End of School Treats & Sweet Chili Chicken Enchiladas

End of the year! I can hardly believe that the school year is coming to an end. This was the first year with both Girls in school and now it’s over! 


SBean loved kindergarten… At least most days 😂. She made a few new friends and her reading has come a long way! 

HBear had a rough year. She had a teacher that had a style of teaching they didn’t quite fit with the way HBear likes to be taught. The first few months were touch and go but she ended up enjoying the rest of the year. Of course, what’s not to enjoy when your teacher is more into playing the guitar and teaching you Bohemian Rhapsody than science. We have considered this year to be an academic write off but thank goodness HBear is a great student and hopefully next year, barring a catastrophe, she will catch up 😊

Work has been very busy and we are getting ready for our visitors next week so we kept our end of the school year treats and gifts relatively easy. Superstore was having a sale on boxes of mini cookie packets so I picked up enough for all the kids in both classes! I printed up some nifty little tags and the girls signed them and stapled them! Easy peasy mac & cheesy!

 
For the teachers I found these adorable owl plant holders and we printed up tags at We Heart Parties! 1 1/2 days left until summer vacation begins!

 

With all of our visitors coming in we are not sure when we will get to podcast next but we did manage to have a wonderful date night this past week and recorded HWYWH Episode 71: Kids, Kicks and Crashes! Listen Here!


My SIL is coming to visit soon! Every year when she comes I make sure to cook her up a delicious Mexican meal! We have been trying out new recipes to see what she will like! This week we tried Asian Enchiladas and they were freaking delicious! It was a fabulous change from our regular Enchiladas, which I love, but it is always nice to try something new!


Sweet Chili Chicken Enchiladas
Adapted from Carlsbad Cravings

NUTRITION: 369 Calories/per enchilada

1 roasted chicken, meat off bones and shredded
1 tablespoon oil
1 can crushed pineapple in juice
1 cup Matchstick carrots
1/2 cup Asian sweet chili sauce
1/2 cup honey
1/2 cup lime juice
1 tablespoon chili powder
1 teaspoon ginger powder
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon ground cumin
1/4 teaspoon salt
1 can coconut milk
1 tablespoon cornstarch
8 flour tortillas
1 cup shredded Monterey jack cheese, divided
1/4 cup cilantro, chopped
1/4 cup peanuts, chopped

Heat oil in a large nonstick skillet over medium-high heat. Add chicken, carrots and the can of pineapple with juice to the skillet. Cover and reduce heat to medium and simmer 10 minutes, stirring pineapple occasionally, adding additional water if the liquid evaporates too quickly.



Whisk Thai chili sauce, honey, lime juice, spices and salt together. Add 1 cup of the sauce to a medium saucepan and stir in coconut milk and cornstarch. 

Bring to a boil and reduce heat to simmer until thickened, 1-2 minutes. To the remaining sauce in the bowl, add shredded chicken/pineapple/carrots and stir until well combined.

Lightly spray a baking dish with nonstick cooking spray. Add 1/2 cup of sauce from saucepan and spread over the bottom of the baking dish.

Add a few spoonfuls of chicken/carrot/pineapple to each tortilla and top with a few spoonfuls of cheese. Roll up and place seam side down in prepared baking dish. Pour remaining sauce over tortillas and spread evenly. Sprinkle with remaining cheese.


 

Bake for 30 minutes at 350 degrees F. Turn oven to broil and cook until cheese is golden brown (2-3 minutes). Garnish with chopped cilantro and peanuts.

Wednesday was the school’s annual talent show! This year HBear and 3 of her Besties sang and danced to Michael Jackson’s Billie Jean. Actually, HBear used my dance routine from my adult jazz class 😂.  Of course it took me 6 months to learn it and her about 3 minutes 😂.  They did great! I’m always so impressed by these young kids getting up in front of their peers and putting it all out there! Great job!


After the talent show, because it was Mom’s 5 year anniversary, HBear and SBean got up in front of the whole school and said a little speech they wrote about Mom. They told their classmates all about their Nana. It almost brought me to tears! So proud of those girls! After they told everybody about Nana they explained that they had made everybody in the school a cupcake and they would like everybody to pass on a kindness in Nana’s name, Kathy Castle 💛.

On Thursday SBean had her end of the year Field Trip! We went to the Skaha Water Park! They had a fantastic time!


 

 

On Friday, just because they want to do the ALL the most fun things in the last week of school 😳 they had the end of the year sports/fun day. I could only stay for an hour because I had to go to work but it was wonderful to see HBean playing with her friends and also allowing her little sister to be part of the fun!


 

 

Later on they had the annual Tug-of-War and my YBesty took some pictures for me! 💕


There was a lot happening this week. So much that I didn’t have time to feel super sad about my Mom’s anniversary and even when I was feeling down, Ninja was right there with a hug, a kind word or a beautiful bouquet of flowers 💕.


SBean started swimming lessons this week! I can’t get her to take her goggles off… Until we get the pool and then she puts them in her locker 😂.

 

On Friday Ninja, Dad and my In-Laws took the girls to the Peach City Cruise! Every year we have an old car show that does a parade down Main Street, this year over 800 cars were entered! While they enjoyed the parade and Boston Pizza, I did a special podcast episode with my friend Agent Palmer! That bonus episode will be released in the next few weeks!


Saturday was a busy day! SBean finished gymnastics and then we picked up her KBesty and I took them to Starbucks and out for pedis! One of the older ladies glared at me when we walked in and said, “starting them off young aren’t we?” 


Yes. Yes I am.

First of all I don’t have much alone time so if I want to get a pedicure it’s pretty certain that I’m going to have a child with me LOL also, my Mom got her nails done religiously. It was her thing. She tried to get it to be my thing but I never took the time to go with her. I’ve learned from my mistakes and I am not wasting one moment! I want my Girls to remember being pampered with their Mommy 💛.


 

 
After pedicures we went home for a Play date. SBean has been dying to show off her bedroom to her KBesty for a long time 😂.


While they played I got things ready for the Girls to have a banana split bar. SBean said she wanted to try a banana split for her kindergarten graduation and who am I to say no to a request like that 😂!


While we had a fabulous day celebrating the end of kindergarten, HBear was at her KBesty’s birthday party/sleepover. Ninja hung out for the afternoon as well. Our friends are the BEST parents and plastic wrapped the entire kitchen for the Girls to have an Orbeez Party!!!!


It’s a good thing that HBear slept out because after our fun celebration day SBean was sick with the stomach flu all Saturday night. Poor girl! She kept on whimpering, “I don’t like this night. I don’t like this.” Nothing breaks my heart more than a SickBean 😷😞.

All in all it was a busy week! Weeks like this allow me to win 1 step challenge and come in 2nd in the other! Although this week could have been sad, could have been stressful, and could have gone wrong in so many different places… It ended up being a good week. I am grateful for these days 💛.
