Father’s Day, Honey Dijon Basa, Sesame Green Beans with Water Chestnuts

 

Be a dad. Don’t be “Mom’s Assistant”…. Be a man…. Fathers have skills that they never use at home. You run a landscaping business and you can’t dress and feed a four-year-old? Take it on. Spend time with your kids…. It won’t take away your manhood, it will give it to you.

Growing up, my Dad was a hands on Dad. In fact, I remember Dad being a stay-at-home Dad when I was a kid. And he kicked ass at it too. My dad didn’t know how but always tried to put in our ponytails LOL

I picked a man that like my father, he believes in being a Dad at all levels. He gets up in the middle of the night and he changes diapers like a pro. Tonight he came home from work and mowed the lawn. The after dinner he took HBear to his parents… to mow the lawn 🙂 When they got home they took a hot tub and discussed vertebrates. LOL 

They deserved a nice day. 🙂

We started Father’s Day off by letting Daddy sleep in.

So we, SBean and I, started the the day off at 5:14am.

Happiness.

HBear slept in until 8:30 and the guys got up at 8 🙂

We made pancakes with fresh fruit, whipped cream and maple syrup!

 

 

Earlier in the week HBear, SBean and I made Papa and Daddy’s gifts. My Dad is crazy about nuts. So we got him a variety of different kinds 🙂

For Ninja, I took the girls to 7-11 for the very first time!!! HBear was amazed lol. We bought a bunch of chocolate bars they we thought we could write a story out of. I of course saw the idea on Pinterest… yeah apparently we don’t have any of those kinds here in Canada lol so we made our own 🙂

I wrote it and HBear traced the letters as she spelled the words.

 

I love cards. But what do you do with yours? I keep all mine and it is kinda ridiculous. I also keep all the girls. OMG we are going to have huge boxes of cards that we will NEVER look through. 

I’m pretty sure this is how hoarders start 🙁

BAHAHAHAHA

So anyways I only spend money on cards for thank yous and sympathy. They always have better ideas than I do and the right words too!

HBear made Ninja a picture frame and 2 cards.

After breakfast I cleaned up and put SBean down while Ninja and Dad took the girls to the SS Sicamous’s 100 year anniversary. It was pirate Day 🙂

After all the pirate fun we all went to Kelowna for a little Cosmic Bowling!!!

 

 

 

We even played a game of 10 pin 🙂

 

It was a really fun day. No meltdowns reeealllly. SBean was done after bowling so we called the cute little restaurant I had reservations at and cancelled 🙁 We went home had a glass of wine and bought a roasted chicken and wedges from Safeway LOL. 

Tonight we are having fish, roasted “BBQ” Potatoes and green beans 🙂

Before I talk recipes though I want to talk about a little thing called an ULU Knife. Ever heard of it? Me neither until a few weeks ago. My Besty Mom’s Mom went on an Alaskan Cruise and picked me up a ULU Knife and a bottle of Amarula. Apparently I am nice 🙂

The Amarula BTW Amazeballs. It is so good I even poured a little lot over my ice cream for a late dessert the other night! YUMMERS.

So the knife. Holy Shnikies! it ROCKS! Literally. I did all my chopping and used it instead of a garlic press. Chopping your garlic is ALWAYS better than pressing it, the oils all stay in the garlic when you chop it. But, it can be lethal lol. The Alaskan knife is awesome. No more bleeding! LOL It even comes with this chopping block and chopping bowl. AWESOME! Thank you so much 🙂

 

 

 

Honey Dijon Basa
Adapted from Allrecipes
2 tablespoons honey
2 tablespoon mayonnaise
1 tablespoon olive oil
1 tablespoon Dijon mustard
½  tablespoon lemon juice
1 teaspoon thyme, chopped
½  teaspoon paprika
1 clove garlic, pressed
3 basa fish fillets

Mix honey, mayonnaise, olive oil, mustard, thyme, garlic, paprika and lemon juice together in a bowl.

 

Place fillets on a piece of aluminum foil. Drizzle honey sauce over each fish fillet. 


Gently wrap the aluminum foil around the fillets, crimping the foil together over the top to seal into a packet.

BBQ  fillets until fish flakes easily with a fork, about 15 minutes. 

Drizzle with leftover sauce from foil packet.

 

Sesame Green Beans with Water Chestnuts
5 oz mushrooms, sliced (I had 6… mushrooms not ounces lol)
2 teaspoon oil
1 teaspoon sesame oil
3/4 lb of green beans, ends trimmed
1 small can of sliced water chestnuts (liquid drained)
2 cloves of garlic, pressed
2 tablespoons water
4 teaspoons soy sauce

1 teaspoon Worcestershire Sauce
2 teaspoons sugar
Sea salt and freshly cracked pepper, to taste
Sesame seeds
Preheat the oil and sesame oil in a large skillet over medium high heat.
Add the mushrooms to the pan and let them sit for 2 minutes before flipping them to brown on the other side for 2 minutes.

 

Add the garlic, green beans, and water chestnuts; season with salt and pepper.

 

Combine the water, soy sauce, Worcestershire, sugar, salt and pepper, mix well.

Pour the sauce into the pan and cook the green bean mixture for 3-4 minutes, 



or until the green beans and tender-crisp.

Remove from the heat and serve with sesame seeds sprinkled on top.

 

 

 

Yesterday rained and we painted… all day. BUT we did get the majority of the painting done.  🙂 Ninja and Dad have to paint our bedroom and the laundry room when we are gone and I have to do the windowsills. But other than that, the painting is done!

It looks sooooo awesome. I can’t wait until I can show you!!!!!

Today was the first strike day. I had the beds striped and all the towels gathered and laundry in full swing with arts and crafts in the diningroom by 8:45am… it is a night for a little BIG glass of Amarula 🙂
