Asian Glazed Salmon with Honey Roasted Potatoes


Do you want the good news or the bad news first?

The good news?

I had a fantastic Mother’s Day! I didn’t think I would/could… but I did 🙂

Ninja made a delicious breakfast with sausages, bacon, toast, blueberry pancakes, mimosas and Starbucks lattes!

 

 

 

I got spoiled!!! HBear made me beautiful cards and gifts and Dad got me a much needed massage!! And… Ninja got me a new Ipod!!! My Ipod is 4GB. Ninja bought it for me a decade ago. I was soooo excited to have a 16GB that will be JUST for my music… until my old one got stolen out of the van that night. Yup. That happened.
We went wine tasting at Mission Hill (GORGEOUS), Quail’s Gate, and Mount Boucherie (Yummy)

We had dinner at The Keg

 

And then I went up to visit Mom. I bought her a coin that says Mom on 1 side and I love you on the other. I put it up there and we chatted. The place was packed!!! I guess that is good because I was wearing mascara lol 🙂

 


The bad news?

My children are slowly but painfully killing me. Like for reals! HBear’s attitude has got to go, NOW!

This week I have heard such things as:

“I don’t  like you right now.”

“You are the meanest Mommy in the whole world!”

“No I don’t!”

“Yes I will!”

“ARRRRRGHHHHHHH!”

and my favorite

“I’m not going to talk to you for the rest of my life!”

Promise?

Jeeze freaking Louise! WTF? I thought this crap started at like, 13 or something? She is going to get my foot up her ass if she doesn’t quit the nasty attitude.

I give and give and she. Oh wait. That was on my list of things I said I would NEVER say to my kids. OK… ummm screw it,

I give and give and she takes and takes and all I get is disdain, contempt and attitude! 

Where is my sweet little HoneyBear? Is she gone for good? OMG please…

I actually dropped to my knees and began begging a higher power to not let that happen. She actually has me on my God Damn Knees!!!! Oh boy.

Today when Ninja got home I actually hid in the bathroom for 5 minutes. During that time I debated between bawling and catching 5 minutes of sleep!

 
Tonight SBean had a MELTDOWN at the dinner table, bit me, went to time out, came back, hucked her corn on the floor, shoved the rest of food off the table, went back to time out, snotted kisses all over me to get her out, then melted down again!!! 

Bed time.

AHHHHHHHHHH. Complete Wahhhhhh mode was in effect. There was no talking , no reasoning, just “Don’t talk to me! I can’t hear you!” 

My Eyes are bugging out of my head at this point and steam is coming out of my ears!

Bed. NOW!

Holy shit. I did a morning yoga workout and an afternoon ab workout. You would think I would be freaking zen!!!

So here’s my freaking dinner…

Asian Glazed Salmon 
Adapted from Six Sisters Stuff
 
3/4 cup brown sugar
1/3 cup soy sauce
2 tablespoons hoisin sauce
2 tablespoons ginger, peeled and grated
1/2 teaspoon chili paste
2 cloves garlic, pressed
1 tablespoon lime juice
4 boneless, skinless salmon fillets
 
In a medium saucepan, whisk together brown sugar, soy sauce, hoisin sauce, ginger, chili paste, garlic and lime juice.  

 

Bring to a boil over medium heat until sauce thickens (between 5-10 minutes).  Set aside.  
 
Preheat the broiler to high. (I BBQ’ed the salmon 🙂 it still took the same time)
 
Place salmon in a foil lined baking dish.  Baste with glaze and broil for 4 minutes.  Remove salmon from the oven, turn over, baste with glaze and return to the oven to broil for 4 more minutes. 

 

Remove the salmon from the oven and glaze one more time before serving.

 

Honey Roasted Potatoes
Adapted from Allrecipes
1 pound potatoes, chopped (I always use 1 potato per person)
1/4 onion, diced (I used red)
2 tablespoons margarine, melted
2 tablespoons honey
1 teaspoon dry mustard
½ teaspoon salt
1 clove garlic, pressed
½ teaspoon pepper
Preheat oven to 375.

Spray a baking dish with nonstick cooking spray. I didn’t do this. You know why? I bought me a crisper from Epicurean! 


OMG my friend sells this stuff and I am in love! Today I bought my FIL part of his Father’s Day gift, Ninja an apple knife (he hates apple getting stuck in his teeth, yeaaaah, but it is away too good to be used for that so he can have my old paring knife and I get the new good one hee hee) 


the potato crisper AND a salad dressing bottle! Yeah Me! She was even nice enough to throw in a little something special… granted I know I am going to love it and next time I will have to buy it! So smart lol!

 

Place potatoes in a single layer in prepared dish, 


and top with onion. 


In a small bowl, combine melted butter, honey, mustard, salt and pepper; drizzle over potatoes and onion.

 

Bake for 35 minutes or until tender, stirring halfway through the cooking time.

 

The crisper works AWESOME!!! The potatoes were crispyish on the outside and soft and fluffy in the middle! They were like the perfect baked potato bites with a hint of sweet garlic. holy Yum!

The fish was great. HBear ate her whole plate… I even liked it (until I thought of fishies swimming in my belly lol). 

And SBean, well she will eat a good breakfast in the morning 🙂
