Every night I settle in and get cozy… with my remote control. I love the remote control. I am one of those people that need to do 2 things at once. My besty and I used to go to Bingo all the time (no snickers please) and we did 12-15 cards PLUS we had to get pullies and play on the terminals at other games, all at the same time.
Now, I have my laptop beside the bed and the remote in my hand. I can watch a show, surf the net AND program my PVR! Much to Ninja’s dismay I watch terrible shows. He doesn’t really watch TV so we have a hard time in between 10-midnight when we are in the room together. He will watch The Mentalist, Elementary, The Following, Person of Intrest, New Girl, Go On and the Daily Show… and ANY hockey game. But not much else.
I like almost all “reality” shows and as he says any show where the main character is in highschool. It is true, I am almost 34 years old and I LOVE teenage drama! Do they have a 12 step program for this? They should because I know I am not the only one!
Thank God they are ending some of them, like One Tree Hill and Gossip Girl but there are new ones to replace them like Pretty Little Liars, The Lying Game, the ALMIGHTY Vampire Diaries and I don’t even want to say this but GULP… Bunheads. I’m sorry but it is so much like Gilmore Girls I HAVE to watch it!
I blame this all on Dawson’s Creek. My favorite show of all time!!! I love Pacey. I love Charlie (Mighty Ducks). I love Peter (Fringe). I love Joshua Jackson. He is on my list.
You know what list I am talking about. Hee Hee.

Seriously, it was that show that had teenagers using words, logic and a thought process that most adults could only dream about. When Ninja and I were dating I made him watch every single episode. This is how I KNEW he was a keeper. I have the whole DVD collection of Allie McBeal waiting to be started now. LOL
At this point, I try to convince Ninja that there are the parent’s storylines that are very compelling but who am I kidding? Really? There ARE some great “adult” programs too, like Revenge, Parenthood, Grey’s, Smash, and Hart of Dixie. BUT, 3 of those are on the verge of being cancelled, so I gotta ask… Why are so many of us dissing the “adult” shows and tuning into teenage dramas?  
Hmmmm, if I was in psych this would probably be an interesting thesis.
Anyways, I love my remote and the challenge of programming everything I want in a night. Especially with 2 hour programs like Idol (which totally SUCKS this year) and Oiler games almost every second night. I end up downloading full seasons of Beauty and the Beast, The Americans, The Carrie Diaries, Homeland and Scandal. I usually catch up on shows all summer.
Whew… I read somewhere that if you don’t have the time… stop watching TV. This is so true. 🙂


Baked Pretzel Chicken with Honey Mustard Sauce

2 cups panko crumbs
2 cups hard pretzels
1/2 cup olive oil
1/2 cup Dijon mustard
1/3 cup honey
1/4 cup water
3 tablespoons red wine vinegar
4 boneless chicken breasts
1/2 cup flour, plus more if needed
Preheat the oven to 400
Lightly grease a cookie rack and place it on top of a foil lined baking sheet.
In a food processor pulse the pretzels and panko until coarsely ground. Wipe the crumbs out of the food processor.
Add the oil, mustard, honey, water and vinegar to the food processor and pulse until smooth.
Pound the chicken breasts out to an even thickness using a mallet. Season well with salt and pepper.
Place between 2 sheets of wrap for easy clean up
Pour half of the dressing into a large shallow bowl or dish, put the flour on large plate and the pretzel mixture to a large, shallow dish.

Working one at a time and using tongs dredge the chicken in the flour then into the dressing allowing excess to drip off then into the pretzel crumbs patting them on if needed. Place on greased baking rack.

Crispy and delicious!

Bake 20-25 minutes depending on their thickness/size or until cooked through (internal temperature 165 – 174 degrees F)

Let the chicken sit 5 minutes before serving with the remaining honey mustard dressing.

This was so good I didn’t even take a picture of it smothered in delicious honey mustard, I just dove right in. Everybody liked it! I served it with rice and corn. Easy Peasy Mac and Cheesy 🙂
