How much do you know about Penticton BC?

It is a lovely town located between 2 beautiful lakes. In the summer it is a desert as in it is HOT and dry. In the winter it is grey. I mean GREY! We average like 2 hours of sunlight a day or something silly like that. Maybe that is why I am already missing summer. Or perhaps it is because this summer didn’t feel much like summer to me. In fact we only hit the beaches 3 times. Once with my Brother, once with my Sister and once with my SIL.

At the time none of them had children.


I say this because honestly, going to the beach SUCKS with kids. 

I mean it REEEEEAAAALLLLLYYYY blows! 

OK maybe not with older kids but with a baby, for sure! There is so much to carry. Towels, toys, diaper bags, snacks, chairs, umbrellas and then of course the actual baby! How relaxing! The entire time HBear is running over the blanket getting sand everywhere, SBean is trying to put gross sand and cigarette butts into her mouth and the freaking sun is blasting down on you. Just when you actually get to sit down and wipe off the copious amounts of sweat dripping down your cleavage… someone is crying or it is time to start packing up! EF the beach!

Totally besides the point however. The point is that I want hamburgers LOL.

I do not want to BBQ though because it is rainy and miserable. PLUS tonight is HBear’s big Sparks enrollment ceremony and Ninja, Dad and my FIL go bowling Thursday nights too, so we need a quick dinner and cleanup.


HBear is so excited to get her first Sparks badge! She is such a little Guider. Oh man, she kills me with her “I promise to be a good friend and to always share.” HAHA. Personally I wasn’t a big fan. My Mom was my Brown Owl and she made it fun, but I quit after Brownies. My sister went on and on but not me. I think HBear is going to be more like my sister LOL.

This is HBear’s big night… I would show more but the girls need to sign waivers first! Seriously. That’s what they said. LOL

So back to my original thought lol Hamburgers. So tonight we are having the easiest but tastiest dinner EVER! Cheeseburger salad! MMMMMMmmmmmmmm. So good! It tastes just like a cheeseburger I kid you not. You MUST try this recipe. 

Cheeseburger Salad
Adapted from The Pioneer Woman

1.5 pounds ground beef
1/3 cup ketchup
1 teaspoon Dijon mustard
1 Tablespoon yellow mustard
2 Tablespoons mayo
2 Tablespoons BBQ Sauce
2 whole hamburger buns
1/4 cup butter
1 head green-leaf lettuce, torn
1 cup Cheddar Cheese, shredded
2 Roma tomatoes, diced
3 dill pickle, cubed
1/2 red onion, sliced

Brown meat in a large skillet over medium heat. Drain.

Take off heat and add ketchup, mustards, mayo and barbecue sauce to the meat and stir to combine.

Keep warm.

Melt 1 tablespoon of butter in a skillet over low heat, then add the hamburger bun cubes and toss to coat. Toast the croutons in the skillet over low heat for about 10 -12 minutes, adding 1 tablespoon of butter every couple of minutes. You may need more, you want the croutons to be nice and buttery 🙂

Pile lettuce on a plate. Pile on a good quantity of the meat mixture, then top with lots of cheese, diced tomato, chunks of pickles and slices of red onion. Then sprinkle warm croutons all around the plate.
