Life Rules & 20 Minute Moo Shu Pork

Life is about making your own happiness – and living by your own rules.

Aimee Mullins

A while back a fellow podcaster asked his audience, if life had rules what would they be?

Whoa! Hey?

It got me thinking.

So… if life had rules this is what I think they would be…

1. Donโ€™t be afraid to try. Try new things, try new food, try your best, try again.

2. Do yoga. It will quiet your mind, calm your spirit, and bring you peace in this chaotic world.

3. Let your weird shine. Normal is boring.

4. Time is a priceless commodity donโ€™t waste it on petty shit.

5. Love mornings. If you wake up happy it will shape your entire day.

6. Take enough. Only take what you need and then pass the rest along.

7. Laugh. Laugh loudly and laugh lots.

8. Not only accept help but ask for it. It doesnโ€™t make you weak it makes you stronger. There is strength in numbers.

9. Ignore high school bullshit. Itโ€™s only a few years of your life and then you move on.

10. Become a parent to a child or a fur baby. Loving something more than yourself will provide you with more satisfaction than anything thing you will ever do in your life.

11. Find joy in the game AND in the outcome whether you win or you lose.

12. Respect yourself. If you donโ€™t no one else will.

13. Never forget how much your Mom and Dad love you. They were the first people to know you… really know you. They wiped your ass and cleaned your vomit and watched your very very long Xmas plays. There will be times in your life when you have to make a choice, choose your family.

14. Keep a tidy home. Keep a tidy desk. A clean space allows you to have a clear mind.

15. Be as critical of yourself as you are of your enemies. Be as easy on yourself as you are on your loved ones.

16. Make lists. Not only make them but actually do what is on them. Checking off tasks will show you your accomplishments and you will feel less overwhelmed with how long your list is.

17. Clean up whatever you are doing before you start something else.

18. And for fucks sake when you take something out put it back where you got it from.

19. Only say sorry if you mean it. If you mean it, you won’t do it again. The same goes for promises and I love you.

20. And most importantly, Listen. Listen to hear. Listen to learn. Donโ€™t listen just to reply. Listening is a skill, probably the most important skill you will learn over your lifetime. Keep working at it. Become an expert listener.

This week Ninja and I listened to each other as we handed out a few Beef and Bouquets on Episode 55 of How Was Your Week, Honey? You can find it, HERE!

While the Olympics were on we had easy dinners that we could eat in the living room with out making too much of a mess ๐Ÿ˜‚ We LOVE tacos but Dad isn’t the biggest fan so I try to change it up every once in a while. This time I tried Asian tacos! Or Moo Shu Pork Wraps ๐Ÿ˜‰ They were amazeballs! Everyone loved them but sadly there were no leftovers.

20 Minute Moo Shu Pork

Adapted from Gimme Some Oven
NUTRITION: 438 calories/wrap

1/2 cup hoisin sauce
1/4 cup rice vinegar
2 tablespoons oyster sauce
2 tablespoons soy sauce
1 teaspoon sesame oil
5 cloves garlic, pressed

1 pound boneless pork chops, sliced into very thin strips
3 tablespoons oil
2 large eggs, whisked
1 (14-ounce) bag coleslaw
1 bell pepper, chopped
1/2 cup mushrooms, sliced
2 tablespoons sesame seeds
4 green onions, thinly sliced (green parts only)
6 flour tortillas

Whisk first 6 ingredients together in a mixing bowl until combined. Separate the marinade into 2 portions and set aside.

Add the pork to half of the marinade, and toss until the meat is evenly coated in the marinade. Set aside for 5 minutes.

While the meat is marinating, heat 2 teaspoons oil in a pan over medium heat. Add the whisked eggs, and let them sit and until they are cooked and form a large omelet. Set aside. When you have a chance, chop the omelet into small, thin pieces.

Return the pan to the stove, and increase heat to high heat. Add 1 more tablespoon of oil and add meat, discarding the marinade. Saute the pork, breaking it up and stirring it occasionally, until it is cooked and tender, about 3-4 minutes.
Transfer the pork to a separate plate, and set aside.

Add the remaining oil to the pan, along with the coleslaw, peppers, mushrooms and half of the green onions. Saute for 2-3 minutes, or until the cabbage begins to wilt and softens.

Add in the reserved marinade for the sauce, and toss to combine. Cook for an additional 2 minutes. Stir in the cooked pork and chopped eggs, and toss until combined. Taste, and season with extra salt and pepper as needed.

Sprinkle with the remaining green onions and sesame seeds.

Serve immediately in flour tortillas.

This week my head cold kept me down and SBean ended up with a fever and a wicked cough. Oh, and my January Plank Challenge, February Burpee Challenge and March Push Up Challenge has left me with a pulled tendon in my right arm/wrist ๐Ÿ˜. So it was pretty low key. Did I mention the snow? Seriously? I’m am so done!

I received the professional pictures from the Daddy/Daughter Snowflake Ball. They aren’t as nice as last years but it is a beautiful shot anyways ๐Ÿ’•

On Monday I had to call in the Appliance Fixer because we woke up to a fridge/freezer that was warm and smelly. While the fix it guy was here I asked him to look at the oven. It is a bit wonky and sometimes it doesn’t heat up to the required temperature and sometimes it gets so hot it burns things. Not cool.

So apparently BOTH appliances weren’t worth fixing and we had to get a new fridge and oven. Of course the delivery was set to be between 10-2 so of course they got there at 4:30 ๐Ÿ˜’
SBean had a playdate with PSBesty while HBear had extra dance classes this weekend. Competitions are coming up and they just need a little extra time to get all those tricks down. While we were chatting the other night she answered while sitting in different pretzel shapes… without even realizing it! ๐Ÿ˜‚

I cannot believe it snowed again this week! Spring in the Okanagan Valley has always been 1 of my favourite seasons but this year it is killing me. I met MBesty for her birthday lunch and it was snowing massive flakes. I may have been wearing a toque but my new Roseberry LipSense says SPRING!

HBear is still going strong in her swimming! She loves being on the swim team and has really focused her year on dance, swim, yoga and curling.

My poor Bean. She has been a cuddle machine as she sniffles, coughs and burns with fever. Poor kiddo ๐Ÿ˜ž.

Hoping for a healthier week for my family and yours ๐Ÿ’›!
