Earth Day Morning Glory Muffins

Happy Earth Day!
But I am getting ahead of myself… Happy Easter!
We had a great weekend. My sister and BIL and Sweet Little Norah came for a visit! Actually they even came early lol. 

On Thursday night my Bro and my SIL called to wish me a happy birthday, at 8:30 I heard a knock at the door… 

Ninja and Dad are bowling and I was freaked, what a life I lead hey? 

So I told them to call 911 if it was a creeper lol I opened the door and I saw a baby at the door sitting on a blanket.
A baby that upon closer inspection looked an awful lot like my niece…
I looked down the driveway and nothing.
LOL Ummmm where are your parents? Hahaha Then they popped out! LOL
So I got a whole extra day with them!!!

First I went and got a much needed haircut and then my BC Bestie took me out for lunch… without kids!!!!
Even better, my sister got to meet her finally and enjoy a nice lunch with us J

Next we picked up HBear and headed to Starbucks and mani/pedis!

The next day HBear went to her Bestie’s birthday party and we went up to see Mom, Sis took beautiful flowers.

We had a few drinks and filled eggs for Easter morning. This year we hid plastic eggs with all different dried fruits. I bought dried cherries, mangoes, pineapple, apricots, blueberries, apples and papaya. Mmmmmm

We also hid some chocolate eggs and lollipops J

The girls had a blast finding eggs. SBean was awesome for her first real hunt! 

The girls have birthdays in early winter… I use Easter as a way to get them all their spring needs. I believe in buying necessities and wrapping them up like presents LOL

 We met my In-laws for brunch at this cute little restaurant called Opus…. Yes we are sitting half inside half outside!!! They opened the wall of windows because it was such a beautiful day!

Then we took the kiddies to the park!

And capped off a great day by having a GREAT diner and my In-laws!

My newly crafty sister made these amazing place settings! HBear was very curious on how the chocolate got in there!! Actually, so was Ninja and his Dad!!! LOL

I feel so guilty.
My last few posts left people feeling really sad for me.
My sister even cleaned my bathroom for me.
My MIL made me a REAL baked cherry cheesecake.
It was ah-mazing!!!! OMG my mouth is watering just thinking about it!!!

So I guess I don’t reeeeaaaallllyy feel thatguilty LOL

The girls had a bubblebath and then they all put on their matching Easter Pj’s from Papa!

All in all it was a great weekend.
Now I feel like I have a little holiday hangover lol.
In fact yesterday I took the girls to the park in the morning but spent the rest of the day cleaning LOL
Today was Earth Day. It was a very wet Earth Day. I am sooo happy it finally rained. We have not had any precipitation in weeks. Everything is on the verge of blossoming and turning green.
By the time HBear got home from school it looked like a different world…

We played outside for a while, then SBean and I prepped for some Springtime muffins!

HBear stayed on the wet deck looking for worms and skipping J

These muffins were by request, kinda. HBear asked if we could have breakfast dessert.

Morning Glory Muffins 
Adapted from Finding Joy in My Kitchen
2 1/3 cups flour
1 cup brown sugar
3 teaspoons cinnamon
2 teaspoons baking soda
1/4 teaspoon salt
3 eggs
3/4 cup applesauce
1/2 cup coconut oil
1 teaspoon vanilla
2 cups carrots, grated
1 apple, grated
1 (8 oz) can crushed pineapple, drained
1/4 cup raisins
1/4 cup dried blueberries
1/2 cup flaked coconut
Preheat oven to 350.
Mix together flour, brown sugar, cinnamon, baking soda and salt. 

In another bowl, combine eggs with applesauce, oil and vanilla. 

Combine the wet and dry ingredients and stir well. 

Fold in the carrots, apple and pineapple.  Stir well. 

Toss in raisins, dried fruit and flaked coconut. 

Fill lined or lightly greased muffin tins until they are 3/4 full.  I did 12 regular sized, 24 minis, and 3 jumbos.

Bake for 20-25 minutes; check for doneness with a toothpick inserted in the center of one of the muffins in the middle of the tray.  When the toothpick comes out clean, the muffins are ready. 

Cool in the pans for 5 minutes. 


These were voted a huge thumbs up, in fact, the girls decided to even have them for dinner dessert LOL
