Pro-D Day… Let’s leave off the Pro and what do you get, D-Day. 
You get… Destruction, Devastation, Demon children.
I am the worst mother today. I just have NO patience. ZILCH, NADA, ZIP!
SBean was up at 4:10am.
I checked her bum. Fine. So I brought her into bed and fed her. My nipples are still killing me and with every suck it actually feels like razor blades are ripping through them… probably pulling out what was left of my patience. After she ate for almost an hour!!! I put her back down.
I get back to bed and I hear Ninja sniffling. He is sick. *grinding my teeth* Which means that my 2 snotty girls and my hubby have this cold so I am next… shit.

So even though there is no school today, nobody sleeps in. SBean comes for more milk at 7:10 and I convince myself it will all be good. The day is GOING to be good, God Damnit!
So after I clean the bathrooms, F*** Fridays… we get dressed and we are off.
We start off at Value Village. I need a few things for a costume next week. SBean screams her fool head off the whole time we are in there at the same time as HBear talking her fool head off. Not only that but HBear insists that standing on the end of the cart has made her VERY tired and her legs hurt. She Neeeeeeeds to go into the cart.
The same cart SBean is trying to stand up and jump out of.

Next I have to go to WalMart. I hope things get better. HAHAHAHA. It was just a mess of shit. Old people standing in the middle of aisles gabbing away as SBean visibly shakes from screaming so hard. I am racing around trying to pull stuff into the cart so I can get out of there and stop the STARES!
HBear is STILL talking. She hasn’t stopped since 7:30!! “And you know what else about a bat Mommy?”
“They eat their young?”
So I spend way too much because stupid me I gave SBean the list and she… ATE it! So I actually have no idea what I am there for so I just buy crap. Crap for $77.00 L
Get in the van everyone, Mommy is done.
“But Mooommmmmyyyy you said we could do crafts today!” Where is the craft stuff?”
So next stop is the $ Store. My phone is ringing. I can hear it. Where is it? I rarely ever use it and only Ninja calls it. Then the diaper bag tips over and spills all over the parking lot. Automatically I kneel down and loudly say “OMG I hate my life”.
Quickly I look around as GUILT washes over me. I can’t believe I just said that. It isn’t true. A man is unlocking his bike and is staring at me. “I’m sorry” I say. “Don’t worry about it, I have days like that too.” You would think that would make me feel better but it does not.
I get everything picked up grab the kids and go in for some pipe cleaners and tissue paper.
When we get home I quickly get them in and KD in the pot. Yes it is that kind of day.
After they are finally eating, banana, Kraft Dinner and carrots, I begin to vacuum. I love our vacuum. It is a Dyson. However, today it isn’t picking anything up. Figures.
So I take the bar off and use the circle opening. Yeah, now my back is killing me and I am even more grumpy.
SBean is done and down.
Let’s craft.
“I’m too tired to twist pipe cleaners. I can’t do this. Mommmmmyyyyy help me. Why do we have to do this?”
Seriously? I lost it. Bad Mom style.
So she went away for a minute while I collected myself and the Tootsie pops and the pipe cleaners that I thought we could make spiders with. Next I pull out orange tissue paper and a paper plate.
OK Let’s practice our cutting by making orange squares out of this tissue paper. 4 minutes later.

“This is tooooo hard. My hands hurt from cutting for soooooo long.”

1pm, cannot have a glass of wine. Or can I? No, fine.
After I yell and freak out a little lol I tell her she can cut the squares bigger. This seems to make her stop whining and she begins cutting again. When she is all done I bring out the tacky glue. I cannot for the life of me open it.
“This is so STUPID!”
“Mommy we don’t use that word!” I get chastised.
Deep breath.
I remember that I have that rubber circle that helps open jars and TA-DA!
Now I can start dinner as HBear is crinkling and pasting orange tissue paper onto a paper plate, making a pumpkin J


Ninja came home and helped J TGFN (Thank God for Ninja). I made him mint tea and he even fixed the vacuum and put away the laundry!!!!


Last night I bought a roasted chicken from Safeway. We had it with green beans and delicious potatoes. Tonight I am using the leftovers to make chicken pot pie. I bought a Tenderflake deep-dish pie crust when it was on sale a while ago so I am cheating today. Hey, that actually made me smile a little lol. Man, I am bad today.

Yesterday’s Cheesy Beer Skillet Potatoes
Adapted from The Beeroness
½ cup beer
2 cups shredded marble
½ cup 2% milk
1 teaspoon salt
½ teaspoon pepper
1 teaspoon garlic powder
½ teaspoon dry mustard
¼ teaspoon nutmeg
½ teaspoon smoked paprika
1 tablespoon cornstarch
2 tablespoon margarine
1.5 lbs potatoes, sliced
1 onion, sliced
1 cup panko bread crumbs

Preheat oven to 350
In a food processor add the beer, 2 cups cheese, milk, salt, pepper, mustard, nutmeg, garlic powder, and cornstarch.
Process until very smooth, about 3 minutes. Set aside.

Melt the margarine in a cast iron skillet over medium high heat. Add the potato slices and onions and cook until browned. Spread the potatoes out evenly around the pan.

Pour cheese sauce over the potatoes and allow to simmer for ten minutes.
Add the panko bread crumbs to the top. Transfer to the oven and cook until the cheese is melted and the potatoes are fork tender, about 30 minutes.


So as I am getting out all my veggies to prep I pick up a bag of coleslaw… it isn’t ziplocked and it spills all over the crisper drawer. Grrrrrrr.
Chicken Pot Pie
Adapted from Picture Perfect Meals
9 tablespoons unsalted butter, divided
1 tablespoon extra-virgin olive oil
2 large onion, diced
2 leeks, sliced (white only)
4 cloves garlic, pressed
2 cups potatoes, diced
1/2 cup celery, diced
1 rutabaga, diced
6 cups chicken stock
4 dried bay leaves
4 cups diced, cooked chicken
3 cups frozen peas and carrots
2 cups frozen corn
1/2 cup all-purpose flour
3 cups heavy cream
3 teaspoons dried thyme
1/4 teaspoon freshly grated nutmeg
2 cups spinach
1 large egg, plus 1 tablespoon water, lightly beaten
2 Deep dish Tenderflake crusts

Preheat the oven to 400.
In a large sauté pan over medium heat, melt 1 tablespoon of the butter with the olive oil. Add the onions and leeks, season with salt and pepper, and cook until it begins to soften, about 5 minutes. 


So when I went to defrost my chicken stock, would you believe my microwave went BBBRRRRRRrrrrrrrrrrr…. Nothing. SERENITY NOW!!!!! I hit it and what do you know BRRRRRRRR…. I’m sure that was a temp fix but really now I wonder who said, hitting never helps?

Add the garlic, potatoes, rutabaga, and celery. Season with a little more salt and pepper and stir. Cook for 2 to 3 minutes then add the stock and bay leaves.


Bring the mixture to a simmer and cook until vegetables are tender, about 15 minutes. Add in the chicken, peas and carrots, and corn and cook for 5 minutes more. In the last minute add your spinach. Set aside.
In a large saucepan, melt the remaining 8 tablespoons of butter over medium heat. Whisk in the flour and cook for 1 minute. Slowly pour in the cream, whisking constantly until smooth. Bring the mixture to a gentle simmer and cook, stirring frequently, until thick. Add in the thyme and nutmeg. Taste and season.

Pour the sauce into the chicken mixture and stir. Discard the bay leaves. Allow the filling to cool for about an hour.


Ladle enough pot pie mixture to fill your piecrust. Flatten the other crust and place over top. Pierce the surface several times with a sharp knife, brush the tops with some egg wash and bake until golden, about 25 minutes. 



Allow to cool slightly before serving.


I made extra so I could freeze some for dinners. I use these…
So I filled 8 of them. 2 more meals J When you want to cook them, thaw them, put puff pastry on the top and bake at 400 for 25 minutes. Don’t forget the egg wash.

So after dinner I took out the garbage and, you guessed it I forgot to buy garbage bags when I was out today. Thanks SBean LOL
