It’s September! Plus Thai Chicken Salad & Maple Brown Sugar Oatmeal Muffins

I saw this meme the other day that said I can’t believe it’s the end of summer! March break seem like just 16 years ago. 😂

Ain’t that the truth!

In someways the past 8 months have been the longest 8 months of my life and I’ve been pregnant twice so that says a lot 😂 However, in other ways this summer absolutely flew by! Faster than normal and those 8 weeks usually go by pretty darn quickly! Just the other day, I caught myself saying “Don’t worry we will do that in the summer.” Like it’s the beginning of summer or something?!?!?! I keep thinking, we should do (fill in the blank with magical memory you want to make with your family this summer) when it gets hot. When it gets hot? It has been so hot that we have had multiple mega wildfires burning up the dry landscape! What am I thinking?

Is anybody else’s internal time clock turned completely upside down?

So, the first week of September is supposed to be hot! So, Ninja took an extended long weekend and we are going to go explore BC some more! Just little day trips to some exciting new places! I’m excited to get every last bit of summer out of this last week of spring summer break 😊.

I have been busy creating delicious fall dinners that I can’t wait to share with you! However, I still have a few summer recipes that are perfect for these last days of hot weather! This was a delicious salad that filled us up for dinner and had a ton of texture and taste! The Girls have asked for this dinner repeatedly throughout the summer! It’s THAT good!


I also wanted to share a recipe that the Girls and I made in the early stages of self isolation. I saved them until now because these muffins are PERFECT for school lunches! These Maple Brown Sugar Muffins are tasty, moist and a total match for a cooler fall morning when you are racing to get out of the house or you will be late for school… or is that just HBear? 😂 


Thai Chicken Salad
Adapted from Cookin’ Canuck

1 bag coleslaw
1 Romaine heart, chopped
3 green onion, thinly sliced
1/4 cup cilantro, minced
1/3 cup snap peas, chopped
2 cups rotisserie chicken, shredded
3 tablespoons slivered almond, toasted
1 lime juiced
3 tablespoons peanut butter
2 tablespoons soy sauce
3 teaspoons honey
2 teaspoons fish sauce
2 teaspoons rice vinegar
1 teaspoon chili garlic sauce

In a small glass bowl, combine the lime juice, peanut butter, soy sauce, honey, fish sauce, rice vinegar and chili garlic sauce. Whisk until smooth.


In a large bowl, combine the coleslaw, lettuce, green onion, cilantro and chicken.

Toss with the dressing. Garnish with the toasted almonds.

Maple Brown Sugar Oatmeal Muffins
Adapted from I Heart Eating

2 cups rolled oats
1 cup milk
1/2 cup pure maple syrup
1/3 cup oil
2/3 cup light brown sugar (packed)
2 large eggs (lightly beaten)
1 1/2 cups flour
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
Sugar for topping (I made a cinnamon/sugar mix to sprinkle on top)


Preheat the oven to 400 F. Line a 12-cup muffin tin with paper liners.


Combine the oats and milk in a large bowl.



Add the maple syrup, oil, brown sugar, and eggs. Mix until combined.



Stir in the flour, baking powder, cinnamon, baking soda, and salt just until combined. The batter will be wet.



Divide the batter between the prepared muffin tins.


Sprinkle cinnamon/sugar over batter.

Bake for 18-25 minutes, or until the muffins spring back when lightly pressed.


Let the muffins cool in the tin for 5 minutes.

Remove to wire rack to finish cooling.

My Beachbody workout has me feeling so much stronger! When I started the Morning Meltdown 100 program I was using 3 pound weights. Then I went up to 5 pounds, then 8, and now 10 pounds!

This week I took the Girls in for their first haircut in a year! I had appointments for them on March 16 but then the entire world shut down. They look beautiful 😍.

We got moving early on Wednesday and went for a Girl’s day on the town! We went for a walk in the Japanese gardens and looked at the Koi, then we explored the used bookstore and then found ourselves at the unveiling of Project Piano! We walked down to the nearby food truck and grabbed lunch and then headed back to the beach for a little picnic! We ended the day at the Penticton Art Gallery at the Bob Ross exhibit! The Girls love Bob Ross on Netflix and they really enjoyed seeing his artwork.

On Thursday we headed down to Skaha for a beach day! The Girls played at the park, then SBean headed over to the waterpark and HBear went and hung out with her MTFriend. SBean and I played at the beach, had a snow cone, enjoyed the nature park and ran into her KBesty!

On Friday we went for dinner and a swim at Grandma and Grandpa’s with Papa. Then we went home and had a Family Sleepover! HBear directed us on our first reel, we played Guitar Hero, and then rented Bill and Ted Face the Music on Demand! We finished the week with a chill day of more Guitar Hero and waffles!
