Have you had the chance to read Illustrated with CrappyPictures? Amber Dusick is F***ing HILARIOUS! That’s right her blog is so funny it gets a star word! I took her book out of the library, Parenting: Illustrated with Crappy Pictures and I couldn’t stop laughing. No laughing isn’t the right word because tears were streaming down my face I was snorting, cackling and outright yelling “YES! SO TRUE!!!”

HBear has been looking forward to this day for 2 weeks… today is pink and grey day. Most days we make it a NO pink day because she would wear pink everyday if she could.

I told her “Sweetie, we have to be fair to the other colors”

and she said “Sometimes lifeisn’t fair Mommy.”

So pink it is!

OK, dinner… This is the easiest pasta EVER! It also taste really good. I love meals that can be cooked in one pot. I have played with it for a while and change it up all the time. You can’t really go wrong. The secret… I use turkey breakfast sausage and vegetable juice. I don’t like pork sausage so I use Daystarters. Cheaper and you can’t tell the difference, especially if you use spicy red pepper diced tomatoes or even chili diced tomatoes 🙂

I like using veggie juice instead of tomato sauce because it has more vitamins, nutrients, less sodium and because the pasta goes right in the pan it is better to have something not as thick as tomato sauce.

You can use fresh herbs or dried and as much or as little as you like. I make this so often I just toss the stuff in lol

One Pot Sausage Pasta

1 pack turkey Daystarters
1 onion, chopped
2 cloves garlic, pressed
1 cup mushrooms, sliced
1 bell pepper, chopped
1 can diced tomatoes with juice
1 cup tomato juice
1 cup water
2 teaspoons basil
½ teaspoon sugar
1 teaspoon oregano
2 cups pasta, uncooked

Put some oil into a pan and cut the sausages with scissors into it. Add onion and garlic and cook until soft.


Add mushrooms and peppers. Sauté until sausage is slightly brown.

Drain.

Add the rest of the ingredients. Stir. Cover.


Boil gently for 30-35 minutes, stir occasionally until pasta is tender.

Sprinkle with fresh basil.
