Asian glazed Pork Chops with Easy Arborio Rice and a Goody Bag Craft

If the family were a fruit, it would be an orange, a circle of sections, held together but separable – each segment distinct

I love Quality Greens. It is our local market. It provides Fresh Local produce. I know I have talked about it before but I really do like it there. I also love Cobbs. I do bake most of my bread and buns myself but if I am having a lazy day, Cobbs is my favorite.

Yesterday SBean and I went to both places to pick up a few things and to grab the buns for last nights dinner. I walk into the bakery and the nice woman behind the counter asks all about how we are doing. She looks and SBean and says “My how she is growing!” I was in quite a bit in my last month of pregnancy as I baked very little at that point, minus the bun in my over LOL… Wow that was so lame. LOL

Anyways, she didn’t charge me for the buns and I left with a smile 🙂

At the grocery store I talked to 1 of my favorite ladies there, (there are 2 that are just awesome), and asked her about the mandarins from last year. Mom bought the BEST Mandarin oranges last year and all the ones we have tried so far are no goes according to HBear. She was sure they were the Japanese but let me try all the organic ones they had too, just to make sure! I bought my box and again left happy!

HBear had a piece last night with a wrinkle in her nose, then smiled and yelled “Mommy you did it!” You finally bought the right ones!” lol Well, in that case let’s see if SBean likes them too!

Oh boy does she!

Today for lunch she had a scrambled egg, a whole orange AND her 1st piece of toast with homemade plum jam on it. She was in her freaking glory!

HBear and I did another craft for her birthday goody bags. We made pet clouds! I take no credit for this amazing idea, I saw it on Rook No.17. HBear loves them and they are cheap and easy. I did burn my finger on the glue gun but I ALWAYS seem to, those things are a necessary evil!

I bought Jumbo cotton balls and we gently pulled them apart. I added the google eyes and HBear slid them into craft bags. I printed the top card from Rook no.17 and 2 staples later we have a cute Pet Cloud for her goody bags!

It is another absolutely miserable day out there. They are calling for 20-30cms of snow in some parts of the Interior! Here it is pelting down a hard COLD rain. No BBQ again tonight. So I am making a twist on my favorite pork shish kabob recipe. Add a side of rice and some veggies and we got ourselves a meal!

Asian glazed Pork Chops
Adapted from Favorite Family Recipes

4 pork chops
3/4 cups brown sugar
1/2 cup soy sauce
3 tablespoons hoisin sauce
1 tablespoons sherry vinegar
1 tablespoons ginger, minced
3 cloves garlic, pressed

Preheat oven to 350.

Mix the sugar, soy sauce, hoisin, vinegar, ginger and garlic in a bowl.

Season the chops with salt and pepper.

Spray a baking dish with Pam and place the chops in then pour your sauce all over.

Bake for about 30-45 minutes or until the meat temperature is 145.

Easy Arborio Rice
Adapted from Martha Stewart

1 cup Arborio rice
1 tablespoon olive oil
1 onion, chopped (I had 1/2 a red and 1/2 yellow in the fridge)
½ teaspoon salt
2 cloves garlic, pressed
2 cups chicken broth

Heat oil in a saucepan over medium-high heat.

Add onions and salt. Sauté until onions are see-through.

Add rice and garlic and sauté for a few minutes.

Add broth. Bring to a boil, stir. Cover and reduce heat. Simmer for 20 minutes.

Take off heat and let stand for 5 minutes.

On a side note, there are many things I love about blogging. I get to vent my silly frustrations and I get to share my stories with family and friends. Another thing I love is how it has connected me to so many new friends and I am surprised to say… how many old friends.

I just love getting messages from people telling me that they read the blog and wish our family well. People that were in my life for a time and shaped who I am today.

To those people I say thank you.

Thank you for reading.

Thank you for taking the time out of your busy lives to drop me a line and let me know how you are doing.

Thank you for reaching out to me when my Mom died.

Thank you for continuing your support.

Thank you.
