Baked Maple Honey Pork Steaks with Mexican Rice

I love watching TV and seeing places I’ve been. Like on Amazing Race Canada when they were in Kelowna.
When I was little I was watching the Real Liars Club, some of you may remember that terrible game show LOL. Anyways, at the end they showed the Big prize… a trip through the Rocky Mountains! They showed footage of the old Rail Caves, it is an attraction on the #1 highway. I looked closely and yup, there we were! My sister and I were on the boardwalk thingy looking at the camera and waving LOL. I love shit like that.
Tonight on the Bachelor *groan* I actually make a sound whenever I say that lol, did you watch Sean and Catherine last night? I did… BIG groan.
I also watched the Grammys. I have to say, I crap on mainsteam bull sh*t music all the time but I thought some of the performances last night were pretty good J
I actually didn’t mind Daft Punk, Pharrell, Metallica, Piano Boy, Carole King with Sara Bareilles, Lorde even Pink and that sexy Beyonce and Dude’s opening act. But I have to say, WOWZAS to Taylor Swift. That was pretty good. I don’t like her music but she can sing and she is a musician and she IS talented… and I wish I could have flipped my ex off so beautifully at that age! Seriously, she could have hurt herself hair flipping like that but she can do no wrong, if I were a guy I would stay the hell away from that firecracker!!!! LOL But if she has all that inside of her… most guys must be like a moth to a flame J
Back on topic… on the Bachelor *groan* they visited South Korea.

In 2008 when I was 3 months pregnant with HBear, I went to visit my sister in Busan and we went to Seoul. At the time it was to meet her boyfriend, a guy she met teaching there… he is now my brother-in-law LOL.
I spent 10 days there. It was unreal. Just like that 1 girl said, it was completely different than anything I had ever seen. A completely foreign language and no familiar aesthetic, even the trees were trees I had never seen before. 
I got right into their peace sign pose! LOL

The fish market was Crrrraaaazzzzzy!

The shopping market took us a full day and I had to buy a suitcase on wheels to put all our bags in! LOL One of the girls on the show tonight says “look at all the shoes stores” It is soooo true!

We went to the Beomeosa Temple, outside of Busan, as they got ready for Budha’s birthday the next day. OMG it was beautiful and serene and something I will never forget!

The night time was like something out of a video game. The pings and noises and neon lights as far as your eye can see… even up! Pictures do it no justice!

Galby, Korean BBQ… I was not a very good new food tryer L I was still getting morning all day sickness and the smells revolted me. The street vendors were big on silk worms and “meat” on a stick lol

Seoul Tower, very cool! We went up and saw the city, under the smog lol it was HUGE!!! 

So that happened. LOL
Today I took SBean to gymnastics, she loves it! She is cutting a molar right now so keeping her mind off it seems to be my best bet J


Tonight is HBear’s T-Ball so I need to have dinner ready early so I did a rice casserole. I made the rice early so I just had to pop it into the oven 20 minutes before dinner. We had pork steaks with the rice and steamed veggies. I know Mexican rice and honey maple pork seems odd together, it is. We are having Chinese New Year on Friday so I didn’t want the same kind of rice… or something. It was all good LOL

Mexican Rice
Adapted from Pepper
1 cup basmati rice
2 cups water
1 tablespoon lime juice
1/2 teaspoon paprika
1 teaspoon salt
1 tablespoon butter

1/2 cup sour cream
1 cup Tex Mex cheese, grated
1 red bell pepper, small dice
3 tablespoons chopped cilantro
Salt and pepper, to taste
¼ cup Tex Mex, shredded
Add first 6 ingredients into a pot and bring to boil.



Stir. Reduce heat to low and cover. Cook for 15 minutes.
Take off heat and let sit for 15 minutes.

Preheat oven to 350.

Put the rice in a greased casserole dish.
Toss in the cheese, bell pepper, and cilantro.

Mix in the sour cream and top with grated cheese.

Bake for 15-20 minutes (or until the cheese on top is slightly browned).

Baked Maple Honey Pork Steaks
Adapted from Simply Scratch
4 pork steaks
3/4 cup maple syrup
1/4 cup honey
2 tablespoons ketchup
1 tablespoon Dijon mustard
2 tablespoons brown sugar
1 tablespoon Worcestershire
1/4 teaspoon red chili flakes
Preheat your oven to 350.
In a sauce pan combine the maple syrup, honey, ketchup, mustard, brown sugar, chili flakes and Worcestershire sauce.
Stir and bring to a boil, stirring often.
Season pork steaks with salt and pepper.
Grease a casserole dish and place the seasoned pork inside.

Pour the glaze over the pork and bake for 30 minutes, Flip them after 15 minutes to make sure both sides are getting all that yummy sauce. J
