My sister asked me tonight what I am doing to heal?

Well I do so many things. 
I try to make food that would have made her gush that it was opper-whooper super-ruper hooper-duper delishlyoso whoo whoo whoo.
Yup that was my Mom’s terminology. LOL

But, damn it made you feel good to hear her crazy description words as she described each forkful. Not every time mind you LOL!!!
I write. When I am having a bad day. I write. Usually what comes out here is 1/10 of what I originally wrote. I use this as my “journal” I publish what I allow the world to know. My grade 7 English teacher was also the newspaper advisor. He advised us to always write in a pie shape. Put the important facts at the top and pyramid down the importance to well, opinion J If you ever get you piece cut, the facts will still be out there.
That’s what I do. I sum it up at the top and chop off all the soul searching bullshit to keep from boring the crap out of you J
Tonight I made Kube pasta. I come from a Ukrainian family and we love out Kielbasa from this A-Mazing place in the North End of Winnipeg. Thanks to my SIL’s FIL. LOL that’s a lot of acronyms. We call it kube. Yes we really get it sent to us. We cannot find good kube here in the Valley!!!!

Kube Pasta Bake
Adapted from GimmieSome Oven

1 lb. dry pasta of your choice, I used macaroni
1 tablespoon olive oil
1 onion, diced
½ teaspoon oregano
4 cloves garlic, pressed
20 or so button mushrooms
1 pepper, chopper
2 cups marinara sauce
1 (15 oz.) can diced tomatoes, drained
2 cups Mozzarella cheese, shredded and divided
½ cup Parmesan cheese
1 ring of kube, peeled and diced
10 basil leaves, chopped
Preheat oven to 350.

Cook pasta according to package instructions. Drain and set aside.


While pasta is cooking, heat olive oil in a skillet over medium-high heat. Add the onion and sauté for 5 minutes, until it is cooked and translucent. Add the garlic and oregano and cook for 1 minute more, stirring occasionally, until the garlic is fragrant. 


Add the peppers and mushrooms. Sauté until tender, 5 minutes. 


Remove from heat. Add a bit more oil and add your kube. Cook until cooked through, 7 minutes.

Put pasta into a greased oven safe pot. Stir in the veggie mixture, the marinara sauce, diced tomatoes, Mozzarella (reserve a small handful of the cheese for the topping), Parmesan and kube. Mix until well-blended.
Sprinkle the remaining Mozzarella cheese on top.

Bake for a 20-25 minutes, until the cheese turns slightly golden.

Top with fresh basil and shaved Parmesan Cheese.
