other Besty made up a cupcake recipe during dance break! They made it up!! Last year they made up a cake recipe that didn’t taste the best but turned out. The cupcakes were the same. They turned out but they were… dense 😆. I love how creative they are! HBear finished her Royal Winnipeg Ballet summer session. I spoke with her teacher at the end of the camp and she said wonderful things about HBear’s dancing! She asked me how long she has been doing ballet and I said this was her 3rd year. She was shocked but it all made sense. HBear shows a lack of experience and physical strength. She didn’t get invited to the RWB School for the year but that wasn’t the goal. The goal was to go to summer session and improve, which she did! She feels really good about where she’s at and that’s all that matters 💛.

On Saturday Ninja and I went to Kelowna to meet our friend from the 4th Line Podcast, Carl and his wife, Mrs Carl! It was wonderful to meet them after having a digital friendship for so many years. On Sunday we watched the last round of The Open and later that day a new fire broke out near by. SBean spent Sunday evening at the beach having a picnic with her Gr3Besties.

By Monday our skies were filled with ash, smoke and a blistering red sun. It was like the apocalypse! The ash has stopped falling but we are surrounded by wildfires and the smoke is thick. We tried to have a few hours at the beach before the smoke got too bad. HBear got her partial braces on this week and SBean and I went for a walk to the Art Gallery while we waited for her.
