Want to hear the stupidest thing ever?
This summer we bought a new ceiling fan, with a remote! I was so excited… small things people, small things LOL
So, we couldn’t figure it out so we had to take it back lol. Then we got a new one, also, with a remote control J Ninja and his Dad installed it and all is good.
NOT.
You can’t turn the light or the fan on with the switch?!?!??! You HAVE to use the remote. All fine until it is dark lol. Then I am feeling around everywhere trying to find that damn thing! STUPID. I know we don’t use that word but it is better than the words I actually want to use LOL

So on Friday I said enough is enough and I did this…

Last week I decided to get on that resolution of yoga… man am I out of shape! It almost killed me but I did it!
I found a great channel on YouTube called Provocative Yoga. I like her and the programs. Check it out!


It is great having a Smart TV in the livingroom, I can do my yoga and HBear can do hers J

I also wanted to mention that I might be the worst mother ever.
So, the other day I didn’t feel SBean holding on to my PJ leg and when I got up and took a big stride I took her with me!! Plunk. She face planted. She actually does this a lot, face planting that is. She is learning to walk and she kinda runs instead so obviously many falls have taken place in the past few days L However, this 1 was MY fault L


See that bruise???? OMG I want to cry every time I see it. I am so sorry SBean… don’t worry you will get back at me someday LOL

Today the kids were up at 4:30am, maybe she is getting back at me already lol. SBean was up and then HBear shortly after. Oh man we are tired today! So tired that when we took the girls to their 1st swim classes today… neither Ninja or I remembered our suits lol, can’t participate in SBean’s class in our pj’s lol. Ninja flew home to get his suit LOL.


Tonight I am making fish… for everyone but me. I hate fish. I shouldn’t, but I do. I just picture fishies swimming in my belly and it makes me want to throw up. I know it is all in my head but that doesn’t change the fact that I can’t eat fish. So I made chicken for myself J

Sweet Chili Slaw
Adapted from Closet Cooking
1/2 red pepper, sliced thinly
1/2 package broccoli slaw
1/4 cucumber, sliced
1 green onion, sliced
cilantro to taste, torn
basil to taste, torn
peanuts to taste, toasted and chopped
1/4 cup sweet chili dressing (below)
Sweet Chili Dressing
1/2 cup sweet chili sauce
1/4 cup coconut milk
2 tablespoons soy sauce
2 tablespoons lime juice 
1 tablespoon peanut butter
2 cloves garlic, pressed
2 teaspoons ginger, grated
For Dressing: Simmer everything in a sauce pan over medium heat until the peanut butter has melted in and let cool.
For Slaw: Toss it all together and drizzle with dressing.

Pan Seared Honey Glazed Salmon with Browned Butter Lime Sauce
Adapted from Cooking Classy
4 (6 oz) salmon fillets, rested at room temperature 20 minutes
8 teaspoon flour
2 tablespoons honey
zest of 1 lime
2 tablespoons olive oil
1 recipe Browned Butter Lime Sauce, recipe follows
Browned Butter Lime Sauce
6 tablespoons salted butter, diced
3 tablespoons fresh lime juice
1 clove garlic, pressed
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper

Sauce: Place butter in a small saucepan. Cook over medium heat, swirling pan occasionally, until butter is fragrant and has turned a tan shade.
Remove from heat and add browned butter along with lime juice, garlic, salt and pepper to your Ultimate Chopper.

Pulse until well blended. Pour sauce into a small glass dish. Whisk butter mixture with a fork before pouring onto salmon as it will separate, rewarm if needed.
Salmon: Place salmon fillets on a cutting board or plate and sprinkle flour over each side of the salmon fillets and spread flour to evenly coat. Evenly drizzle honey over each side of the flour coated salmon fillets. (coat one side with the flour and honey then after adding it to the pan you can coat the other side)

Drizzle oil into a skillet, swirl pan to evenly coat bottom and heat over medium heat. Once oil it hot, carefully place salmon in pan and cook over medium heat, 3-5 minutes per side until salmon has cooked through and bottom has nicely browned.
Plate salmon immediately, drizzle each fillet with Browned Butter Lime Sauce and sprinkle with lime zest. Serve warm.


Parmesan and Garlic Farfalle
Adapted from Center Cut Cook
3 cups uncooked farfalle
1 onion, chopped
2 garlic cloves, pressed
1 tablespoon olive oil
1/2 teaspoon red pepper flake
1/2 cup dry white wine
1 cup chicken broth
2 tablespoons butter
1 teaspoon basil, chopped
1 green onion, chopped
2 tablespoons parsley, chopped
1/2 cup fresh grated parmesan cheese
Cook pasta according to package directions.
In a skillet, heat olive oil over medium-high heat. When hot, add in onions and sauté for a few minutes until translucent. Add in garlic, red pepper flake, and cook a minute or two longer.

Add in 2 tablespoons butter, dry white wine, and chicken broth. Bring to a rolling boil, then reduce heat.
Simmer for 10-15 minutes, or until the sauce reduces down quite a bit. Stir frequently. Add in parmesan cheese, basil, green onion and parsley. 


When the cheese has melted, toss the cooked farfalle with the sauce.

This was good. I even tried it and thought, daaaamn! Then I remembered that it was fish and wretched lol. HBear and SBear ate it all up though and Dad and Ninja went back for more! The slaw is sweet and spicy, crunchy and delicious! The pasta was perfect with the salmon, not too heavy but a light taste that complimented the fish. Just what I was hoping for J
