Back to School Organization & Peanut Chicken Wrap PLUS Chocolate Oatmeal Muffins

Towards the end of the last school year I recognized that we had a problem. A big problem. The Kids stopped using their chore charts. I was just coming out of my flareup and Ninja was overwhelmed with taking on my job, his job, all parenting duties, household chores and worrying about me and our future. It was just easier to do everything himself rather than enforce the chart and we stopped keeping the kids on track.

This year that is going to change! I have begun our schedule prep and getting everything ready for the new school year! We need more help and frankly the Kids are getting older and they need to take on bigger roles in our household duties! A few weeks ago I asked them how THEY felt the chore charts would/could work better? They both answered, show me the money!

I freaked out.

I have always maintained that Kids should help around the house because they are part of the family and everyone pitches in without getting paid to do so. We have been giving them a weekly allowance based on their ages but not because they help out but because we have been teaching them how to budget their weekly allowances. How much to put into savings, how much to donate to charity and how much to allow themselves to spend. However, they believe that they should earn their allowance. So I began digging around for something that would satisfy their requests and my belief in helping for the sake of being a good family member.

I made my own chores and point system but the gist is that you get to be a part of the household by doing the bare minimum 😜. You get screen time (tv, phone and/or computer) if you do daily chores and you can EARN your allowance by doing extra stuff around the house! Win Win!



 

So far it has been working well! The Kids are excited to make money and they try to get their 300 points early in the morning so they can have their phones or the tv on! That is HUGE!!


We have also set up our schedule area! This keeps us all organized and everyone in the family, in the know! I have their yearly after/before school schedules, their weekly schedules and our monthly menu up on our wall for ALL to see so nobody can ever utter those dastardly words… “I didn’t know.” 😜



Hopefully this starts us off on the right foot for a successful year! We will play with the point system for the next little while to make sure it works for everyone, we want to make sure that the kids have the earning potential to keep them interested and focused.

HBear worked this week. She worked every week this summer but this past week she worked 3 days in a row in the blistering heat. I’m super proud of her! It is demanding work and leaves you completely drained… and hungry! This week I opted for healthy, light and tasty dinners and 1 of our favourites was definitely the Peanut Chicken Wrap! I doubled the dressing and have been using it on my coleslaw for the rest of the week! Soooo good!

Peanut Chicken Wrap

Adapted from Simply Whisked

1/2 bag broccoli slaw mix
1/3 cup roasted peanuts
1/4 cup cilantro, chopped
2 cooked chicken breasts, chopped
6 large tortillas
2 tablespoons honey
2 tablespoons oil
2 tablespoons peanut butter
1.5 tablespoons rice vinegar
1/2 tablespoon soy sauce
1/2 teaspoon sesame oil
1/4 teaspoon pepper
1/4 teaspoon salt
1/2 tablespoon ginger, grated
1 garlic clove, minced

In a bowl, whisk honey, both oils, peanut butter, vinegar, soy sauce, salt, pepper, ginger and garlic together, set aside.



In another bowl, add the slaw, cilantro, and peanuts. Pour the sauce over the mixture and stir. Let this sit while you prepare the tortillas and chicken.


Heat up the tortillas for about 10 seconds in the microwave to make them easier to work with.

Divide the chicken and coleslaw between each tortilla. Roll tightly.


As I’ve said previously, I have been searching for lunch and breakfast snacks that I can make and freeze. This is for a few reasons, I’m not working as much, snack items have INCREASED in price considerably in the last little while, and I think we need to get back to more nutritious snacks over convenience. I found these incredible muffins that include 2 of SBean’s favourite things, cocoa and oatmeal! These are tasty AND you can keep them in the freezer and just pop one into the microwave as you run out to catch the school bus in the morning… I’m looking at you teenager HBear 😂!

Chocolate Oatmeal Muffins
Adapted from Taste & Tell

1 cup quick-cooking rolled oats
1 cup buttermilk
1/3 cup butter, softened
3/4 cup packed light brown sugar
1 egg
1 cup all-purpose flour
1/4 cup cocoa
1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1/2 cup mini chocolate chips

In a small bowl, stir together the oats and buttermilk and let sit for 20 minutes.


Heat oven to 400ºF. Line 12 muffin tins with cupcake wrappers.


In your mixer, beat butter, sugar and egg until fluffy.


Stir the flour, cocoa, baking powder, salt and baking soda together.



Add to butter mixture alternately with the oats mixture. Fold the chocolate chips into the batter.


Fill muffin liners 2/3 full with batter. Bake for 16 to 18 minutes or until wooden pick inserted in center comes out clean.


It was a rough week. I was EXHAUSTED and SBean was sick. Ninja and HBear worked and she went to a special hip hop class in Osoyoos. HBear and I went on a back to school shopping spree in Kelowna and met up with my Sis and the Girls for lunch! While we were gone SBean and Ninja cleaned the studio and made a delicious pasta dinner! Over the weekend, SBean got fitted for her gymnastics team jacket/uniform and got her grips! HBear went to D&D at Meeples & Milkshakes with her BBesty and then had a sleepover with her DDBesty. We also got a new sleeper couch for downstairs, the kids did their makeup 😆 and SBean put on fake nails! I bet her she couldn’t keep them on 3 days… she last 3 hours 🤣. I ended the week watching Rory win The Tour Championship, reflected on the week and took a little me time for some wonderful yoga 💛.
