Sweet & Spicy Noodles with Grilled Chicken and Strawberry Poppyseed Salad

Yeah I am so tired I can’t even get the words out.

End of the school year = BUSY!

We have been busy with:

The deck (pictures to come)

The carnival
Visitors
Taking down wallpaper (pictures to come)
Sparks camp preparation
Road trip preparation
Dance recitals
Soccer
Business

and you know… Regular life 🙂

Seriously, it is busy right now. On June 5th another lady and I are putting on the school carnival. We have been working hard and I HOPE it turns out well!!!

HBear has her 1st sleepover camp this weekend. This is crazy?! She is 5.

You should see the camp list that was given to us! We have been out buying gear all week! This is Cray-Cray. In fact, today, I got an email from the leader letting us know cougars have attacked horses and deer in the camp this week.

Whatevs! It’s just my first born.

Seriously? I am going to have a heart attack.

Ninja’s brother came in last weekend! It was great to see him. We were sitting on the couch waiting for him to arrive when my SIL and baby walked by?!?!?! What a wonderful surprise!

So lucky us we have been doing some visiting 🙂

It’s been a pretty good 2 weeks 🙂

The other day I made noodles. It was SUPER yummy and really easy!

Sweet & Spicy Noodles with Grilled Chicken

 
3 chicken breasts, marinated in peanut sauce (See recipe)
1 box spaghetti, fully cooked 
3 cloves garlic, pressed
1 tablespoon  oil
1 pepper (I used half red and half yellow)
1 package of button mushrooms, halved
1/3 cup vegetable oil
1/2 cup white vinegar
1/3 cup sugar
1/8 cup sesame seeds
4 tablespoons soy sauce
1 teaspoon. red pepper flakes
chopped cilantro

chopped peanuts 

Peanut Sauce

Adapted from Love Food Eat

2 tablespoons peanut butter
2 tablespoon sesame oil
4 tablespoons soy sauce
2 tablespoon brown sugar

 

1 teaspoon sesame seeds
 
Add all ingredients to a bowl and whisk. Place chicken in a ziplock and pour sauce in. Mix it up and refrigerate overnight.

 


A trick I learned from my FIL is to add a bit of oil to the noodles while you make the sauce. It keeps them from getting all starchy and clumping together. For this dish I tossed them in a little sesame oil.


 

In a large fry pan, over medium heat, add oil and saute peppers and mushrooms. Just for a few minutes, you want to keep them crisp. Remove to a bowl. 

 

Add oil to pan and brown the garlic. 
 

Mix the vegetable oil, vinegar, sugar, sesame seeds, soy sauce, and red pepper flakes in a bowl. 


Add to pan.

 

 

Add the cooked noodles to the sauce and stir to coat, add veggies, keep over the stove on low heat while you grill the chicken. 

 

 

Slice chicken and place on top of noodles and veggies.

 

 

Garnish with chopped cilantro and chopped peanuts.

 

 

 
Today after the Children’s Festival, because it was just a HOT day, I decided to go salady. This was Ah-Mazing! PLUS I got to use my new salad dressing bottle. SCORE! lol
 
Strawberry Poppyseed Salad
Adapted from Crème de la Crumb
 
1 bag of Romaine hearts, chopped
2 cups strawberries, chopped
8 strips bacon, cooked and crumbled
½ red onion, diced
½ cup herb and garlic feta cheese, crumbled
 
Dressing
2 cloves garlic, pressed
¼ red onion, diced
⅓ cup sugar
⅓ cup white vinegar (I used raspberry vinegar)
  cup strawberries, chopped
½ cup grapeseed oil
¼ teaspoon salt
¼ teaspoon pepper
1 tablespoons poppyseeds
 
In a large bowl toss together lettuce, strawberries, bacon, and red onion. (I let everyone dish up there own, that way there is no waste)

 

Add all dressing ingredients to you Ultimate Chopper and pulse 1-2 minutes until smooth.

Pour dressing over salad and top with feta cheese.
