Sunday dinner… I always picture roast when I think of a Sunday family dinner.
Today we braved the lines at Costco. HoneyBear loves Costco samples and Ninja races her around the entire place tasting everything. It is so cute. Why do I go there on a weekend? Why do I continuously make the same error in judgment? Do I really NEED a huge can of ketchup that bad? Apparently so.
We live in a small city so it is an hour drive to Kelowna to get that damn ketchup. Of course ketchup turned into an $80.00 bill. Actually Ninja & I gave ourselves a pat on the back for keeping in under $100 for once. So while we are in Kelowna we try to get whatever else we need done, done. So we went to Michaels to pick up a few things for the girl’s bedroom. Yes, we are redecorating HoneyBear’s room to put both girls together. More posts to come on that fiasco I promise J
We also went to the Bay. Yesterday we went to the Bay in our town for new sheets. Ninja and I have totally different opinions on sheets. It seems that the lower the thread count the more he likes them! HUH? So we had one set of sheets that he really liked and I tolerated but after washing them so many times over the past 5 years they finally tore. Now we DO have amazing sheets my in-laws bought us for our wedding shower but he doesn’t like them.
Sooooo, we are taking advantage of all our Bay gift cards we have collected over the past few years and are treating ourselves to new sheets, and a pillow because my neck is STILL killing me. So we go to ours and the ONLY sheets we both like aren’t on sale. They are the ONLY sheets that aren’t on sale! The saleslady tells us they go on sale on Friday… really? Why not just give us the sale price today so we don’t have to come back in 6 days. No. So we check in Kelowna to see if there is a better selection. There isn’t so Friday it is I guess lol.
Ninja helped out and made dinner tonight. I email him the recipes and he just goes.  I took HoneyBear to swim class and came home to an amazing TRUE Sunday dinner. Roastbeef, Yorkshire pudding, gravy, honey roasted carrots and twice baked potatoes! Delish! If there was a bit of light snow falling outside it would have been picture perfect, but the beautiful sun and a temperature of +5 isn’t too shabby either J

Mustard Roast Beef
Adapted from Nosh

2 teaspoons mustard seeds
1 teaspoon sea salt flakes
1 teaspoon cracked black pepper
1 tablespoon thyme leaves
¼ cup olive oil, plus one tablespoon extra
4 lb outside round roast
¼ cup Dijon mustard
¼ cup room temperature butter

Bring roast to room temperature.

Preheat BBQ to 250 degrees.

Place the oil, mustard seeds, salt, pepper and thyme in Ultimate chopper and pulse until combined. 
In a separate bowl combine butter and Dijon mustard until completely mixed.
Combine oil mixture and mustard mixture, set aside.

Brush the beef with the extra oil. Heat a large pan over high and cook the beef for 1-2 minutes each side or until brown. Remove from the pan and rub the mustard mixture over the beef.
Use a good thermometer to get the right temperature

Place on a rack in a baking dish and roast on BBQ for 1 1/2 hours for medium rare. Until you thermometer is about 140. Remember the meat will continue to cook after you take it out to rest.

Cover the meat with foil and rest in a warm place for at least 10 minutes.

Put the roasting pan on to your stove top and on medium high heat, add beef broth and deglaze. Reduce down a bit. Take out a bit and mix with cornstarch. Add to pan, whisk and strain.

The smell was AMAZING

Caramelized Onion & Smoked Gouda Twice Baked Potatoes
Adapted from For the Loveof Cooking
2 russet potatoes
2-3 teaspoons olive oil
2 yellow onions, sliced
A pinch of sugar
Splash of red wine vinegar
1 clove garlic, pressed
1/4 cup of sour cream
1-2 t tablespoons of butter
Smoked Gouda cheese, shredded

Preheat the oven to 400.
Wash the potatoes then poke holes throughout the potato with a fork. Place into the oven and bake for 60 minutes, or until cooked through. Remove from the oven and let them cool.
Place the oil into a skillet over medium heat. Add the sliced onions and cook, stirring often, for 25-30 minutes, or until golden brown. Season with salt, a little sugar, and a splash of vinegar. Remove from the pan and set aside.
Slice potatoes in half lengthwise and gently scoop out the flesh into a mixing bowl (set skins aside). Add garlic, sour cream, butter, salt and freshly cracked pepper. Mash then spoon mixture into the potato skins. Top each potato with the caramelized onions then sprinkle the top with a bit of shredded Gouda cheese.
Ninja HATES cheese! I know, that’s Crazy!

Put them back into the oven for a few minutes until the cheese has melted. 

With Honey roasted carrots!
