For real though.. sigh
We have been soooooo busy!
 
Since the last day of school before Christmas up until this very day… we have been doing LOTS of super fun stuff 🙂
 
Every weekend we could find something new to do in the Valley. Coming from Winnipeg, the closest place to visit was either Regina or Minneapolis. Here, there are new valley’s, big cities, and cool attractions at every turn. In the past 5 years we have just begun finding out how much our home has to offer 🙂
 
Before Christmas Ninja’s parents, Dad and the 4 of us went to Osoyoos to the largest model train display in Canada. It was AWESOME!

 

 

 

 

 

 

 

 

 

On our way home we stopped to grab lunch. While Ninja and Dad were grabbing take out I sat with the girls in the van. All of a sudden I heard the loudest TOOT and the smell that instantly wafted through the van almost made me throw up!
 
I got out and laid SBean down in the back of the van for a changing.
 
OMG It was every where! I felt like a first time parent seeing the first up the backer poop overload. I tried to keep her still while I searched the diaperbag for supplies.
 
The week before this Poop Explosion, SweetPea was sick and my Sis and BIL had to strip her down because they didn’t have a spare set of clothes. I laughed at them and gently lectured about ALWAYS having an extra set of clothes in the car!!!
 
As if I don’t have an extra set of pants!!!!
 
Seriously???
 
Well I will get the OMFG I forgot to put the wipes back in the bag too!!!!
 
Amateur!
 
So I cleaned her up with at least 42 dry napkins and put her back in her chair sans pants.

Of course while we were driving I saw the lake and the dozens of swans beautifully gliding through the glassy water. We HAD to stop!!! We wrapped SBean up in Ninja’s jacket and took a hike to the lake side. By the time we got there the swans had crossed the lake and were on the other side 🙁

 

 

We went out for dinner,

I went shopping on Boxing Day 🙂

 

Ok so here’s the story…

I got a $100 GC at the Bay for Christmas. I also got 2 woks. So I was going to take 1 back to the Bay and buy Ninja and I new pillows. We NEED new pillows, my neck has been killing me on cheap pillows!

I picked out a “few” things to try on 🙂

When I went to the register he said “ok that will be $255 please.”

AHHHHHHHHH. I put $100 on GC and the rest on my credit card.

I started feeling buyers remorse right away.

So I went out to the van and got the wok and the sweater I wasn’t sure about and went back inside to return them both and hopefully justify spending that much the day after Christmas.

OK here is a GC with the returned amount.

No No No I need the balance put onto my credit card!

Sorry.

I also got a GC for Winners so I decided to go shop some more to feel better 🙂

At Winners I found a great pair of jeans. I spent the whole GC and spent $11 out of my pocket.

I then went BACK to the Bay for the 3rd time.

I walked in and went up to the register… remember it IS Boxing Day lol. I said Hi I just bought these jeans and I would like to return them.

I aslo just bought these amazing pillows and would like to return them too.

After the lady returned the items I said, OK now I would like to rebuy these wonderful pillows using this GC 🙂

The people in line were glaring at me!!

LOL So funny!!!

At the end of it all I only spent $9 out of my pocket!

So I went to Value Village to reward myself 🙂

When I got home I put all my new stuff in the laundry and had a drink 🙂

I am so crazy.

HBear and I had a date at the movies!
 
We saw Annie! After she was like “Mommy there were so many differences in this one compared to the REAL Annie” LOL Oh yeah what was the biggest difference?
 
“They are Foster kids NOT Orphans!!!!”

AND while there was snow… HBear went sledding! That’s right after that crazy snowfall last week… we no longer have enough snow to go sledding?!?!?!


We are looking forward to doing even more FUN stuff this year so stay tuned 🙂

Yesterday I got to try out my new wok!!! Exciting! This was a fabulous stirfry that is easy and uses ingredients you probably already have!

Honey Pork Stir Fry

Adapted from Pass the Sushi
 
4 center cut pork chops, cut into thin strips
1/2 cup soy sauce
4 cloves garlic, pressed
1 tablespoon ginger, grated
2 teaspoons sesame oil
2 tablespoons rice wine vinegar
1/2 teaspoon red pepper flakes
1/3 cup honey
¼ cup hoisin sauce
2 tablespoons dark brown sugar, firmly packed
1 tablespoon vegetable oil
1/2 head broccoli, cut into bite size florets
1 red pepper, sliced
Mushrooms, snap peas, green beans, carrots or whatever vegetables you have 🙂
1 tablespoon 
1/4 cup sesame seeds
2 cups cooked rice
2 tablespoons cornstarch

 

Combine soy sauce, garlic, ginger, sesame oil, vinegar, and red pepper flakes. 

Pour half over pork in a resealable plastic bag and marinate for at least 1 hour and up to 24. 

Add honey, hoisin, and brown sugar to remaining marinade.
 

When ready to prepare, heat oil in a wok or skillet over medium/high heat until shiny. Toss in pork and cook, 3 minutes per side. Remove pork and cover and let rest while preparing the vegetables.

 

Toss in the remaining honey mixture, garlic, broccoli, peppers, and other desired vegetables and cook to desired doneness. 


Take out about 2 tablespoons of sauce and mix with cornstarch (make a slurry). Mix it into the wok.


Add pork and mix together. Serve over rice, top with sesame seeds.
