Roasted Honey Chicken Wings, “Chicken” Pad Thai Nachos, and Beef Nachos Grande

It is GAME TIME my friends!!!
Nope it’s not Superbowl… or apparently something called Probowl. (Serously? Probowl WTF?)
No it is even better than both of those, put together!
It is The Vancouver Canucks vs. The Edmonton Oilers.
Cue the duh duh duh duuuuuuuh music J
OK so yes we live in BC. Mom and Dad became Canucks fans when they moved out here. I don’t blame them. At the time the Winnipeg Jets had moved on and we were out of a home team. Some of us moved on and others never became FANS of another team.
My Besty’s man is a HUGE Oiler fan. He played hockey at a higher level and the Oilers were his team. In fact most people in Winnipeg (that I knew) became Oiler fans after the Jets took off (no pun intended) lol.
I have always just been a hockey fan. I probably know more about hockey than most guys. Growing up, yes I liked the Jets but they left when I was in my teens. Very soon after I became an Oiler fan. 
This worked well for me because Ninja grew up in St Albert during the Gretzky days and is a lifetime Oiler fan. My Besty and I with our men became the ultimate Oiler foursome LOL.
I have noticed though that when I call them during a Jets game … there seems to be a lot of cheering LOL I totally understand. If we were still there… who knows who I might cheer for?!?!
But.
I know who I CAN’T cheer for, the Canucks. LOL
It has become a thing in the house. Bets are made, almost always Ninja and I are the losers but it is fun trying LOL. All the money goes into the girl’s RESP’s. That’s right they are going to go to University via hockey game bets LOL.
We all put out respective jerseys on and cheer away! HBear may not have been born here but she is a BC girl. She loves the Canucks, much to Daddy’s dismay J

I even read all the Oiler blogs and stand faithfully by a team that is drowning in the big water. That’s right, they totally blow goats. BUT, I continue to cheer, buy merchandise (I bought Ninja a signed RNH puck for Xmas) and watch interviews, blogs, and Oil Change. I am a sucker, but what goes down has to come back up…. right?

So first thing this morning we began ribbing Dad…


So tonight I am making Game Day food!

We are having 2 types of Nachos and 2 types of Chicken Wings, plus a few Shrimp nests J

Who knows maybe we will convert Dad…


To set the record straight here… Dad was checking sizes when we were putting ion our Canadian Olympic jersey order last week, but hey, who can tell the future! LOL

Roasted Honey Chicken Wings
Adapted from My Kitchen Magazine
24 pieces of chicken wings
4 cloves of garlic – chopped
2 teaspoon of chili powder
1 teaspoon of salt
6 tablespoons of soy sauce
1 teaspoon of pepper
2 teaspoon of lemon juice
6 tablespoons of honey
Combine garlic, chili powder, salt, soy sauce, pepper, lemon juice and honey in your Ultimate Chopper.

Pour over wings and coat them in mixture. Cover and refrigerate for 2-3 hours or overnight, stirring occasionally.

Preheat oven to 400 degree F. Spread wings over a foiled pan, brush liberally with marinade.
Roast for 30-35 minutes until golden brown.
Turn the wings half way through the baking. Serve warm or at room temperature.

I also made BBQ sauce wings,

“Chicken” Pad Thai Nachos
Adapted from Closet Cooking

1/4 cup lime juice
3 tablespoons soy sauce
3 tablespoons brown sugar
1 teaspoon chili sauce (add to your liking)
2 teaspoons sweet chili sauce
2 tablespoons peanut butter
2 cups chicken, cooked and shredded *
1 (14 ounce) bag tortilla chips
1 cup mozza, shredded
1 cup taco cheese, shredded *
2 carrots, shredded *
3 green onions, sliced
1/4 cup roasted peanuts, chopped
1/4 cup cilantro, chopped
*****I used turkey instead of chicken. I still have turkey ion the freezer from our bird 2 weeks ago, so I used that instead.
For cheese I used a mixture of what I have in the fridge… Fulani and taco cheese.
I also have a cup of broccoli slaw left that I want to use up so I used that in place of the shredded carrots.*****

Simmer the lime juice, soy sauce, sugar, chili sauce, sweet chili sauce and peanut butter over medium heat until the peanut butter melts into the sauce, about 2-3 minutes, 


before mixing in the turkey.
Spread the nachos out on a baking dish, sprinkle on the turkey and sauce mixture, slaw mix and green onions followed by the cheese 


and broil until the cheese has melted, about 2-4 minutes, before topping with peanuts, green onions and fresh cilantro.


Beef Nachos Grande
1 bag tortilla chips
Salsa
3 Roma tomatos, seeded and chopped
1 small red onion, chopped
¼ cup cilantro leaves, finely chopped
½ teaspoon salt
½ teaspoon lime juice
Beef
1 tablespoon olive oil
1 lb ground beef
1 red pepper, chopped
2 clove garlic, chopped
1 teaspoon salt
1 teaspoon chili powder
1 teaspoon paprika
1 teaspoon ground cumin
1/2 teaspoon cayenne pepper
3 green onions, chopped
2 cups Taco cheese, shredded
¼ cup sour cream
Arrange chips on your broiler pan.
Combine salsa ingredients in a bowl and set aside for flavors to marry.

Heat a medium nonstick skillet over medium high heat. Add oil, garlic, onion and peppers to the pan and sauté 2 minutes,


then add meat and crumble. 


Season meat with salt, chili powder, cumin and cayenne pepper. Cook meat 5 minutes, then reduce heat to low.
Pour beef mixture on top of tortillas and top with shredded cheese.
Put under broiler until cheese is bubbling.
Top with fresh salsa, sour cream and green onions.


GO OIL!!!!
