So tomorrow is Friday the 13th!
I have never been a superstitious girl… WAIT I stop and really think about this. My Granny was super superstitious, and I remember almost all of those crazy things she would say – and STILL do them! Seriously, “new shoes NEVER go on the bed!” I used to even have lucky underwear! Don’t even get me started with astrology… which I fully believe in… almost LOL


I even practiced magic LOL
Well, not really but I tried my hand at casting spells on certain moons. I stopped all that on July 1, 2008. That was the day that Ninja got cut from ATC.
Ninja is incredibly smart. When we were dating he got accepted into Air Traffic Control school. It is INTENSE, takes ALL your time and you don’t get paid while in school. It is VERY hard to get through. Ninja excelled at it. Then when I was 3 months pregnant I went to visit my sister in Korea and one of Ninja’s planes went down. It was not his fault and he was cleared by the board but his confidence level plummeted. Unfortunately in that line of work you have to be 100%.
1 week before graduation he was cut.
I had done a spell for having his dreams come to fruition and after that I realized magic sucked. I was 5 months pregnant with HBear, we were in debt like crazy as I had just graduated and my student loans were now due as well as the student loan Ninja had taken out to be a full time ATC student for the past 2.5 years! We were back at square one PLUS Ninja was devastated. 
Now that I look back I can see that my spell kinda worked. I can’t imagine life if we had taken that path. We wouldn’t have moved to the Valley… I wouldn’t have spent all that quality time with my Mom… we wouldn’t be business owners… hell, who knows I may not have been a stay-at-home mom! Things were very different then. Maybe I should take up magic again!
This year has been rough… as you know. Is it because it is 2013?

Enough of this huba balloo… let’s get some dinner going!

Cajun Chicken Pasta
Adapted from The Pioneer Woman
3 Chicken Breasts, Cut Into Cubes
1 box Fettuccine, I used spinach
2 Tablespoons Olive Oil
2 Tablespoons Margarine
1 Green Bell Pepper, sliced
1 Red Bell Pepper, sliced
1/2 Red Onion, sliced
1 cup Zuchini, sliced
3 cloves Garlic, pressed
4 whole Tomatoes, diced
2 cups  Chicken Broth
1/2 cup White Wine
1 cup Heavy Cream
½ teaspoon Cumin
½ teaspoon Paprika
½ teaspoon Cayenne Pepper
½ teaspoon Seasoning Salt
½ teaspoon Garlic Powder
½ teaspoon Pepper
½ teaspoon Dried Oregano
Cook pasta according to package directions. Drain when pasta is still al dente; do not overcook!

Mix the cumin, paprika, cayenne pepper, seasoning salt, garlic powder, oregano and pepper together to make “Cajun Spice”. Sprinkle a coating of the Cajun spice over chicken pieces.
Heat half the oil and half the margarine in a heavy skillet over high heat. Add half the chicken in a single layer; do not stir but let chicken to brown on one side, about 1 minute. Flip to the other side and cook an additional minute. Remove with a slotted spoon and place on a plate.
Repeat with remaining chicken. Add chicken to the plate.

Still on high heat add remaining olive oil and margarine. Then add peppers, onions, mushrooms and garlic. Sprinkle on remaining Cajun spice, and add salt if needed.
Cook over very high heat for 1 minute, stirring gently and trying to get the vegetables as dark/black as possible. Add tomatoes and cook for an additional 30 seconds. Remove all vegetables from the pan.
With the pan over high heat, pour in the wine and chicken broth. Cook on high for 3 to 5 minutes, scraping the bottom of the pan to deglaze.
Reduce heat to medium-low and pour in cream, whisking constantly.
Cook sauce over medium-low heat for a few minutes, until cream starts to thicken the mixture. Taste and add freshly ground black pepper, cayenne pepper, and/or salt to taste.
Finally, add chicken and vegetables to sauce, making sure to include all the juices that have drained onto the plate. Stir and cook for 1 to 2 minutes, until mixture is bubbly and hot. Add drained fettuccine and toss to combine.


BTW… Thursday the 12th is just a rare as Friday the 13th J
