Soft Boiled Egg Open Face Veggie Sandwich with Apple Salad and Honey Mustard Dressing


I did not kill this plant, it was sick or something. I gave it everything. I was talking to it, telling it stories. I drew a sketch of it, and put it on my refrigerator.– 28 Days
I have a black thumb.
My Mom loved plants and gardening. I too like the plants and gardening… well the thought of plants and gardening at least J.
I don’t like worms. AT ALL. So digging in the dirt is a bit of a chore for me. I do it with HBear, well my Mom did it with her lol and I guess I will get over it and now be the digger of dirt with the girls. Great.
When Mom and Dad moved to BC they left me and my sister with a few of her most loved plants… I killed them all. Ninja told me if there is still green there is still hope… but as each leaf fell off into a brittle mess I knew… it was just a matter of time.
It became a joke that I had a tall stick in my livingroom. It used to be a beautiful tall plant almost like a palm tree… and then it became my stick. I refused to throw it our… it was the last plant I had left. I watered it and talked to it. I finally gave up when the once firm and tall plant became a soft and bendy mess of a stick L
In the past 6 months that Mom has been gone I have officially thrown out 5 of her household plants.

Funny enough the only one still going strong is the plant that my Mom started again… the one that became The Stick lol

Seriously, even the bamboo is turning brown!!! WTF?

I killed 2 Poinsettias within 3 weeks and the last one is barely hanging on! My Aunt even called me and told me about not overwatering them and everything. 


I promise I water them, I sing to them, I rotate them and eventually without fail, I kill them.

Today I needed basil from the store. They only had potted basil plants. Great, another plant that I will ruin. At least with basil I get what I need before it goes in the trash. LOL

I plan dinners for the week. If you are looking to budget, this I promise, is the best way to do so. When I started planning instead of shopping with my stomach I began to get my grocery bills down to about $50-$100/week. For 5 of us. Granted that does not include our meat, as I have said in the past, we buy a full cow and a pig once a year and keep it all in one of our freezers.
So what I do is I use a menu planner like this…

And I make sure if I need basil for a dish… I use the rest for another dish though out the week. This is a big one for special items like heavy cream or cheese. They don’t last long so you want to make sure you use it all. Nothing goes into the garbage if I can help it! So, I find it easiest if I menu plan Sunday, shop Monday and do a quick produce/milk stop on Thursday.
Today I had to go shopping though because I needed lunch stuff for school tomorrow J
So this week we are having a few yummy things… turkey with all the trimmings, a ground pork pasta with homemade bread, Homemade soup and sandwiches, beef enchiladas with fresh Pico de Gallo, we always have a Take Out night because Dad won a year supply of Carl’s Junior LOL, we usually go to my I-Law’s for dinner once a week and tonight we are having breakfast! There is the week at a glance J

Soft Boiled Egg Open Face Veggie Sandwich
2 teaspoons olive oil
1/2 red onion, sliced
15 green beans, ends cut off
1 red pepper, diced
¼ bag broccoli slaw
1 cup mushrooms, sliced
¼ cup broccoli, cut into small florets
3 green onions, sliced
10 grape tomatoes, quartered
2 tablespoons parsley, chopped
7 eggs
7 pieces of bread
2 tablespoons fresh basil, sliced
*This recipe rocks because you can use whatever you have in the fridge. I had a little bit of slaw left, so I threw it in. Use whatever you like, asparagus would be great too!*


Heat the olive oil in a skillet over medium heat. Add the onion and cook for 5-7 minutes, stirring often, until softened. Add the rest of the veggies and cook, stirring often, for 5-6 minutes. Season with parsley, salt and pepper, to taste.

While the veggies are cooking, prepare your soft boiled eggs. Heat an inch of water in a medium saucepan over medium high heat until softly boiling (little bubbles). Add the eggs, reduce the heat to medium, and cover with a lid. Let the eggs cook for 6 minutes then remove from the stove.
Place the toast into the toaster.
Run the saucepan and eggs under cold water until the eggs are cool enough to be handled. Using a knife, crack the top edge of the egg then gently peel, making sure to be careful so you don’t puncture the eggs.

WTF????? I hate eggs!!!!
It took me like, 20 minutes to peel these suckers and we were still hoping the crunchy stuff was just green beans!
Jeebus! I hate eggs.
I followed every instruction from like 4 sites! 6 minutes to the perfect egg MY ASS! I mean 3 eggs just broke in my hand as I painstakingly tried to take off those God Damn Shells!

SERENITY NOW!
Butter and place the piece of toast down on the plate, spoon the veggie mixture over the toast. Add the peeled egg then carefully slice down the center of the egg with a knife, sprinkle with basil and season with salt and pepper. 


When we finally sat to eat the freaking things… it was quite tasty J Now I just have to figure out how to peel them better lol

Apple Salad with Honey Mustard Dressing
3 tablespoons honey
2 tablespoons Dijon mustard
1 tablespoon mayonnaise
1 tablespoon apple cider vinegar
1/2 teaspoon garlic powder
1 tablespoon olive oil
6 cups mixed salad greens
1 large apple, cubed
2 heaping tablespoons chopped nuts
¼ cup Feta cheese, crumbled
salt and fresh black pepper, to taste
* I have some Candied Sweet & Spicy Pecans left from dinner last week, but walnuts or almonds are nice too*

In your Ultimate Chopper, add all dressing ingredients (first 6) together.

Add lettuce and apples to a bowl and sprinkle Feta and nuts over top. Serve with salt and pepper to taste and drizzle with your dressing.


Tonight HBear was on my very last nerve. The whining and the extreme sassiness is at an all time high. She is walking on egg shells… get it? LOL I suck! LOL
To get ready for school tomorrow she picked out some pretty new nailpolish.

A nice green from her birthday and the sparkle polish she picked out from Claires. Santa brought her a $15 GC in her stocking J It was her first shopping experience. I gave her a little basket and she picked out a nailpolish, a headband, and 3 pairs of earrings… I pitched the extra $15 she went over LOL It was soooo worth it J
