With all of our visitors coming in we are not sure when we will get to podcast next but we did manage to have a wonderful date night this past week and recorded HWYWH Episode 71: Kids, Kicks and Crashes! Listen Here!
My SIL is coming to visit soon! Every year when she comes I make sure to cook her up a delicious Mexican meal! We have been trying out new recipes to see what she will like! This week we tried Asian Enchiladas and they were freaking delicious! It was a fabulous change from our regular Enchiladas, which I love, but it is always nice to try something new!
Sweet Chili Chicken Enchiladas
Adapted from Carlsbad Cravings
1 tablespoon oil
1 can crushed pineapple in juice
1 cup Matchstick carrots
1/2 cup Asian sweet chili sauce
1/2 cup honey
1/2 cup lime juice
1 tablespoon chili powder
1 teaspoon ginger powder
1/4 teaspoon salt
1 can coconut milk
1 tablespoon cornstarch
8 flour tortillas
1 cup shredded Monterey jack cheese, divided
1/4 cup peanuts, chopped
Heat oil in a large nonstick skillet over medium-high heat. Add chicken, carrots and the can of pineapple with juice to the skillet. Cover and reduce heat to medium and simmer 10 minutes, stirring pineapple occasionally, adding additional water if the liquid evaporates too quickly.
Whisk Thai chili sauce, honey, lime juice, spices and salt together. Add 1 cup of the sauce to a medium saucepan and stir in coconut milk and cornstarch.
Lightly spray a baking dish with nonstick cooking spray. Add 1/2 cup of sauce from saucepan and spread over the bottom of the baking dish.
Add a few spoonfuls of chicken/carrot/pineapple to each tortilla and top with a few spoonfuls of cheese. Roll up and place seam side down in prepared baking dish. Pour remaining sauce over tortillas and spread evenly. Sprinkle with remaining cheese.
Bake for 30 minutes at 350 degrees F. Turn oven to broil and cook until cheese is golden brown (2-3 minutes). Garnish with chopped cilantro and peanuts.
Wednesday was the school’s annual talent show! This year HBear and 3 of her Besties sang and danced to Michael Jackson’s Billie Jean. Actually, HBear used my dance routine from my adult jazz class 😂. Of course it took me 6 months to learn it and her about 3 minutes 😂. They did great! I’m always so impressed by these young kids getting up in front of their peers and putting it all out there! Great job!
On Thursday SBean had her end of the year Field Trip! We went to the Skaha Water Park! They had a fantastic time!
On Friday, just because they want to do the ALL the most fun things in the last week of school 😳 they had the end of the year sports/fun day. I could only stay for an hour because I had to go to work but it was wonderful to see HBean playing with her friends and also allowing her little sister to be part of the fun!
Later on they had the annual Tug-of-War and my YBesty took some pictures for me! 💕
There was a lot happening this week. So much that I didn’t have time to feel super sad about my Mom’s anniversary and even when I was feeling down, Ninja was right there with a hug, a kind word or a beautiful bouquet of flowers 💕.
SBean started swimming lessons this week! I can’t get her to take her goggles off… Until we get the pool and then she puts them in her locker 😂.
On Friday Ninja, Dad and my In-Laws took the girls to the Peach City Cruise! Every year we have an old car show that does a parade down Main Street, this year over 800 cars were entered! While they enjoyed the parade and Boston Pizza, I did a special podcast episode with my friend Agent Palmer! That bonus episode will be released in the next few weeks!
Saturday was a busy day! SBean finished gymnastics and then we picked up her KBesty and I took them to Starbucks and out for pedis! One of the older ladies glared at me when we walked in and said, “starting them off young aren’t we?”
While they played I got things ready for the Girls to have a banana split bar. SBean said she wanted to try a banana split for her kindergarten graduation and who am I to say no to a request like that 😂!
