A while back a fellow podcaster asked his audience, if life had rules what would they be?
1. Donโt be afraid to try. Try new things, try new food, try your best, try again.
2. Do yoga. It will quiet your mind, calm your spirit, and bring you peace in this chaotic world.
3. Let your weird shine. Normal is boring.
4. Time is a priceless commodity donโt waste it on petty shit.
5. Love mornings. If you wake up happy it will shape your entire day.
6. Take enough. Only take what you need and then pass the rest along.
7. Laugh. Laugh loudly and laugh lots.
8. Not only accept help but ask for it. It doesnโt make you weak it makes you stronger. There is strength in numbers.
9. Ignore high school bullshit. Itโs only a few years of your life and then you move on.
10. Become a parent to a child or a fur baby. Loving something more than yourself will provide you with more satisfaction than anything thing you will ever do in your life.
11. Find joy in the game AND in the outcome whether you win or you lose.
12. Respect yourself. If you donโt no one else will.
13. Never forget how much your Mom and Dad love you. They were the first people to know you… really know you. They wiped your ass and cleaned your vomit and watched your very very long Xmas plays. There will be times in your life when you have to make a choice, choose your family.
14. Keep a tidy home. Keep a tidy desk. A clean space allows you to have a clear mind.
15. Be as critical of yourself as you are of your enemies. Be as easy on yourself as you are on your loved ones.
16. Make lists. Not only make them but actually do what is on them. Checking off tasks will show you your accomplishments and you will feel less overwhelmed with how long your list is.
17. Clean up whatever you are doing before you start something else.
20. And most importantly, Listen. Listen to hear. Listen to learn. Donโt listen just to reply. Listening is a skill, probably the most important skill you will learn over your lifetime. Keep working at it. Become an expert listener.
While the Olympics were on we had easy dinners that we could eat in the living room with out making too much of a mess ๐ We LOVE tacos but Dad isn’t the biggest fan so I try to change it up every once in a while. This time I tried Asian tacos! Or Moo Shu Pork Wraps ๐ They were amazeballs! Everyone loved them but sadly there were no leftovers.
20 Minute Moo Shu Pork
1/2 cup hoisin sauce
1/4 cup rice vinegar
2 tablespoons oyster sauce
2 tablespoons soy sauce
1 teaspoon sesame oil
5 cloves garlic, pressed
3 tablespoons oil
2 large eggs, whisked
1 (14-ounce) bag coleslaw
1 bell pepper, chopped
4 green onions, thinly sliced (green parts only)
6 flour tortillas
Whisk first 6 ingredients together in a mixing bowl until combined. Separate the marinade into 2 portions and set aside.
Add the pork to half of the marinade, and toss until the meat is evenly coated in the marinade. Set aside for 5 minutes.
While the meat is marinating, heat 2 teaspoons oil in a pan over medium heat. Add the whisked eggs, and let them sit and until they are cooked and form a large omelet. Set aside. When you have a chance, chop the omelet into small, thin pieces.
Return the pan to the stove, and increase heat to high heat. Add 1 more tablespoon of oil and add meat, discarding the marinade. Saute the pork, breaking it up and stirring it occasionally, until it is cooked and tender, about 3-4 minutes.
Add in the reserved marinade for the sauce, and toss to combine. Cook for an additional 2 minutes. Stir in the cooked pork and chopped eggs, and toss until combined. Taste, and season with extra salt and pepper as needed.
HBear is still going strong in her swimming! She loves being on the swim team and has really focused her year on dance, swim, yoga and curling.
My poor Bean. She has been a cuddle machine as she sniffles, coughs and burns with fever. Poor kiddo ๐.
