SBean has been learning all about teeth and oral health lately at Preschool. For sharing she is going to bring this cute little Tooth Fairy Bag made especially for her from Beyond the Stitch 💛.


Did you know that up until kids are 9 they don’t have the dexterity to brush their teeth properly? I remember reading that when I was pregnant with HBear. I read books upon books of things I would never need or DID need but I had read so much that my head was so full that I didn’t remember it when I needed it. But… I do remember reading that 😜.


The other day I looked at HBear’s teeth and they were like, gross 😷. I said, “did you brush your teeth today? She look up and she was like, “oh yeah I just did, can’t you tell?” 

I then walked her up-and-down our hallway and asked her what she saw on the walls. She said, “pictures.  Pictures of family.”

I said, “you know what I see? Smiles.”

My 8-year-old daughter fancies herself an artist you see. In fact if you ask her what she wants to be when she grows up she will say, an artist. My 8-year-old daughter who sings songs about multiplication, raps about the solar system and thinks coding is a reward for good behavior… Wants to be an artist 🙄

I asked her what hangs on walls and she replied, “art.” I then explained to her that all the smiles up on our walls are art and you are the artist of your very own masterpiece, your smile. You must polish each tooth and keep it as clean as possible so that your smile always stays your finest work of art.


She loved that! She totally gets where I am coming from. I told her that when you die and you are buried… many years later if someone was going to dig you up, all that would be left are your bones and your teeth. Your smile will last forever so you need to keep good care of it. Since then she has done a great job of being a smile artist 😁.

Grooming is hard 😂 It is! I have acne and rosacea. Since my early 20’s I have had sensitive problematic skin. It makes me less confident and it is something I am self conscience about. However, I don’t wear makeup to cover it up all that often. I find when I wear makeup my skin gets worse so it is a bad circle of skin issues for me. I have been to Dr’s and I have talked to makeup consultants, dermatologists and beauty counter Ladies. They are all at a loss. The stuff that helps acne makes my rosacea worse. The stuff that helps rosacea flares up my acne. It is very frustrating. PLUS I don’t like chemicals and I refuse to spend a fortune on a skin regime… especially if you don’t know if it will work! I have been down that endless path before.

So I have been researching and I think I found something!

I have begun washing my face with goat’s milk soap, I made a toner out of 3 parts organic apple cider vinegar and 2 parts distilled water, and I have been using coconut oil for a night time cream. (I use a fabulous daytime moisturizer my In-Laws buy me in Aruba that is made out of aloe vera… I love it!).

So besides the fact that my face smells like vomit 😳 I think it’s working.

The redness sure seems to be fading. I broke out with some large zits but that might just be my face adjusting to the change, I will continue for a month and let you know!

Last month… wow actually 2 months ago… it was my MIL’s birthday. She watches the kids when we go away, she helps get the kids to programs if I need help, she is always there of me if I need advice, and she likes taking SBean during hot lunch days. I’m pretty lucky is what I guess I am saying 😊. The very LEAST I can do is make her a special dinner on her birthday. I know she likes when I make enchiladas but I made them for my SIL in the summer so I wanted to change things up a bit. This time I made Thai flavoured enchiladas! They were the BOMB! I will make these again. In fact, I want to make these right now! LOL they are soooo good! The slaw was a perfect side to this dish as you were left full but not heavy. Please try this and after you do… let me know how much you loved them!!!

Sweet & Sour Pomegranate Thai Chicken Enchiladas
Adapted from Half Baked Harvest


1 1/2 cups sweet Thai chili sauce
1/2 cup soy sauce
1/3 cup dark brown sugar
1 tablespoon peanut butter
1 tablespoon tomato paste
3/4 cup pomegranate juice
1/4 cup rice vinegar
Juice of 1 lime
1 teaspoon fish sauce
2 cloves garlic, pressed
1 inch fresh ginger, grated

2 cups cooked chicken, shredded
2 bell peppers sliced thin
1/3 cup cilantro, chopped
1 1/2 cups mozzarella cheese, shredded
10 Flour Tortillas
Sliced avocado, pomegranate arils, and chopped cilantro, for serving

Preheat the oven to 350. Grease a baking dish.

Combine the sweet Thai chili sauce, soy sauce, dark brown sugar, peanut butter, tomato paste, pomegranate juice, rice vinegar, lime juice, fish sauce, garlic, ginger, and pepper in a sauce pan. Bring the sauce to a boil, reduce the heat and simmer 10-15 minutes or until sauce has thickened slightly. Remove from the heat and set aside.


In a bowl, add the shredded chicken, sliced bell pepper, cilantro and 1/2 cup shredded mozzarella. Pour in about 3/4 cup of the sauce or just enough to coat the chicken and make it saucy. Toss to coat.



Spoon a little of the chicken mixture down the center of each tortilla, tuck and roll, placing the tortilla, seam side down, into the baking dish.

 


Pour the remaining sauce over top of the enchiladas and then top with the remaining 1 cup mozzarella.

 


Transfer to the oven and bake for 30 minutes, until the cheese has melted. 

Remove and top with diced avocado, chopped cilantro and pomegranate arils.


Thai Style Coleslaw
Adapted from My Kitchen Escapades


1 tablespoon Thai sweet chili sauce
1 garlic clove, pressed
1 teaspoon ginger, grated
1 tablespoon soy sauce
1 teaspoon sesame oil
2 tablespoons sugar
1/2 teaspoon fresh ground black pepper
1/3 cup rice wine vinegar
1/3 cup peanut oil

Slaw:
1 bag of coleslaw mix
5 green onions, chopped
1/4 cup cilantro, chopped
roasted, salted peanuts, chopped

Combine all the dressing ingredients into a large bowl and whisk well together until the mixture comes all together. 

In a bowl, add the ingredients for the slaw, except for the peanuts, and toss together with the dressing. 

Allow the slaw to sit for 10-15 minutes then serve immediately with the peanuts sprinkled over the top.

Spring is… so not here yet.

Seriously, it is freaking cold still! We got snow this weekend! It didn’t stay but we never get snow this late into “winter”. Usually by this time we are out golfing, my tulips are coming up and I am switching over the closets to spring clothing. Last week we had a little sunshine and a ProD Day so we managed to get outside and do our first Geocaching of 2017!

 
 

Every Friday night Ninja and I pour ourselves a drink 🍻 (or 2… or 3) and have “date night” in the form of our Podcast, How Was Your Week, Honey? This week was episode #5!!!

On Saturday Ninja took the Girls to Lego:Batman. Ninja and the Girls gave it 2 thumbs up.

On Saturday night we went to the Vees game! The Vees are our local BCHL team. We went for Pink Shirt night (anti bullying night) as well as show your school spirit night. Unfortunately every school filled a section and our school had us and 1 other family. We still cheered hard though… not enough to win the $500 for our school but hard 😉. We left halfway through because SBean was done but it was a fun night!

Throughout the week, I had meetings for fundraising for SBean’s Preschool, DPAC meetings and normal life things like laundry and cleaning… while SBean danced!

HBear created a masterpiece using wood, nails, wire and paint. She made a sign that said her Sister’s name 💕.

and the Girls tried out their new sweaters Grandma knit for them!

They also wore the shirts we created 2 years ago for pink shirt day.


SBean started swimming lessons again. It is all awesome except the timing. Usually HBear is in from 3:30-4:15 and I go upstairs and watch her as I run. Now, SBean goes in at 4:00 so we hang out reading, snacking and leappadding. Is it bad if I run while she sits??? I can see the judgment now 
😂. Thank goodness their were no Mom’s watching yesterday because I ran while she played LeapPad and ate…. mini marshmallows 😂!

For the talent show this year, HBear is doing an interpretive dance to her 2 Besties singing I Don’t Know My Name by Grace Vanderwaal. She has been practicing so hard! She is really trying to get her back bend into a back walkover down pat.

Friday was Hotdog Day!

On Saturday Ninja did the most incredibly sexy thing 😍! He took our Girls to the Daddy/Daughter Snowflake Ball ❄️. Why sexy you ask? I find a man treating his daughters like Princesses to be the most attractive quality I could hope to see in a man. It truly made my heart swell to bursting to see them all dressed up and their eager faces. They had such a fantastic time! I even put lipgloss on them and curled their hair. Daddy even wore a tie and shaved!

It was the 1st annual Ball and it was such a success! Ninja said it was very well done. There was dancing, snacks, dinner, the limbo, makeup stations, an ice cream bar, they played crazy hat games and oreo games, had craft stations and a photography station. 

 

We received the sample shots from the Photo Booth today! I love them 💕!

 

Oh and then just to put a big exclamation point on the SNOWFLAKE BALL… it snowed! Mutha F***ing snow in the last week of February!!! WTF? ❄️❄️❄️❄️

My FitBit challenge took a little dive this past week and I only reached my goals 1 time 🙁. This week I asked my Sis, BIL, SIL, and cousin to join me in a challenge. I find you will get up and move a bit more when you feel accountable… not competitive just friendly motivation for family.

I just joined another challenge to sharpen my competitive edge 😉.
