HBear’s Ballet Birthday and Mongolian Ramen with Meatballs

A decade.

How did that happen? How is it that my sweet, little, chubby cheeked baby is 10?

I remember the minute the pains started. The terror I felt when I thought something was wrong… But really I had just lost my mucous plug 😳. I’m serious, that’s when it’s called 😆. I remember sitting on the couch as my Mom bounced around excitedly and I worried about how long I should let the pains go before I went to the hospital. I remember Dad driving Ninja and I to Saint Boniface Hospital at 10:30 in the morning, almost 24 hours after the pains started. I remember walking up and down the stairs and I remember my midwife breaking my water. I remember Ninja’s parents coming in to say hi, my Mom and Dad right there beside me, my Sis and WpgBesty making jokes while I concentrated on the next contraction. I remember the smell of McDonalds in the room when one of my visitors got hungry later in the day. I remember getting moved to another room and how scared I was when they hooked us up to hear our heartbeats to make sure everything was still OK. I remember looking out the window and seeing snow gently start falling. I watched as it turned dark. I remember sometime after midnight a doctor coming in and saying those dreaded words, “C-section” I remember throwing up… A lot. I remember the deal, in 2 ours we would push and if I wasn’t fully dilated… It was C-section time. I remember how good it felt to push. I remember the sadness I felt when they wheeled me into the operating room. I remember being so damn scared for my baby. I remember the burning pain and then all of a sudden I remember hearing her first cry. I remember Ninja bringing our beautiful baby girl right up to my face so that I could meet her for the first time. On Dec 1/08 at 4:53am weighing 9lbs 11oz and 21 3/4 inches I finally met her. Almost 40 hours after my first contraction.



And now she’s 10. It’s all so clear in my mind. Sometimes I don’t remember what I ate for dinner the day before and yet I remember every detail of that day, 10 years ago 💛.

Parenting is no joke. I was not prepared for how much I would love her! How I would willingly give up anything for her happiness. Being a Mom is the absolute best job I’ve ever had. It is also the longest job I’ve ever had 😂.

This year for HBear’s 10th birthday we made a decision, it will be her last birthday party. Next year she can have a few girlfriends over for dinner and a sleepover but birthday parties, as she knows them, will end with this one. She decided to make it a good one!

She wanted to share her favourite past time with her friends, dancing! She wanted a dance party at her studio that was very glamorous and mature 😏. She did not want a birthday cake and said she would prefer an ice cream bar instead. She chose 4 types: her favourite, mint chocolate chip, salted caramel, Oreo birthday cake, and chocolate. We went to the bulk barn and picked out 6 candy toppings plus raspberries and blackberries. We labelled bottles of chocolate syrup, strawberry sauce, and caramel topping and we bought a large can of whip cream! We bought 10 glass jars and labelled them with her friends initials to be used as ice cream bowls and to be later taken home. We made a combined decoration/goody bag with vases that HBear made tutus for and we filled with pink and white roses!

 

It was elegant, thoughtful, and sweet… Just like her!


All the Girls had a blast! I am so happy that her last big birthday party was a success! One that we will remember for decades to come!

Remember a while back when I shared a new recipe for Thai meatballs? We loved it so much but I looked for another recipe that is similar. This one has more of a Mongolian taste to it and it was delicious! I bought a large pack of instant noodles that weren’t my favorite, next time I would use about 4 packs of Ramen to get the texture I was craving. SBean even asked for leftovers in her thermos the next day!


Mongolian Ramen with Meatballs

1.5 lb. ground beef
1/2 c. panko bread crumbs
3 green onions, thinly sliced, divided
1 egg
2 cloves garlic, pressed
2 teaspoon sesame oil, divided
1 tablespoon oil
teaspoon ginger, minced
3/4 cup chicken broth
1/2 cup soy sauce
1/4 cup brown sugar
tablespoons hoisin
1 large pack instant noodles

In a large bowl, combine ground beef, panko bread crumbs, about half green onions, egg, garlic, and 1 teaspoon sesame oil. Season with salt and pepper, then mix until well combined. Form meatballs, scoop a heaping tablespoons of mixture and roll into balls.


In a large skillet over medium-high heat, heat a thin layer of oil. Add meatballs and sear until each sides develops a crust, about 2 minutes per side.

Remove meatballs from skillet, and add remaining sesame oil.


Stir in ginger and cook until fragrant, about 30 seconds. Add chicken broth, soy sauce, brown sugar, and hoisin. Stir to combine and bring to a simmer.

Return meatballs to skillet and cover skillet with a lid. Cook until meatballs are cooked through, about 10 minutes more.

Meanwhile, cook ramen. In a large pot of boiling water, cooking ramen according to package instructions. Drain noodles.

Add cooked noodles to skillet and toss until fully coated in sauce.


Garnish with remaining green onion and sesame seeds.

SBean got her ears pierced on her first birthday. Now that she is 6 she desperately wanted to change up her sleepers and wear her pick of earrings. HBear picked out some super cute ballet earrings and of course some poop emoji earrings LOL and gave them to SBean for her birthday! SBean felt so grown up and is so excited to change her earrings on a daily basis 😊


 


At school on Friday the Girls enjoyed spirit day, crazy hair day. Of course they didn’t mention it to me until Thursday night 😳. We looked around the house and came up with a couple great ideas thanks to Pinterest!


 

December 1! We all know who comes on December 1, Maynard! This year he brought a Christmas book The Girl Who Saved Christmas, for the whole family to read together!



December 1 is also HBear’s birthday! First thing in the morning she opened an early birthday gift, her Lego advent calendar!



That afternoon was her party! Even though we did the same party the weekend before, it was amazing how different they were! The 6-year-olds were quiet and waited to be told what was next. The 10-year-olds… They were bouncing off the freaking walls 😂. All the Girls had a great time! HBear has friends from all different groups so it was wonderful to see them all get along and meet new friends!


 

 
 

Directly after the party HBear and her DuetBesty practiced their dance routine while we cleaned up. Then we got just in our warm clothes and walked across to the Santa Claus Parade! This year’s parade was fabulous! The kids received so much candy it felt like Halloween! While the temperature wasn’t that bad we still dressed up in our snow pants because when the sun goes down it’s very chilly and it’s very damp, and we are sitting on the cold ground. Plus we are wimps!

 

 


After the parade we all came back to our place for pizza, cake, and gifts!


 

Of course HBear received a special video from Santa wishing her a very happy birthday.



On Sunday we enjoyed the Lakeshore Christmas Market. It was a great little market with some amazing local vendors!


 


Santa and Mrs. Clause were there as well! Which is fabulous because now we don’t have to brave the lines at the mall and Santa knows just what the Girls would like.



The Girls dance studio was performing at the market too! First was the Vocal Choir which HBear is a part of. Each of the kids had a solo 😳 I am blown away by the confidence these kids have to sing in front of an entire room like they did! Great job!


 


After the vocal choir all the musical theater groups got up and sang Christmas carols! Both HBear and SBean were a part of the festivities. They brought the house down! It got me right into the Christmas mood!


 


There was this adorable little girl that kept putting the microphone right up to her mouth and singing directly into it LOL the kids couldn’t stop giggling, it was so cute!

After carolling we began setting up for Christmas in the house! But that is the story for next week!
