St Paddy’s Day Scavenger Hunt & Sesame Cauliflower Bites

Searching is half the fun: life is much more manageable when thought of as a scavenger hunt as opposed to a surprise party.

Spring break has begun!

To kick off spring break Ninja and I sat up late one night making St. Patrick’s Day scavenger hunt limericks for the Girls!

On Sunday after a delicious brunch at the Nest and Nectar with Grandma, Grandpa, and Papa, we enjoyed the sunshine and raced around Penticton finding clues until we found the treasure!

Scavenger hunts are so much fun! One year for my birthday my Mom designed a scavenger hunt and my friends and I were split up into teams. I remember the hardest thing to find was always the bird’s nest!

SBean has been on a major scavenger hunt binge for the past month. She has been writing clues on post it notes and putting them up all around the house. We have all been doing her hunts and they have been so much fun! She asked for a special scavenger/treasure hunt on spring break and we had a blast watching them figure out all of the clues!

We tried to pick places that the kids have been to many times and we also made sure that we started in one corner of the city and did a loop around town so there was no backtracking 😂.

The treasure doesn’t have to be anything big! The hunt is the best part! At the end SBean found the gold chocolate coins first and has been lording it over her big Sis ever since 😆.

The Canadian food guide came out a while back and the plate does not look anything like the plate I grew up with. The Canadian food guide, without the two cents of lobbyists, has told us that eating more plant-based proteins would be better for us. I have known this for a long time. However, I like meat. My family likes meet. This is a very difficult task for us. However, we want to do our part and we want to be healthy so we are trying something new! Every week we are going to try a dish that is meatless. This week we tried a cauliflower dish with rice. I thought it was a good start because we all love sesame chicken so I assumed sesame cauliflower couldn’t be that different… Right?

Actually, it’s true! Everybody ate it! Everybody liked it! SBean had seconds! I’m happy that our first vegetarian dish went over so well, hopefully next week there will be last groans and more fist pumps for vegetables… 🤣.

Sesame Cauliflower Bites with Rice

Adapted from Diethood

1 head cauliflower, cut into florets
2 egg whites
1 cup panko bread crumbs
1/2 teaspoon paprika
1/2 teaspoon cumin
1 teaspoon garlic powder
1 teaspoon sesame oil
1/3 cup honey
1/3 cup soy sauce
2 tablespoons apple cider vinegar
1 teaspoon sweet chili sauce
3 cloves garlic, pressed
1/4 cup water
1 tablespoon cornstarch
toasted sesame seeds, for garnish
chopped green onions, for garnish

Preheat oven to 400F.

Lightly grease a baking sheet with cooking spray and set aside.

Add egg whites to a large ziploc bag; add cauliflower florets, close the bag, and shake it around until everything is well combined.

 

In a separate ziploc bag combine panko crumbs, paprika, cumin, garlic powder, salt, and pepper; add cauliflower florets to the bag, close it, and shake it around until everything is well combined.

 

Transfer cauliflower florets to previously prepared baking sheet; bake for 15 to 18 minutes, or until tender and lightly browned.

In the meantime, prepare the sauce.

In a small pot over medium heat, combine sesame oil, honey, soy sauce, vinegar, chili sauce and garlic; bring to a simmer.


Simmer for 10 minutes.

In a small mixing bowl combine cornstarch and water and stir until cornstarch is dissolved.


Add cornstarch mixture to soy sauce mixture and stir to combine; remove from heat.

Remove cauliflower florets from oven and pour sauce over the florets. Mix until well combined.

Garnish with toasted sesame seeds and green onions.

SBean had her very first project due this week! She had to do a poster answering certain questions about a community activity that she is involved with. She chose her dance studio, Balance School of Performing Arts! I bought stencils and she painted all the titles, we printed up 6 of her favourite pictures from dance, and she wrote two sentences for each question. She worked hard and it turned out beautifully!

This week was the last curling lesson for HBear. They had a pizza party and gave their coach a beautiful plaque! SBean and her KBesty enjoyed watching their big sisters this season and enjoyed the pizza party too 😜.


For the last day of school before spring break the girls participated in the St. Patrick’s Day school sports day! They both were green and they both ended up on the leprechaun team! I stopped by in the morning to see SBean and her friends rocking it and popped by in the afternoon to watch HBear and her friends having a great time as well!


 

In between I treated myself to Starbucks and a manicure! I am off work for 3 weeks so this was the perfect opportunity to do my nails and to enjoy a relaxing hour to myself.


 


On Saturday we took it easy. SBean went on a play date with her KBesty and HBear and I watched golf and played crib!


Sunday was our busy family day! Brunch, followed by the hunt, while I made dinner the girls played beauty salon and then built a fort in the living room.

The sun is out, we have family coming to visit, and we have two weeks of free time! Happy spring break!
